This Overnight Thai Coffee is super simple iced coffee that’s healthy, vegan, and packed with flavor! A lower-sugar alternative that’s perfect to make ahead and enjoy the next morning.

What is Thai Iced Coffee

Original Thai Iced Coffee is made with amazing spice blends, espresso, and some form of cream or condensed sugar. The cardamom and cinnamon spices are what really make this coffee stand out. And the aroma alone just calms me, even though it’s a caffeine drink. Best of both worlds, right?

And while Thai iced coffee is delicious, it it packed with sugar and some extra unnecessary stuff. So I wanted to try my hand at making a healthier version that’s dairy-free and lower-in-sugar!

Vegan Overnight Thai Iced Coffee. A super simple THAI iced coffee that's healthy and packed with flavor! This vegan iced coffee version is perfect to make ahead and enjoy the next morning. A tasty lower sugar alternative homemade iced coffee you can drink without guilt!

Ingredients You’ll Need

Below is an overview of the ingredients and recipe. Please be sure to scroll down to the recipe card below for the complete details and nutrition information.

  • Dark roast coffee – Thai coffee is very strong, so the darker roast the better!
  • Dairy-free cream – Instead of using heavy cream or condensed milk, I am using Almond Cashew Milk (Nutchello)! Use your favorite dairy-free creamer.
  • Spices – Cinnamon, nutmeg, cardamom, and some vanilla extract.
  • Sweetener – I used coconut sugar, but use your favorite sugar-alternative.

How to Make Vegan Overnight Thai Iced Coffee

VEGAN OVERNIGHT THAI ICED COFFEE

  1. Brew coffee. Add your ground coffee/espresso to your French press, add the hot water, press down, then let it sit for 5 minutes.
  2. Combine other ingredients. While coffee is brewing, mix your dairy-free milk, spices, extracts, and sugar together in a pitcher.

  1. Top off. Pour your French press coffee on top of the milk mixture. Be sure you are using a heat-proof pitcher to prevent it shattering.
  2. Refrigerate overnight. Stir everything together and refrigerate overnight. You can drink it right away, but the flavors really develop after being refrigerated.
  3. Enjoy. Serve over ice the next morning and enjoy.

Vegan Overnight Thai Iced Coffee Recipe {Homemade}


Ingredients

Units Scale
  • 4 tbsp ground dark Espresso (double if you like STRONG coffee)
  • 12–14oz purified hot water
  • 4oz Almond/Cashew Milk (vanilla or other flavor of choice)
  • 1 tsp ground cardamon
  • 1 tsp cinnamon
  • ¼ tsp nutmeg (optional)
  • 2 tbsp coconut sugar or raw sugar (see notes)
  • 1 tbsp coconut cream or full fat coconut milk
  • ½ tsp Vanilla or almond extract
  • Optional stir in vegan dulce de leche sauce

Instructions

  1. First brew your coffee in a French press. Add your ground coffee/espresso to your French press, then add your hot water, then press down and let it sit for 5 minutes.
  2. While coffee is brewing place your almond/cashew milk in a pitcher or glass container. Mix in sugar, spices, extracts, and any additional coconut cream you’d like.
  3. Now pour your French press coffee on top of that mix. Make sure you are using a heat-proof container to prevent it from shattering. 
  4. Stir and let it sit overnight in fridge.
  5. Pour into cups with ice the next morning and enjoy!

Notes

For nutchello , I used the Caramel Almond Cashew flavor. Silk Cashew or almond milk will work too! Feel free to add in my vegan dulce de leche sauce for more caramel flavor.

You can enjoy this recipe right away but letting it sit overnight really brings out the thai spices! So good!

NOTES Adjust the sweetness and strength of coffee by adding more or less sugar/espresso. You can customize it! No prob.

Since visiting Thailand last year, I’ve been hoping to find something that’s both vegan and reminds me of my good times in Chiang Mai… thank you and keep it up! Subscribed!

    Greetings from Pakistan! Thank you for sharing an amazing recipe. I am not a fan of coffee (I know this must sound abnormal) and thus keep only instant coffee in my pantry. Happy to say the recipe came out superb. I also added some sweetened condensed milk.

    I love coffee and I love to try any recipe using coffee. Though iced coffee is not my thing, your blog with all the
    beautiful pictures makes me tempted to try it soon. Moreover, iced coffee is always less acidic and is not going to hur
    t our stomach much. I can drink it with guilt-free. So it is a must try recipe in my list.

    I’m totally coffee mad and a vegan too. I used to live in asia and iced coffee in the heat was the best. Now I live in the UK and hot freshly ground coffee is more often the way to go but when I do get the chance iced coffee still rocks! Thanks for the article.

    I’m a huge fan of iced coffee. It sounds great in the summer monthes and the fall as well. But I never try thai iced coffee before so i have to give this new recipe a try. Thanks for sharing!

    That looks great and just in time for our 100+ degree weather where I’m at. Just looking at the Nutchello poured in the cup looked delicious!
    I wonder if this could be made with cold brew coffee? It would be strong enough and maybe less acid on the stomach. hmm…

    Wow! That looks so dang good! 🙂 MmM… I LOVE iced coffee. Quick story… when I went to Austria I few years ago, I asked for iced coffee. the waitress gave me the strangest look & arrived back with a scoop of ice cream & black coffee!

    Oh my this coffee looks amazing. I have not seen the Silk Nutchello in the stores yet but will be on the lookout. In a pinch I use coconut milk from the can with maple syrup. It is excellent for creamy ice coffee.

    Oh yum! I love iced coffee in the summer. I’m currently on dietician orders to steer clear of coffee until my adrenals are back in order, and once they are, I’m making this! I’ve never really had Thai Iced Coffee but it sounds amazing!
