What the what?? Yea, you heard me. GIVING AWAY A BLENDER and BITES! I get to REALLY share these bites with one of you.
Before I get carried away with the chocolaty chewy energy bites recipe, let’s talk shop. I mean what’s new on the Vitamix Shop.
Say hello the oh so sexy, Powerful, Smart, and Chic Ascent Series Vitamix!
The perks!
- Three program settings (Smoothies, Soups, and even nut butters)!! It automatically adjust to the container size you’ve selected! Which makes for consistent results.
- The motor base is able to read the container size your using and then adjusts the settings and blending times accordingly.
- Digital Timer allows you to blend without thinking. Haha, really! You’ll see why I love that feature below. Honestly, it helped me achieve the perfect texture for these bites. Hence the “chewy” in the title.
Here’s the thing, I’ve been a long time Vitamix user, but this A3500 totally blew me away! Especially with making this chewy energy recipe. I thought for sure I would have to scrap the sides or stop and blend again until I got the perfect consistency.
Um, no. I did not. I do not lie folks. The 5 ingredients blended right up (on the digital time function setting), then I placed the batter a bowl and rolled. Yep, simple as that.
So about the chocolatey chewy energy bites.
Ya, we’re going to blend these bad boys up now! Mmm k?

Favorite Blender or Healthy Bite recipe??? Do share!
Cheers!
What can be used in place of apricots?
You could try dried fig or prunes.
Lindsay,
I’m on a mission to find any foods that my mother (just diagnosed with early stage dementia) would actually eat that might help out with her memory. This recipe looks like a good start except for the apricot– research out there says that blueberries are potentially good for prevention of cognitive decline– do you think there would be a way to substitute blueberries in this recipe instead? I’m afraid to try! Would probably be too mushy?? 😉
Hi there! I would actually use organic Turkish apricots (High in iron) or Figs. Those are still very nutritious.
Dried apricots are one of the fruits with the highest content in antioxidants. I love them. Nice recipe.
★★★★
Thank you! Yes, such a great way to load up!
I’m allergic to nuts is there a good substitute for the almonds?
can you have seeds? I would try pumpkin seeds or sunflower seeds.
Perfect snack for all the chocolate lovers.
I love all of them: dark chocolate, almonds and dried apricots. Amazing recipe!
perfect workout snacks!
This recipe does not state if the cup of almonds is raw almond of roasted unsalted almonds.
Hi Denise. Sorry, I will update. I used raw
I really excited to try some soups and dips. Specifically, a roasted red pepper hummus.
I need to update my Vitamix. The news ones that I have seen at Costco looked devine.
I really want to try my hand at making green breakfast smoothies.
I would love to make blondies using chickpeas with this vitamix. A blender never really gets all the chickpeas mashed up enough, but I know a vitamix would.
perfect!
These look phenomenal!
I’m dying to make horchata and hummus.
oh that sounds great!
I didn’t think the Vitamix could get any better. I stand corrected.
Also, you are totally a baller.
I would make my latest obsession, chunky smoothie bowls. Is it weird that, for a brief moment, I actually imagined myself stashing these in my pocket to snack on throughout the day. Ha!
I’m actually all about that too!! Shall I come for breakfast?
I’d use it to make smoothies!
great idea!
Love all the ingredients in these bites! And that vitamix looks amazing!
These look so good! I could munch on these all day long! I love that you put dried apricots in there!
Ohhh I want one of these so bad! It’s sad the blender I’m working with ! LOL! I don’t want to be wasteful, so I keep waiting for it to pass…. 🙂
These bites look so lovely too!
YOU must!! <3 hope you get one.
I absoutley love that these are made in the blender, so easy and less less! I just need to get me a Vitamix!
you sure do friend!
yummmmm yes!! I can’t wait to make these!!
yay! let me know whatcha think
Apricots, not dates! That’s so awesome and I’m intrigued by how this flavor combo tastes. Also impressed that this blender can mimic a food processor so well!
yes, i was shocked at the blender too. I do not lie! haha
Would LOVE to make these exact balls in a new Vitamix!! I had not heard about this new Vitamix before your post!
yay! hope you get one! and miss you!
Miss you too, friend! We just moved and I think we’re closer to you – would love to get together and catch up!
I am a HUGE fan of Vitamix. I use mine almost every day. What an amazing giveaway! And these bites look amazing too!
