Gluten Free Chocolate Chip pancake bread. This pancake “quick bread” is super easy to make with minimal ingredients. Pancake mix, nuts, chocolate chips, greek yogurt, and eggs! Delicious, healthy, and great for desserts, breakfast, or snacking on the go!

Hi Monday! Hi All! Don’t worry, today’s recipe has nothing to do with pumpkin. But I’ve got plenty of them coming. Ahem.. stay tuned.

Honestly, I made this recipe about a month ago and didn’t feel like posting it then because it was about 100F outside. Baking was the last thing on my mind. Although, today it is crisp 95F so I guess not much has changed. Except for it’s almost officially FALL, which justifies my baking.

Plus Chocolate and pancakes are allowed ANYTIME of year! That’s new rule. Didn’t you hear? 😉

Gluten Free Chocolate Chip pancake bread. This pancake "quick bread" is super easy to make with minimal ingredients. Delicious, healthy, and great for desserts, breakfast, or snacking on the go! #cottercrunch

But don’t let the name and title fool you. This bread is actually healthy and tailored to be gluten free. This bread is actually a lazy girls guide to chocolate chip bread and pancakes combined. Except no flipping is involved. We all know I can’t flip pancakes. I usually flop pancakes. Haha, but at least I try.

Okay, back this this bread.

Things you will need; gluten free pancake batter mix, chocolate chip morsels (I used allergy friendly enjoy life), plain yogurt or kefir yogurt (hello probiotics), eggs, honey, and teeny bit of coconut sugar, if you like. Oh and extracts. Can’t forget the pure vanilla, yes!

I told you it was simple. Perfect if you want to be a lazy baker. Because, let’s face it. Baking season is upon us, you’ll have plenty of time to be a Martha in the kitchen. Save your energy now but still look like a Saint!

And I’m sure you are asking… why the bread and not the actually pancake?

Here’s my other justification.

  1. This bread is portable. Just like this homemade “uncrustable“ recipe, you can use it in the same way!  It makes for a great peanut butter banana sandwich (just sayin)
  2. It freezes well so you can make a big batch and freeze the rest for later.
  3. Great for post workout snacks on the go or in kids lunches
  4. You can make it a “coffee cake” if you’d like for when guest come over.

See… wam bam thank you mam!

Description

Healthy Gluten Free Chocolate Chip Pancake Bread


Ingredients

Scale
  • 2 ¼ cup gluten free pancake batter mix
  • ½ cup chocolate chips or mini chocolate chips
  • ½ cup chopped nuts
  • ½ cup coconut sugar
  • ¼ tsp sea salt
  • ½ tsp to 1 teaspoon baking powder
  • 1 egg
  • ⅔ cup plain or greek yogurt. Around 6 ounces or so. (or non dairy yogurt of choice)
  • 1 tsp vanilla extract
  • ¼ cup egg whites
  • honey and butter or coconut butter for topping

Instructions

  1. Preheat oven to 350F. In a large bowl, mix your dry ingredients. Next mix your egg, extracts, and yogurt and mix into batter. Last, beat or whisk your egg whites in a separate small bowl. Fold them into the batter. If batter is too try, add 2 tablespoon coconut milk.
  2. Pour batter into a greased 9×3 or 8×4 bread pan. 
  3. Bake for 20 to 25 minutes or until golden brown. Check at 15 minutes. If you are at altitude or using an 8×4 pan, you will need to bake for at least 25 minutes. 
  4. Once cooked through, remove from oven and let cool. Slice, and top with butter and honey or maple syrup.

Notes

Each gluten free pancake mix has a different texture and ingredient list, which is why it’s best to always check at 15 minutes or so.

I also use enjoy life gluten free and dairy free chocolate chips.

Since I just wrote close to 400 words about bread, I’m going to end this post with something a little more thought provoking. How about a weekend highlight real?

  • We got our car back and it actually wasn’t as $$ as we thought it would be. Praise God!
  • I redid last year’s halloween bite and kept most of them to myself. Because sometimes you just need to make yourself treats, right?

    Just made this a few hours ago, and for anyone who is going to bake this here are my notes:

    *I used Bob Redmill’s GF Pancake Mix*

    1/4 cup of egg whites = 3 egg whites

    I used 3/4 tsp of baking powder (split the difference in the recipe) turned out a little dense for my taste. Probably would go with 1/2 tsp.

    FOR SURE you’ll need the 2 TBS of milk- maybe more.

    I used regular sugar and omitted the nuts- turned out fine.

    Overall, it’s a nice bread. I topped mine with honey to make it more dessert-y.

    Made these tonight with my daughter. We used a mini muffin pan and sprinkled a bit of cinnamon sugar on them before baking. My daughters and I had them with tea and they were a big hit! Not overly sweet. Definitely looking forward to having them for breakfast tomorrow. Great recipe!

    I would suggest that since this is a GF recipe that your pancake batter mix should be specified as Gluten Free. Someone who is unaware of what GF means and comes looking for a recipe for a GF guest may not know that requirement and potentially cause a problem for the guest they are cooking for.

    Do you think it would work with Kodiak Cakes pancake mix? I have the protein kind so I’m not sure if the texture would work but I think I’ll have to give it a shot and see! This looks SO good!

      Yes! For sure. But you might want to add vanilla yogurt for sweetness if they kodiaks are not sweet. Or more chocolate chips! haha. The key is in the eggs/egg whites for fluff!

    My first attempt at GF breads are usually a flop so how about I teach you to flip in exchange for a slice of this! I love how moist it looks and how easy it is! But, if you have finished it, that’s ok – you can just pass me some of those Halloween bites! 🙂

    Looks delish! We made apple peanut butter pancakes on Sunday and when we saw how thick the batter was (and that it was 10:30 and our 3 year old twins were clamoring for food!), we were going to make it into one big pancake, aka a cake. In the end we did pancakes, but the recipe needs to be reworked a bit so i think we may end up with cake. Glad to know I won’t be alone in cake for breakfast 😉

    Pro tip: Bake pancakes in the oven on a cookie sheet. I do this every single morning. Standard pancake recipe makes about 2 dozen mini “cookies” so I get to eat what feels like more, there’s far less cleanup, and the cooking is shorter and mostly hands-off time.

    I’ve been doing this for so long now (month?) that I actually forgot until reading your post that I’m not actually eating cookies. I have fooled myself!

    Here again I’m sitting here wishing we were neighbors because I could really use a slice of that bread and a cup of coffee.
    No baking here. 🙁 Hubby was out of town and back for a whole 2 days in which we fit in a race (we were suppose to run 2 but just decided it was too much this year, we have done the back to back for 3 years), Sammie’s soccer games, a birthday party, and a trip to the apple orchard. I did get up early to start some wild rice soup for when we got home late last night and after I packed up the leftovers I did make a batch of apple sauce and I have another one going but I think that may be the extent of my baking and cooking this week unless I get 20 minutes to make some cookies and things as requested by the girls. Is it Friday yet? While your at it can you also send me some of those balls to help get me through this week?

      can you have oats? i think we talked about it before. haha. Their carrot spice and muffins are gluten free. The others are made with gluten free ingredients but not certified. So it really just depends on if you can handle oat flour. Oats are not gluten, but a lot of brands like quaker (who also have wheat cereal) cross contaminate. Flapjacked does not have any other wheat/gluten production or products. Does that make sense?

        Yes, that makes sense. I have only been buying gluten free oats as the regular ones bother me. Frankly, I’ve been too scared to experiment too much. I really don’t need another fracture!
