Here’s a confession. This is the second every smoothie bowl I’ve EVER made. GASP!  My first being this chai Turmeric chia smoothie bowl. Which oddly, looks like soup. Either way, we’re kind smoothie bowl newbies, but that’s totally about to change.

You see, for years we’ve had breakfast ON THE GO or a QUICK smoothie after a hard training session, post workout, etc. There was NO time to eat a smoothie from a bowl. NO, nada. We ain’t got no time for spoons. Haha.  We just needed calories and nourishment and free hands to keep us multitasking or driving. Ugh, that sounds so busy body, but it’s the truth. No time no time no time. And you know what? I don’t like that. WE don’t like that. Eating so hurried can be hard on digestion. Not that there is anything wrong with sipping a smoothie, it’s the SLURPING it in a hurry that doesn’t help.

Can you relate? Maybe you get a little indigestion or stomach ache after gulping down a smoothie. That’s probably all due to the way you ate it. Fast and furious! Been there, guilty.

So this got me thinking. Maybe this smoothie bowl trend is going to force us to slow down. Maybe it will allow us to sit and savor the flavor, resulting in more nutrients being absorbed. A little rest and digest while we spoon… spoon the smoothie that is. 😉

That being said, I’m going to fully support the year of the bowl! Smoothie bowl, power bowls, noodle bowls, breakfast bowls, SUPER bowls (not to being confused with the super bowl, but an actual bowl of super duper goodness).

Get my point? Bowls are where it’s at for health! And maybe our society needs to um… Spoon up! I know, I’m punny.

So how do you make a smoothie bowl that you can actually eat with a spoon? Well, that was a tough one for me. I had to play around with a lot of different mixtures and thicknesses, but I think finally found a pretty cool way to bulk up our smoothie bowl recipes.

Replace those ice cubes with a blend of frozen food and liquid.  Or in this case, I took frozen peanut butter and coconut oil and froze it into cubes. –> which makes it thick and creamy.

Then I blended it together with SUPERFOOD berries! —>  This makes it tart give it a little more bulk!

Then you need to smooth it out with a little natural gel or thickening agent. Hence the chia seed and a bit of Better Body Foods SuperFOOD protein!!!

Now you have one SPOON-TASTIC Frozen Peanut Butter SuperFood Smoothie Bowl!

Frozen Peanut Butter SuperFood Smoothie Bowls {Vegan}


Ingredients

Scale
  • 1 tbsp melted organic coconut oil
  • 1/2 to 1 tbsp creamy natural peanut butter
  • 8–10 ounces of almond or coconut milk
  • 1 scoop or 30-40 grams vegan protein (we used Better Body Foods LivFIT)
  • 1 tbsp chia (some for topping as well)
  • 1 tsp honey, maple syrup, or agave.
  • 1 cup frozen berry blend
  • optional ice if you want extra thick
  • optional cinnamon
  • optional 1/4 tsp vanilla extract

Instructions

  1. First combine your melted coconut oil and peanut butter. It’s easier to mix if both are melted. Spoon into freezer trays and let them freeze.
  2. Once frozen, combine your frozen peanut butter/coconut oil with the rest of your ingredients in a blender. Use less milk and add a handful of ice if you want extra thick.
  3. Pour into bowls and add a drizzle of peanut butter, or pb flour, chia, and more honey/agave if desired.
  4. SPOON up!

    Hi there. This recipe looks great. Can you please advise what the IRON count is in this recipe? I got it from a link found in your weekly GF “Iron Rich” meal plan, but I need to count my total iron intake based on the amount consumed…need to report it to my doc, so have this count per dish/meal, is very important.

      I got anywhere between 4-5mg Iron (23-25%). It just depends on the protein you use as well. Most pea protein has higher iron sources.

    Looks amazing and simply delicious! Smoothie bowl dates need to be a thing, I’m going to start my own trend, hey when are you free for a smoothie bowl date I’d love to pencil you in!
    My meals are on serious repeat over here with smoothie and muesli bowls… switching thing up is trying to have eggs or fish for dinner which isn’t happening often. This past weekend (long weekend here) we managed to have pizza 2 nights and nachos/taco salads 2 nights and only 1 smoothie bowl, 2 muesli bowls, and a whole lot of wine and popcorn. Now back to the repeat and grind… I attempted to make dinner last night and the girls polished off 3 lbs of roasted brussels before we got the rest of the dinner finished (there were lots of interruptions).

    haha its so funny that you mention that, because recently i have been thinking about waking up earlier to have time to eat smoothie bowls!! Usually i just make a smoothie and drink it as i get ready because its quick and efficient. So anyway – GREAT MINDS!

    What a great combination! You know how much I love smoothie bowls and now I am off the whole 30 and relaxing the rules they give you, they have made a grand entrance back into my life! Frozen fruit and little liquid is key for a thick and creamy ice cream like one. And then lots of toppings makes it soooo good! I know what you mean by indigestion when you slurp and drink a smoothie too fast I always did that in a rush at work and I always felt so sick! Eating the smoothie from the bowl helps your body realise your eating too I think!!

    I’ve been obsessed with smoothie bowls for this exact reason. I can sit down and enjoy it. I love using chia to make my smoothies super thick, but this coconut oil and peanut butter trick is a must try!!

    Ha my entire Instagram is full of smoothie bowls. I just get an idea and then throw stuff together. So far my favorite has been a vanilla beet protein smoothie bowl. MMMM. To thicken them up I either add banana, chia seeds, avocado, or less liquid.

    I’m a gulper. Which means I never feel satisfied, and then I feel bloated with a water baby and over satisfied because I had the smoothie and then ate something else. Totally happened this weekend! I like the idea of slowing it down. And well, this just sounds delicious!

    I think you’ve just unlocked the mystery of why smoothies never seemed to work for me! I’m definitely a gulper! Actually anything with a lot of volume gives me a problem so I’m guilty of needing to slow down. Looks almost too pretty to eat!