These energy bites look AMAZING. I would love to test try them and make other variations of them.
Not sure where my comment went but I am jonsing to win one of these!! I have never used a vitamix and am dying to!! This looks great so either way I am going to have to make these beauties!
yay! i hope you do!
My Vitamix was one of the best choices I ever made in the kitchen!!! I was looking through your bites today because I wanted to make a healthy little treat to have on hand and I think these might be the winner!
oh girl, you will love these! COme visit me soon!
I love all the ball recipes!! Key lime are yummy!
yay! that’s a good one.
These look very good! I’ve made a similar version for year, often requested by children no less. I make them using dried plums and use a food processor for the chopping and mixing. I’m trying this recipe soon.
oh that sounds good too! Keep me posted on if you ry this one next!
I’d love to give these energy bites a try in a new Vitamix! We are a green smoothie loving family here, so that’d probably be the first thing we’d try!
Looks amazing!
Oh my! It does so much!! I want to try the pizza crust. That looks like fun with the kids! Your energy bites look amazing so I would make those right away! There are too many soups to list that I would love to try. And the deviled ham spread recipe reminds me of my Grandma. Oh this would be fun!! Thanks for the chance.
I’d want to make these energy bites! And many, many soups! (And your photography is stunning!)
I would love to have a sample right now! They really look and sound delicious.
Whoa this Vitamix is something else! I can’t believe there’s a nut butter setting, and a timer too! I love all of the healthy ingredients that went into these balls – you can snack without feeling guilty!
Love health energy balls. I recently made peanut butter ones with oats, but will also need to try your recipe.
I’m so loving your use of apricots in these beuats! I abhor the snow – but will consider driving to Utah to pick me up a dozen of these beauts! 🙂
I’m seriously craving these dark chocolate chewy energy bites! You just can’t go wrong with this kind of ahhmazing snack! That Vitamix blender is gorgeous! Such a kitchen essential in my opinion!
Totally agree! Crave worthy!
I have the A3500 and am obsessed! I’ve loved every one of my Vitamix blenders but this one takes the cake!
YUM!!!! (P.S. TX misses you!!)
I miss you!!!
I have an old blender that I use to make smoothies, that is about it. When I saw this recipe I’m envying being able to make it, as I love making no-bake bars, but my 4-cup food processor can’t handle dates or dried fruit, and my blender … there is no way! I’d make these right off!
I have been eyeing a Vitamix for awhile. I can’t even begin to list all the things I would make in it….but these energy bites would be high on my list!
i would use it to make more smoothies and banana ice cream!
I want, I want, I want…..these healthy bites and this fancy blender in my life. Apricots are my absolute faves in bite sized snacks, so I can’t wait to try this recipe out.
I would make hummus and nut butters and soups! I would make these energy bites too. Looks delicious. I have eaten something similar to these before but they’re expensive and these cost less to make at home. I have all the ingredients too!
I like to think that I’d use a Vitamix to make all sorts of cool things, but probably 90% of the time I’d just be making balls like these!
These look amazing as always! You are making me want a new Vitamix and if I got one I’d be mixing all the nut butters first probably. I would than gift my Vitamix to my parents so they could make healthy delicious recipes and I wouldn’t have to bring mine up or live with out it when we are staying there.
These are my next batch of energy bites!
You know i love your balls. These will be no different! My favorites are those Reese’s ones you sent me after one of my competitions. I still think about them. For real.
Well that was easy. Make the blender do all the work, will ya?
it’s like the staple button of blenders. LOL!
Well don’t these look yummy! Can’t wait to give them a try!
A Vitamix would be a blending gamechanger! And these bites, a snacking one 😀
yummm the combination of apricot and chocolate is probably phenomenal!!
If that Vitamix would make me half the inpsired creator of delicious things, then hand it over (and a couple dozen of these bites too please)
Just got a Vitamix for Christmas and these are going in that baby ASAP! My boys and I are on a mission to have healthier snacks in the house, and your chocolate balls look like a winner! 🙂
With this new Vitamix, I’m dying to make protein ice cream.
I”m not sure which is prettier…. or tastier (obviously you can’t eat the vitamix, but it creates tasty things)
maybe we can create an edible vitamix next. 😉
I really want a Vitamix!
you need!!
