This recipe gets me excited ya’ll. I know, you’re thinking.. “WOO, Dark Chocolate!.” Well, I’m thinking… “YAY, I love making energy bites (aka Healthy Bites) to share!”  No seriously, chew energy bites, bliss ball energy bites, blender cookie bites, chocolate cake-like bites, protein bites. All the HEALTHY BITES! If you know me, then you know that’s how I started this blog and another reason why I continue to make Healthy Bites flavors each month. I seriously think I was born into that role. …. ball.. roller? I was also born to make corny jokes and puns. You’re welcome!

Chocolate Chewy Energy Bites made right in your blender! These dark chocolate energy bites are easy to make, sweet, chewy, and absolutely delicious! Paleo, Vegan, and Whole 30 friendly! An energizing chewy snack that perfect for anytime of day!

Okay but that’s besides the point. Today’s Dark Chocolate Energy Bites recipe is EPIC! I really and truly mean it. It’s EPIC because, drum roll please….. dun dun dun dunnnna

  • All you need is a blender to make these chewy energy bites
  • You only need 5 ingredients to make these energy bites extra chewy, chocolatey, and delicious!
  • They are WHOLE 30 Snack Compliant
  • They are VEGAN
  • They are PALEO
  • They are sweet, with a touch of salted dark chocolate.
  • They are CHEAP to make. Affordable Gluten Free ingredients. WOO!
  • They are kid friendly

Here’s the thing, I’ve been a long time Vitamix user, but this A3500 totally blew me away! Especially with making this chewy energy recipe. I thought for sure I would have to scrap the sides or stop and blend again until I got the perfect consistency.

Um, no. I did not. I do not lie folks. The 5 ingredients blended right up (on the digital time function setting), then I placed the batter a bowl and rolled. Yep, simple as that.

Vegan Dark Chocolate Chewy Energy Bites {Blender Recipe, Whole 30 friendly}


Ingredients

Units Scale
  • ½ cup dark chocolate chips (100% cacao for whole 30)
  • 1 cup raw almonds
  • 5 ounces sun dried apricot halves (no sugar added)
  • cocoa powder (unsweetened)
  • pinch of sea salt

Instructions

  1. combine the chocolate, apricots, and almonds in the blender.
  2. Blender until batter is formed.
  3. Add a pinch of salt
  4. blend again.
  5. Remove from blender and place in bowl.
  6. Roll into bite size balls (a little smaller than golf ball size. Around 18 grams).
  7. Coat (or roll) each ball in cocoa powder.
  8. Place on a baking dish or tray with parchment paper.
  9. Continue rolling and coating until you have around 18-20 bites
  10. Sprinkle a little sea salt over each if desired.
  11. Once done, place in freezer for 30 minutes to set.
  12. Remove. Place bites in ziplock or sealed container and store in fridge for up to 8 weeks.

Notes

Pulse blender if batter keeps getting stuck.

    Lindsay,
    I’m on a mission to find any foods that my mother (just diagnosed with early stage dementia) would actually eat that might help out with her memory. This recipe looks like a good start except for the apricot– research out there says that blueberries are potentially good for prevention of cognitive decline– do you think there would be a way to substitute blueberries in this recipe instead? I’m afraid to try! Would probably be too mushy?? 😉

      Hi there! I would actually use organic Turkish apricots (High in iron) or Figs. Those are still very nutritious.

    These look very good! I’ve made a similar version for year, often requested by children no less. I make them using dried plums and use a food processor for the chopping and mixing. I’m trying this recipe soon.

    I have an old blender that I use to make smoothies, that is about it. When I saw this recipe I’m envying being able to make it, as I love making no-bake bars, but my 4-cup food processor can’t handle dates or dried fruit, and my blender … there is no way! I’d make these right off!

    I would make hummus and nut butters and soups! I would make these energy bites too. Looks delicious. I have eaten something similar to these before but they’re expensive and these cost less to make at home. I have all the ingredients too!

    These look amazing as always! You are making me want a new Vitamix and if I got one I’d be mixing all the nut butters first probably. I would than gift my Vitamix to my parents so they could make healthy delicious recipes and I wouldn’t have to bring mine up or live with out it when we are staying there.
