Vegan Overnight Thai Iced Coffee. A super simple THAI iced coffee that’s healthy and packed with flavor! This vegan iced coffee version is perfect to make ahead and enjoy the next morning. A tasty lower sugar alternative homemade iced coffee you can drink without guilt!
Here’s a confession… I’ve only ordered Iced coffee maybe once in my life. It was a specialty Iced coffee, Thai Iced coffee to be exact. You see, I am a bit spoiled. My father in law used to own a coffee farm in Hawaii. Hot coffee, freshly roasted then brewed was how we ALWAYS drank it. Iced coffee only diluted the flavors. Yes, I know, total coffee and espresso snob here. Okay hear me out now. Another reason I don’t order ice coffee much is because I don’t like ice in my drinks, unless it’s blended like a smoothie. .
Are you shaking your head with disbelief yet? Haha. Well don’t worry, this is all about to change.
I figured out a way, a way for me (us) to really ENJOY iced coffee at home. Without it being too cold or diluted. I was on a mission to “revamp” that Thai iced coffee drink.
Original Thai Iced Coffee is made with amazing spice blends, espresso, and some form of cream or condensed sugar. The spices are what really make this coffee stand out. Cardamom and cinnamon to name a phew. And the aroma alone just calms me, even though it’s a caffeine drink. Best of both worlds, right?
But here’s the thing, the REAL Thai Iced Coffee drink recipe is delicious but WHOA NELLY is it packed with sugar and some extra unnecessary “fluff” per se.
DO you see where I’m going with this? Yep, recipe REMAKE time ya’ll! The dairy free lower sugar kind.
HOW TO MAKE VEGAN OVERNIGHT THAI ICED COFFEE (Video)
This nut milk blend is made with rich caramel flavor, toasted almonds, and creamy cashews. It’s Non-GMO, only 9 grams of sugar (real sugar) per glass, and free of dairy, soy, lactose, gluten, casein and carrageenan. Did I mention it’s super creamy? Cause it is! And it’s going to be the BASE for our Vegan Thai Iced Coffee.
Okay, let me explain the process a little more. So in order to really get the SPICE in this Thai Spiced Iced coffee, you want to let it sit overnight. That being said, we must first “layer” the flavors together, if that makes sense?
First you brew your espresso in a french press. The dark roast the better.
Then you place your milk, or in this case, your Caramel Almond Cashew Nutchello, in glass container.
Add in a pinch more of coconut sugar, spices (cinnamon, nutmeg, and Cardamom), almond or vanilla extract (if you want more flavor), a touch of coconut cream or even vegan dulce de leche sauce (optional but amazing!), and then your dark brewed coffee/espresso.
Once that’s all mixed, you let it sit in fridge overnight. Yes, do it! The longer it sits the more SPICE and FLAVOR is formed. Trust me on this!
Then the next morning, add a few ice cubes, not a ton, and pour in to a nice tall glass! Sip, savor, and ENJOY!

Notes
For nutchello , I used the Caramel Almond Cashew flavor. Silk Cashew or almond milk will work too! Feel free to add in my vegan dulce de leche sauce for more caramel flavor.
You can enjoy this recipe right away but letting it sit overnight really brings out the thai spices! So good!
NOTES Adjust the sweetness and strength of coffee by adding more or less sugar/espresso. You can customize it! No prob.
- Prep Time: 24 hours
If you get impatient and don’t want to wait overnight, that’s totally understandable and it’s still delicious. But just think, you can wake up and have coffee ready to go if you do!
Now, can you believe this is fancy schmancy Thai Iced Coffee is actually vegan, paleoish, lower in sugar, SUPER EASY to make, and um —-> Creamy DELICIOUSness? That’s what I call a successful recipe makeover. I think I shall pat myself on the back and go pour another glass.

Trying to make the switch to a 100% vegan diet has not been easy. But amazing recipes like this one are what keep me going! Since visiting Thailand last year, I’ve been hoping to find something that’s both vegan and reminds me of my good times in Chiang Mai… thank you and keep it up! Subscribed!
It is amazing and delicious.

I’m so glad you enjoyed the iced coffee!
Greetings from Pakistan! Thank you for sharing an amazing recipe. I am not a fan of coffee (I know this must sound abnormal) and thus keep only instant coffee in my pantry. Happy to say the recipe came out superb. I also added some sweetened condensed milk.

Amazing recipe. I love coffee, and I love trying different stuff! I’ll try this one!
I love coffee and I love to try any recipe using coffee. Though iced coffee is not my thing, your blog with all the
beautiful pictures makes me tempted to try it soon. Moreover, iced coffee is always less acidic and is not going to hur
t our stomach much. I can drink it with guilt-free. So it is a must try recipe in my list.
Thanks again Cotter!
Thai iced coffee is so good and this looks perfect! Thanks for sharing 🙂
Wonderful! I love this coffee recipe:)
I’m totally coffee mad and a vegan too. I used to live in asia and iced coffee in the heat was the best. Now I live in the UK and hot freshly ground coffee is more often the way to go but when I do get the chance iced coffee still rocks! Thanks for the article.
Oh yes! love that ice coffee on a hot day!
I’m a huge fan of iced coffee. It sounds great in the summer monthes and the fall as well. But I never try thai iced coffee before so i have to give this new recipe a try. Thanks for sharing!
That looks great and just in time for our 100+ degree weather where I’m at. Just looking at the Nutchello poured in the cup looked delicious!
I wonder if this could be made with cold brew coffee? It would be strong enough and maybe less acid on the stomach. hmm…
it sure could! try it and keep me posted!

Coffee farm in Hawaii. You are a total spoiled snob. And rightfully so. HA!
I love cold brew coffee. We used to have a special cold brew thingy in my old office. I had no idea you could do it in a French press too!
I’m really not an iced fan either and basically drink it hot year round, so does Adam! That said I’d love to try this version coming from you! Maybe I really can be converted 🙂

I totally need to find a way to smuggle Nutchello into Canada so I can make this at home – it sounds AMAZING!
I absolutely love this! This just might get me to start drinking coffee 😉 Great flavors!
yea! then you can come over for coffee! hehe
Yum! Perfect for a day like today when I REALLY need coffee!
Oh my this coffee looks amazing. I have not seen the Silk Nutchello in the stores yet but will be on the lookout. In a pinch I use coconut milk from the can with maple syrup. It is excellent for creamy ice coffee.
oh i think youd love lauren!
I see we are opposite coffee drinks, but I NEED some of that Nutchello in my life ASAP. omg sounds so good.
I have been eyeing that Nutchello at the store. And since I’ve never had Thai iced coffee, I think it’s time to give your version a try! This sounds delicious!!
Don’t you just love Nutchello 😉 And coffee…..hahaha and iced coffee at that! It’s all I’ve been drinking!
I don’t think I’ve ever had Thai iced coffee. This looks incredible though!
Oh yum! I love iced coffee in the summer. I’m currently on dietician orders to steer clear of coffee until my adrenals are back in order, and once they are, I’m making this! I’ve never really had Thai Iced Coffee but it sounds amazing!
Have you tried teccino? It’s what I use when I can’t have coffee
Thai Iced tea is one of the worst things possible for you, and I would rather have coffee anyway, so you have hit the jackpot here!
Haha this is true!
