Can I let you in a on a funny fact?  Um, grew up with three brothers and we were all cereal ADDICTS. My middle brother would grab a large salad serving bowl (think 10 cups) and fill it with rice Krispies. 1o CUPS!!!! And yet he never gained a pound. Classic male, right? I, on the hand, had an obsession with rice krispies because one —>  that “POP” sound, and two, I loved making marshmallow rice krispie treats! Yep, classic female. Always wanted to make something more complicated. Haha. Kidding. Kinda.  Well, today not much has changed. My brothers still love their cereal (especially my middle brother) and I am still thinking of ways to make something “more” out of something so simple like rice krispies.

But I will tell you the one thing that really HAS changed since my youth. The fact that I am a health and GLUTEN FREE food entrepreneur. The fact that I can sit here and share No bake Healthy Bites (aka gluten free snack bites) recipes with ALL of YOU each month. The fact that I see making wonderful nourishing gluten free meal for my family and others as a privilege and it gives me complete JOY! The fact that I am FACING my FEARS every day. The fact that I am EXTREMELY thankful for the road God has put me on (despite the rocky terrain). The fact that I have whole new PERSPECTIVE on life.

And it’s a good thing, because if my childhood brain still were around today, we’d all be living off rice krispie treats for dinner and I probably wouldn’t share half of the batch… just sayin.

Today’s Chocolate strawberry gluten free NO BAKE Rice Krispie Treats Bite recipe is an ODE to all my childhood and how far we’ve come with health, life, dreams, and more!

It’s also a chance for me to give back to YOU ALL for being such amazing gluten free entrepreneur supporters!

But before I jump that topic, let’s discuss this  gluten free no bake rice krispie treats goodness, mmm k?

It’s made with gluten free and vegan LOVE GROWN FOODS cocoa comet crispies and the beautiful red strawberry color is ALL NATURAL from freeze dried strawberries. Both equally addicting and “Krispie” errr… crunchy? Haha —> see what I did there? Cotter Crunch Y’all!

Now all you really need to do is blend up the ingredients and combine with nut butter/honey or maple syrup. Of course, this was so SIMPLE using my BRAND SPANKIN NEW Cuisinart 8 cup Food Processor.

Ya’ll, this food process is amazing! I couldn’t believe how durable yet light (in weight) it is! I also can’t believe how many recipes they have using this handy dandy tool. Yep, it sure does make a tasty no bake rice krispie treats bite. Or 3 dozen of them!

Description

Gluten Free Chocolate Strawberry NO BAKE Rice Krispie Treats Bites {Vegan}


Ingredients

Units Scale
  • ½ freeze dried strawberries (or other berries)
  • 1 ¼ cup gluten free cocoa crispies cereal (we use vegan Love Grown Foods)
  • ⅔ cup protein powder (chocolate or vanilla) or coconut flour
  • ⅓ cup no stir nut butter of choice
  • ⅓ cup honey or maple syrup
  • 1 tsp vanilla
  • optional strawberry extract. ½ tsp
  • optional cocoa powder for dusting

Instructions

  1. First grind up your freeze dried strawberries and transfer into a mixing bowl.
  2. Add your protein powder (or coconut flour), crispies, and nut butter. Stir ingredients all together. • Add in your honey/maple syrup and vanilla extract then mix again well with hands. Add strawberry extract if desired.
  3. Roll into 1-1.5 inch balls and place on cookie tray or plastic ware with parchment paper underneath.
  4. Let them freeze for 20-30 minutes then transfer into a Ziploc bag.
  5. Dust with additional strawberry powder from the freeze dried strawberries or cocoa powder if desired.
  6. keep in fridge or freezer for up to 6 weeks.

Notes

Depending on the flour and nut butter you use, you might have to add more or less honey/maple syrup. Slowly add in a mix to see what works best.

    So I’m kind of giving myself a pat on the back right now for including some of those cocoa crispies in my last Love Drop because these look soooooooo good! I grew up as a cereal addict (Cinnamon Toast Crunch!!), and I’m still a huge cereal addict, so I’m all about those ways to sneak more in 😀

    Oh, I LOOOOOOOVE rice krispies! I used to eat them as a kid with loads of sugar all the time, but Trix is probably my favorite cereal from childhood.     YOU think you were a cereal addict? I practically ate cereal for breakfast, lunch, my snacks, dinner, dessert, and at midnight! My favorites were Cinnamon Toast Crunch, Trix, Cookie Crisp, Froot Loops, POPS and Apple Jacks! They were addictive! Anyways, I love this idea so much!     My favorite food entrepreneur would be you. And I promise I’m not just saying that because I’m commenting or entering a giveaway on your blog. You know how much of a fan I am of yours. I have read your blog daily for years now. You have helped me in many more ways than you know. I struggled with an eating disorder and then later dealt with food intolerances and allergies. So I guess you could say food has been issue for me for quite some time now. But you’ve taught me there are so many things more important than food and so much more to life. Because of you I’ve learned to come to peace with food, I’ve recovered from the ED, I still have the food intolerances and allergies but you’ve helped me to accept it and make adjustments and ENJOY food! It’s not the center of my life anymore…it’s a part of life that I get to enjoy with friends and family. THANK YOU for everything you do for all of us readers…your time, energy, focus, wonderful creations, investing in us, and teaching us. You’ve made a huge impact on my life and I appreciate you so much!

    The first thing I would make is HEALTHY BITES!!! I don’t own a food processor so I never get to make them and it makes me SO sad because I’ve been reading your blog for years and haven’t gotten to make these incredible little bites! (College sure does make affording things very difficult haha)

    I don’t own a food processor so the first thing I would make would be cauliflower rice! Trying to make it in a blender just doesn’t cut it…it turns to mush. Next I would do my own nut butter : ) Thanks for the amazing giveaway!

    I am inspired by any food or food company that promotes natural and minimally processed foods. I especially love seeing packaged food that have no additives and junky stuff because it shows it CAN be done! P.S.     I just sent this recipe to my best friend. She once invited me over to make rice krispy treats for her. LOL! Now she has two kids… both of which she just found out have severe gluten and dairy allergies. Sooooooo… this is basically perfect.

    These bites sound incredible! We are nuts about strawberries in my house, so I know they’d disappear quickly! Love Cuisinart…I’ve had mine for over 15 years and it still works like a powerhouse.

    One particular Food/Health Entrepreneur brand that inspires me is Flapjacked. Not only do they come out with super delicious, protein and probiotic-packed products, but the customer service is beyond fantastic. They truly care about their customers, which is unfortunately becoming less common these days as more companies (and egos) grow).
