I’m Lindsay Cotter, founder of Cotter Crunch. I’m so happy to have you here!
I created Cotter Crunch in 2009 thanks to my husband and former triathlete. At the time, I was cooking to keep him healthy and fueled for performance and recovery throughout his races. In doing so, I began posting my recipes on his blog, and before I knew it I had created my own to provide a nutrition resource for athletes like him with recipes using REAL FOODS.
Over time, I began developing recipes to help combat my own health problems (more on that later), and my focus began to shift to a gluten-free diet.
So, fast forward a few years to now, and my recipes still focus on including healthy, wholesome ingredients while providing inclusive ingredients for all diet types. It’s my mission to spread knowledge about how each ingredient works while sharing recipes that restore the body, energize, and taste great!

I’ve been cooking gluten-free for over 12 years now due to a parasite I contracted in Africa. Unfortunately, that parasite caused a lot of digestive distress on my body, and I fell very ill and lost a lot of weight. Thanks to my background in nutrition (and my obsession with biohacking), I was able to heal the majority of my symptoms by eliminating common allergens such as gluten and dairy from my diet. Yes, I say “majority” because, to me, 100% healed and healthy is unrealistic.
In 2016 I had colon surgery to help correct some of the damage done by the parasite. As a result, I will always have some setbacks.
But we’re human! We ALL have setbacks! We ALL will have times where we need to honor our mental health. Which might mean letting go of trying to achieve perfect health.
That being said, my passion still remains…. turning all our favorite foods into allergy-friendly meals. Kid-friendly, mom-approved, and more!

More About The Cotters
While I love developing recipes and running everything Cotter Crunch, my first love was Nutrition. In fact, I received my Bachelor’s degree in Science Nutrition from the University of Texas at Austin. I also became certified as a nutrition specialist through AASDN and work under a Sports Dietician Nutritionist and am qualified as a fitness instructor and personal trainer.
I met my New Zealander husband (aka kiwi Cotter) while working as a run coach, and together we have traveled the globe as he competed. In our adventures, I was nicknamed “Sherpa wife” for handing out healthy goodies like my Apricot Fig Energy Bites at the end of each race to help the athletes refuel. Today I embrace that title and remain as passionate about nutrition and making healthy foods taste great as ever!

Lindsay is the primary voice and creator behind Cotter Crunch. She started out doing everything as a one-woman show and now runs the entire team, functioning as the primary recipe developer and photographer. She lives in Utah with her husband, James, and their Vizsla, Oakley.

Elle helps maintain and develop relationships with brands we know, love, and trust to help us to continue to bring high-quality content to the blog along with product recommendations and discounts for items our team not only loves but knows you will, too!

Shyanne helps translate Lindsay’s thoughts into written words by assisting with content planning, SEO research and analysis, and copy.
