It’s NO BAKE BITES (aka Healthy bites) DAY! And this time month I’m all about staying cool with gluten free and dairy free mint chocolate chip Oreo cookie bites. Yep. It’s the healthyish (or rather, allergy friendly) way to have your Oreo cookie fixation and mint chocolate chip ice cream flavors combined into one.

Plus smashing gluten free Oreos into crumbles is therapeutic. I’ll get to that in a minute, but first…. The story.

And I do hope you don’t mind more Healthy Bite stories and monthly recipes/giveaways. Cause they make me happy and my local clients LOVE being guinea pigs for new flavors. I mean, who doesn’t like no bake bites that taste like cookies?? Minus the whole raw egg salmonella thing. Whoops off topic here.

So, as many of you know, Healthy Bites were first created as FUEL for my husband (and myself) during seasons of hard training. You can read more about our story on my healthy bites page. The summer month’s were typically the hardest training season for him due to the HEAT! it was so depleting.  Getting enough calories in him to recover or stay energized was hard. You know when you run outside in the heat and you come back feeling blah and not hungry to refuel? Yes, that feeling. But then you know you need some sort of food so you eat the best thing that comes to mind. And I mean ANYTHING!

Okay, here’s where I confess my poor nutrition specialist/sherpa wife skills.

When James would come back from a long ride in 100+F summer weather, I would have gluten free (Midel or Kinnitoos) chocolate sandwich “Oreo” Cookies waiting for him and a Mint Chocolate Shake or Some sort of dairy free Chocolate smoothie . It was pretty much the only thing he’d eat. He’d dunk the cookies in the milk and feel better instantly. Yes, I fed my husband cookies and milk as a recovery snack. But it helped and you totally should hear me out!

You see, simple sugars (like real sugar) is Easy to digest and quick converted to glycogen. This glycogen (plus a little bit of protein) can help your refuel your muscles and help you recover faster post workout. And it does depend on the type of workout.  The more intense or longer duration, you probably will need to refuel within a certain post exercise timing window. What’s the point of all this simple sugar talk? Well, this. If cookies and milk are the only thing you can stomach after 5 hrs of riding or a long run in the heat, then BY GOD EAT THEM! Food is better than no food. In my opinion. But then again, each BODY works differently and we have to figure out what’s working best for us, right?

Luckily, we found a good nutrient timing system for us. And luckily, I revisited the whole cookies and milk scenario to share with YOU!  A REVAMPED  cookies and milk kind of no bake summer treat. Which can be used for post workout, snacks, dessert, etc. See.. ALL the WORLDS PROBLEMS are solved. Well, maybe just the ones in for healthy no bake dessert options. Right?

These no bake mint chocolate chip Oreo cookie bites are LIFE SAVERS though. Great for the kiddos who are playing in the pool all day or are at summer camps. You can give them cookies and feel good about it. Plus get bonus points as mom or dad. I’ve totally played the disguise the healthy cookie card with my nieces and nephews! And it totally works with these no bake cookie bites as well. WINNING!

Description

No Bake Mint Chocolate Chip Oreo Cookie Bites {Gluten Free, Dairy Free}


Ingredients

Units Scale
  • 8 gluten free chocolate sandwich “oreo” cookies – See notes for vegan brands too!
  • ¼ c coconut flour
  • ¼ cocoa powder (unsweetened)
  • ¼ chocolate chips (enjoy life gluten/dairy/soy/ nut free)
  • ⅓ cup no stir nut butter (PB or Almond or Sunflower seed butter)
  • ⅓ to ½ cup honey or maple syrup
  • ½ tsp mint extract
  • ½ tsp vanilla

Instructions

  1. Grind up your or mash in ziplock bag your oreo cookies.
  2. Transfer into a mixing bowl.
  3. Add your coconut flour, cocoa, nut butter. Stir ingredients all together. • Add in your honey a little a time until a “cookie dough” batter is formed. Add extracts then mix again well with hands. •
  4. Roll into 1-1.5 inch balls and place on cookie tray or plastic ware with parchment paper underneath.
  5. Let them freeze for 20-30 minutes then transfer into a Ziploc bag.
  6. Dust with additional cookie crumbs or cocoa a
  7. keep in fridge or freezer for up to 6 weeks.

Notes

For gluten free/Dairy Free Oreos I used Midel chocolate or KinniToos sandwiches Which can be found on amazon on whole foods.

Glutino has a gluten free brand of oreo type cookies but it’s not dairy free.

You can also take these no bake minty fresh Oreo cookie bites to a party or holiday pot luck. They actually stay together quite well despite the heat and are fabulous on top of ice cream… I mean. They healthy ice cream.

Or, if you are like me, you will make a HUGE batch of these bites and store them in the freezer ALL SUMMER. Because let’s face it, after running or bike or just frolicking (Yes, I said frolicking) outside in the Texas heat, cold no bake treats like these totally hit the spot.

    I honestly couldn’t imagine riding in 100+ heat, but I can totally see cookies and milk being a perfect recovery snack. I’m kind of obsessed with these Bites. You can never go wrong with Oreos!!

    Mint chocolate chip for sure, but I do love a good cookies n’ creme flavor (ex: protein powder, Quest bars, etc.)! This is a genius way to get your hubby to eat something post-workout! I wonder if it will work on my picky little sister too!

    Mint chocolate is one of my faveeeeeee flavour combinations.

    When I could eat ice cream for an ice cream shop (coeliac disease makes icecream shops pretty much a no go zone thanks to cross contamination) it was always a battle between cookies and cream or mint chocolate chip – so usually I’d settle on a scopp of each, haha!

    I’ve never tried making no bake cookie bites… methinks this is the recipe to start with. They look so delicious!! Mint + Oreos are a great combo.

    I’m literally fantasizing about laying on the cool(er) wood floor feeding myself oreo bite after oreo bite…these are literally ALL I want right now! I know I shouldn’t complain given the fact TX has a solid 10 degrees on reno right now, but man oh man, the heat it kills! Loving these bites, ‘dear!

    Yay for healthy bites!! I love these little things!! Gosh, training for distance in the summer is rough. I remember the first time I ran 13 miles during the summer a while back the only thing that I wanted was CHOCOLATE!! Now, I know how to whip up a healthy smoothie, but I’ll be honest…that chocolate never tasted so good at the time 🙂

    yum! mint oreo is one of my favorite combinations…the local ice cream place makes a homemade mint oreo and i LOVEEE it. These would be perfect mixed up in the ice cream!! Double the minty-oreo goodness 🙂
