This Overnight Thai Coffee is super simple iced coffee that’s healthy, vegan, and packed with flavor! A lower-sugar alternative that’s perfect to make ahead and enjoy the next morning.
What is Thai Iced Coffee
Original Thai Iced Coffee is made with amazing spice blends, espresso, and some form of cream or condensed sugar. The cardamom and cinnamon spices are what really make this coffee stand out. And the aroma alone just calms me, even though it’s a caffeine drink. Best of both worlds, right?
And while Thai iced coffee is delicious, it it packed with sugar and some extra unnecessary stuff. So I wanted to try my hand at making a healthier version that’s dairy-free and lower-in-sugar!
Ingredients You’ll Need
Below is an overview of the ingredients and recipe. Please be sure to scroll down to the recipe card below for the complete details and nutrition information.
- Dark roast coffee – Thai coffee is very strong, so the darker roast the better!
- Dairy-free cream – Instead of using heavy cream or condensed milk, I am using Almond Cashew Milk (Nutchello)! Use your favorite dairy-free creamer.
- Spices – Cinnamon, nutmeg, cardamom, and some vanilla extract.
- Sweetener – I used coconut sugar, but use your favorite sugar-alternative.
How to Make Vegan Overnight Thai Iced Coffee
- Brew coffee. Add your ground coffee/espresso to your French press, add the hot water, press down, then let it sit for 5 minutes.
- Combine other ingredients. While coffee is brewing, mix your dairy-free milk, spices, extracts, and sugar together in a pitcher.
- Top off. Pour your French press coffee on top of the milk mixture. Be sure you are using a heat-proof pitcher to prevent it shattering.
- Refrigerate overnight. Stir everything together and refrigerate overnight. You can drink it right away, but the flavors really develop after being refrigerated.
- Enjoy. Serve over ice the next morning and enjoy.

Vegan Overnight Thai Iced Coffee Recipe {Homemade}
Ingredients
- 4 tbsp ground dark Espresso (double if you like STRONG coffee)
- 12–14oz purified hot water
- 4oz Almond/Cashew Milk (vanilla or other flavor of choice)
- 1 tsp ground cardamon
- 1 tsp cinnamon
- ¼ tsp nutmeg (optional)
- 2 tbsp coconut sugar or raw sugar (see notes)
- 1 tbsp coconut cream or full fat coconut milk
- ½ tsp Vanilla or almond extract
- Optional stir in vegan dulce de leche sauce
Instructions
- First brew your coffee in a French press. Add your ground coffee/espresso to your French press, then add your hot water, then press down and let it sit for 5 minutes.
- While coffee is brewing place your almond/cashew milk in a pitcher or glass container. Mix in sugar, spices, extracts, and any additional coconut cream you’d like.
- Now pour your French press coffee on top of that mix. Make sure you are using a heat-proof container to prevent it from shattering.
- Stir and let it sit overnight in fridge.
- Pour into cups with ice the next morning and enjoy!
Notes
For nutchello , I used the Caramel Almond Cashew flavor. Silk Cashew or almond milk will work too! Feel free to add in my vegan dulce de leche sauce for more caramel flavor.
You can enjoy this recipe right away but letting it sit overnight really brings out the thai spices! So good!
NOTES Adjust the sweetness and strength of coffee by adding more or less sugar/espresso. You can customize it! No prob.

I’m totally coffee mad and a vegan too. I used to live in asia and iced coffee in the heat was the best. Now I live in the UK and hot freshly ground coffee is more often the way to go but when I do get the chance iced coffee still rocks! Thanks for the article.

Oh my this coffee looks amazing. I have not seen the Silk Nutchello in the stores yet but will be on the lookout. In a pinch I use coconut milk from the can with maple syrup. It is excellent for creamy ice coffee.
