So I think I’m 2 for 2 on this guilt free blogging thing. Ya, no pressure to perform posts. In case you missed my confession, you can read about it with this bowl recipe.  Pretty sure going ROGUE is now in my personal manifesto, which I plan to share later. Oh the anticipation! Just kidding… kinda. But speaking of anticipation, I am certain that these Vegan Latte Protein Chia Pudding cups are so worth the waiting overnight for. Cause, um … hello, COFFEE..  LATTE LOVE, and all the plant based protein packed in a chia pudding is what I call a POWER meal. A get up and GO GO GO breakfast. Wired with a punch of protein and boost of anti-inflammatory foods. See, you want some now, don’t you?

Okay but here’s the real deal. This no pressure Vegan Latte Protein Chia Pudding is another updated recipe. An oldie but goodie recipe. Yes, I am that old. 8 Years Blog old. So that’s like 80 in internet ages. That being said, updating old content and recipes are a must. Plus, it’s super fun to relive those older recipes and make them SHINE again. Ahh.. the good old days..

I originally made this protein chia pudding back in the ironman training days. Not me, my husband. When he was training for multiple Ironman triathlons, as a profession. I was (still am) the sherpa wife. Don’t know what that is? Google it or check out my about page.  Any who, he was up at 5am for Masters swim and would need something small but nutrient dense to get him through that workout but also to sustain his energy a bit after. Oh and something that was portable. You see where I’m going with this, right?

Power… Protein.. Caffeinated… CHIA PUDDING to go YO!

Okay so a little about this protein chia pudding. First, the word pudding doesn’t do it justice. Really, this is a mighty snack pack. Haha! But I digress…

And two, since I am sharing another vegan protein breakfast recipe, I might as well get all nerdy and chat about it. Why? Because not all protein is created equal. And I just love talking nutrition. Always.

Vega Protein for Protein Chia pudding recipe

Here’s the low down ya’ll. You see, grass fed whey protein (lactose free) and hemp/pea or sprouted brown rice protein are all good great sources of protein. Adding it to a smoothie or chia pudding can really help pack in more protein without having to try..  But personally, I find that whey protein is best for post workout or as a bed time snack when combined with carbohydrates, due to it’s slow release casein. A great way to accelerate muscle recovery/regeneration. That being said, if you are like me, a sprouted or hemp/pea protein is more easily digested. Which is why it’s perfect for a recovery SNACK or BREAKFAST to go protein chia pudding. Indeed!

  • This protein chia pudding contains the nutrient-rich seeds of the hemp plant  and chia seed. The seeds contain essential fatty acids, and complete proteins that your body needs.
    • Note: These are two plant based protein we are currently enjoying – Nutiva and Vega One.
  • Not many other plant based foods contain all the essential amino acids (complete protein), which is why hemp seed and chia seed are so valuable to our health (especially vegans). Plus they are both great for gut health 
  • The coffee in this pudding boosts up the antioxidant factor and the  coconut milk adds in a  healthy dose of MCT’s (fats), which is satiating. –> VEGAN LATTE PERFECTION!

Description

Delicious and healthy overnight chia pudding packed with plant based protein and a kick of caffeine/coffee. This protein pudding makes for a nutrient dense breakfast that’s naturally gluten free and easy to make ahead!

Want to make it a vegan mocha? Use chocolate coconut milk or add in dark chocolate chips.


Ingredients

Units Scale
  • 6– 8 oz vanilla coconut drinking milk or almond milk
  • â…” cup chia seeds (I use ground chia)
  • 1 scoop Vanilla Vegan Protein {I used Vega One Vanilla}
  • 3–6 oz brewed coffee or espresso (brewed in water or almond/coconut milk) Extra for topping
  • ¼ tsp vanilla extract
  • 1 ripe Banana
  • Optional maple syrup or vegan caramel syrup (see notes for recipe)
  • optional gluten free granola topping.

Instructions

  1. First, blend your protein, banana , and milk together. Set aside.
  2. Make a 4-6oz cup of coffee with instant espresso or coffee. You can also use just leftover coffee. Brewed in water or mixed with almond milk (either work). Save ¼ cup for the next day.
  3. Pour ¼ cup chia seed in to 2 -3 jar or glasses. Pour a little of your coffee mix at the bottom of each cup. Mix together.
  4. Next, pour half your protein shake mix on top of each jar. Add 1 -2 tablespoon more on top. Mix chia seeds evenly or just let them soak and sit. Pour vanilla extract (or caramel syrup, if you are using it) into each jar. Set in fridge for at least 4-6 hrs, or overnight.
  5. Feel free to top the chia pudding with granola, oats, nuts, and leftover instant coffee/vegan latte!

Notes

  • For more decadent rich flavor, add in vegan caramel sauce. Or drizzle on top.
  • coffee extract is also a great addition!

        Life is crazy, isn’t it!!! hanging in there… job searching again. Frustrating to not hear back or get No’s…. I really think some is age discrimination OR they see my resume & think I am too qualified & won’t like less work.. I left Corporate for a reason! đŸ™‚

    I used to make protein chia pudding all the time… it’s been way too long. I need to do it with coffee. I have to confess, I can barely choke down a glass, but if it’s mixed into stuff (chia pudding, shakes… balls), I’m down.

    Okay, I’m making this. My “overnight” game has gotten really lame . . . and even my “morning of” eggs or mug muffins have seemed like too much trouble to make this week because I’ve had a cold– and I’ve eaten a quest bar almost every morning. I need me some real food to kick off the weekend right.
