Why You’ll Love These Cookies

These gluten-free berry oatmeal breakfast cookies will make a great travel snack and/or a healthy breakfast to go! Plus they are made in one bowl, so they’re easy to make and clean-up is a breeze.

Besides, who doesn’t love berry flavored oatmeal cookies? Especially one that’s made with fresh berries and is allowed to be eaten at breakfast! That’s worth some extra celebrating, yes?

The other reason I absolutely ADORE these festive breakfast cookies are because the combination of gluten-free oats and vitamin C rich fruits (like berries) actually help increase your chromium absorption.

Breakfast Cookie Ingredients

Below is an overview of the ingredients and recipe. Please be sure to scroll down to the recipe card below for the complete details and nutrition information.

  • Gluten-free rolled oats – Do not substitute quick oats or steel-cut oats, or the texture won’t be the same. 
  • Berries – The fresher, the better! I used blueberries, raspberries, and strawberries, but go ahead and use whatever berries you like that are in season.
  • Gluten-free all-purpose flour or gluten-free pancake mix – I suggest using a whole-grain gluten-free pancake mix  or allergy-friendly pancake mix.
  • Almond milk or coconut milk – Use whatever dairy-free milk that you prefer.
  • Egg – Use room-temperature eggs when baking to help them fully incorporate into your batter or dough.
  • Coconut sugar or raw sugar – Regular granulated sugar in combination brown sugar can also be used.
  • Baking Staples – Baking powder, kosher salt and vanilla are included to improve the texture and taste. 
  • Optional Protein Boosters – Plain or chocolate collagen protein powder, hemp seeds, pumpkin seeds, nuts (if not allergic), etc.

How to Make Gluten-Free Berry Oatmeal Breakfast Cookies

  1. Preheat oven to 350°F.
  2. In a large bowl, combine all the ingredients, folding in the strawberry slices last.

  1. Use a large or small cookie scoop, scoop out dough and place on baking tray.
  2. Press the cookies flat with back of cup or leave in cluster shape, both work.
  1. Bake for 22-25 minutes or until golden brown on bottom.
  2. Remove and let cool for 15 minutes.
  3. Store in airtight container or freezer for later.

Description

Fresh fruit and gluten-free oats combine to make healthy breakfast cookies. Easy to make, they’re great for breakfast to-go, snacks, or dessert. Dairy-free with egg-free & nut-free options! 


Ingredients

Units Scale
  • 3 cups gluten free rolled oats
  • 1 cup blueberries
  • ½ cup gluten free all purpose flour or gluten free pancake mix
  • ¾ cup almond milk (or coconut milk)
  • 1 egg (see notes for egg free or vegan version)
  • ½ cup coconut sugar or raw sugar
  • 1 teaspoon baking powder
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon kosher salt
  • ¼ cup strawberries (chopped) or ¼ cup raspberries
  • Optional Protein Boosters Add ins – 2 Tablespoons plain or chocolate collagen protein powder, 2 Tablespoons hemp seeds, pumpkin seeds, etc. See notes for other options.

Instructions

  1. Preheat oven to 350°F. Grease a baking sheet or line with parchment paper, set aside.
  2. In a large bowl, combine all the ingredients, folding in the strawberry slices last.
  3. Use a large or small cookie scoop, scoop out dough and place on baking tray 1 inch apart. Large cookie scooper will yield 12 cookies. Small cookie scoop will yield 22-24 cookies.
  4. Press the cookies flat with back of cup or leave in cluster shape, both work.
  5. Bake for 22-25 minutes or until golden brown on bottom.
  6. Remove and let cool for 15 minutes.
  7. Store in airtight container or freezer for later.

Notes

If you use a gluten free pancake mix then you can omit the egg and make them vegan friendly. They will be denser but still work. Or feel free to use a chia egg or 1 -2 tablespoon coconut oil. Cooking times will vary so check after 18 minutes.

Protein booster options – Mix in your favorite flavor collagen powder or substitute ¼ cup of the gluten free flour mix for pea protein powder.

      I don’t think they would hold as well. YOu could use any other starch though! Or oat flour, coconut flour, rice flour, GF flour, etc. Baking times might vary.

    Years back I would buy a cinnamon breakfast cookie that I absolutely loved but it didn’t keep me full very long. Looking forward to making these and freezing them for when we need quick ‘on the go’ breakfasts / snacks during football season!

    I guess we’ve all noted that the photo shows raspberries, but I’m glad u used strawberries—cheaper.

    FINALLY!!! A breakfast cookie that DOESN’T call for bananas and things like chia seeds or flaxseed….honestly I don’t know of anyone that keeps items like that in their pantry! My son just started a new job and has a longer commute and seems to have trouble finding time to have breakfast before running out the door. I will be making a double batch of these tomorrow and packing them 2 or 3 in a bag so he can grab from the freezer and eat while driving to work if necessary. Thanks for the recipe!

    These look SO delicious! Usually I’m all about make ahead breakfasts like breakfast bakes, breakfast cookies or overnight oats, however, for some reason lately I’ve been all about muesli bowls! I’ve been making my own muesli filled with flaxseeds, chia seeds, sunflower seeds, pepitas and a bunch of nuts and then mixing in a handful of gluten free cereal, adding some frozen banana slices and pouring over milk and breakfast is served!

    With my son home from college I’ve been batch cooking breakfast for him. He mows the lawn and takes out the trash and I make sure he has an easy breakfast. He is going to love this! I won’t even tell him it’s healthy.

    Berry Breakfast Cookies are one of our summer favs! I was going to make them today but ended up whipping up banana bread with the bananas instead, of course I still have some left maybe tomorrow only I can’t eat them, but they girls would love them.
