No Bake Lemon Pistachio Cookie Bites! Vegan and Paleo friendly Bites that taste just like Shortbread Cookie but are actually good for you! Super easy to make, refreshing, light, and naturally gluten free!
It’s ALREADY MARCH!!! Geeze, sorry. I just don’t get how all of sudden it’s almost Spring and mid March and we’re frockling in all things Easter (carrot cake), Irish, Lemony, green, and more. But… I’m totally on board because that means HEALTHY BITES recipe. Yes, I have festive no bake lemon pistachio shortbread cookie recipe for you. In the form of no bake bites that is.
But first, the story of these lemon pistachio shortbread cookie bites. Because there’s always a story. You know this!
So my husband (the kiwi) is obsessed with shortbread. The more sugar, the better. Actually, the more the more shortening the better. Whatever crumbles like a shortbread cookie, the better. And trust me when I say he is the master at picking cookies that crumble … all over the floor. Haha. He’s also obsessed with lemon bars, lemon cookies. All lemon desserts. Those these no bake lemon bars. Do you see where I’m going with this?
Because FOOD is my love language, I wanted to create a something similar to a lemon bar or shortbread cookie for him. Yep. this next cotter creation will be in the form of lemon and buttery deliciousness.
That being said, I’d also like to spare the pound of sugar and shortening in each recipe. Hey, the gift of health is also important, right?
Hence this lemon pistachio shortbread cookie bites recipe! When you combine the coconut flour with the ground pistachios and a bit of honey, you get one fantastic sweet crumble. Now, mix in some creamy almond butter and well… there’s your buttery goodness. You get my point, right? Copycat shortbread cookie bites made healthy, and without even baking. Winner!
Ingredients to make no bake lemon cookie bites!
- pistachio
- coconut flour
- lemon
- almond butter
- honey
- vanilla
- Lemon extract!
That’s about it ya’ll! Each bite is around 70 calories or so. That means 3 would be equivalent to a dessert or energy bar. Make sense? Also, please note that the batter texture will vary depending on the brand of coconut flour and almond butter you use. Adjust with more or less honey if needed.
Now let’s get things rollin. 😉
No Bake Lemon Pistachio Cookie Bites
- Total Time: 11 minutes
- Yield: 25 1x
Description
No Bake Lemon Pistachio Cookie Bites {Gluten Free, Vegan, Paleo Friendly}
Ingredients
- 1 cup pistachio (meats, shelled)
- 1 tsp grated lemon
- 1 cup coconut flour (sifted or very fine works best. Not clumpy)
- 1 tbsp coconut sugar (optional for thicker texture and for coating)
- ½ cup no stir almond butter or sunflower seed butter
- ½ cup honey or maple syrup
- ½ to 1 teaspoon lemon extract
- ½ tsp vanilla extract
Instructions
- First grind up your pistachios in a food processor or blender. Be sure not to blend into a flour, just a mealy like texture. Similar to almond meal. See picture above for what the grind will look like.
- Next, grate your lemon to form a bit of lemon zest.
- In large bowl, add in all your dry ingredients (flour, nuts). If you’d like a more dense texture, add in 1 tablespoon of coconut sugar with your dry ingredient.
- Then mix in your nut butter, and last the lemon zest, honey or maple syrup, and extracts. Depending on how thin your almond butter is and how fine your coconut flour is, you might have to add more honey and/or almond butter.
- Mix well (I use my hands) and roll into bite size balls.
- Place in freezer to harden.
- Once the bites have harden, coat the bites with extra lemon zest and a coconut sugar if desired. Or feel free to coat in a little bit of vanilla protein (omit protein if paleo)
- Freeze or keep in refrigerator to maintain freshness.
Notes
Depending on how thin your almond butter is and how fine your coconut flour is, you might have to add more honey and/or almond butter. Which is why i gave a range of measurements there.

Grab, Nosh, nourish!
What’s your favorite type of lemon dessert? Are you a shortbread cookie fan?
YEAH you are!
Lots of nice comments but has anyone actually made this dish?
Yes! They just haven’t commented here. More on social media. Do you have questions?
I adore all things lemon, and I love pistachios. These look so so good!
No. Just no. These are not good. I tripled the amount of wet ingredients (honey, maple syrup, lemon juice) and added more peanut butter and they were still very dry. They scratched my throat so much when I ate them that they hurt to eat. They physically hurt to eat. Wow – I’ve never encountered anything like that before other than spicy foods. They tasted okay but not anything like shortbread. No one who tried them liked them. I had to just throw them away.
Also, of course the wet ingredients should be mixed together separately, and then dry ingredients should be mixed together separately, and then mixed together. That seems like a basic baking instruction that you failed to convey. Wish I had followed my gut on that one instead of following your directions.
This recipe needs improvement.
Oh I am so sorry stephanie. We have made these several times and so have my readers. I wonder if the pistachio “meal” was too course. I’m happy to make them again and adjust notes.
These are gorgeous and look amazing! So gonna try these.
I made these and they turned out very dry. Not sure what went awry….
Oh no! So sorry. Can you tell me what brand of nut butter you used and what coconut flour? I’ve found sometimes it’s the brand
I must make these! A great guilt free indulgence!
★★★★★
my favorite type of cookie is standard chocolate chip!
this stuff looks awesome (as do the pistachio bites!) i could desperately use some new large baking dishes… particularly a long rectangle one !
I have GOT to make these bites! The combo of lemon, shortbread, and pistachio flavors sounds insanely good!
these bites look so good, I hope I win, if I don’t I will for sure make these. I started eating vegan 10 moths ago and can’t wait to try this. I love desserts and it’s hard to find vegan baked goods at bakeries
my favorite type of cookies are macaroons!
YUM! love those!
Favorite cookie has got to be a classic oatmeal raisin!

Soooooo I’m on Revol’s site now and wow! I can’t decide. Everything is great and perfect for foodie blogger picture fun!
YUM! I love this flavor combo and love all things lemon too. The Kiwi is a smart man 🙂 and YOU are an amazing wife!
I’m with the Kiwi on this one. These might be my favorite bite recipe yet. I am a sucker for anything lemon and then you toss shortbread in the mix….be still my heart. I love these. As soon as I have any energy, I am making them.
My kitchen is pretty decked out (because, cooking = therapy), but a pizza stone would be fun!
Anything that can be dunked in, or served as a side with coffee 🙂
LEMON ERRYTHANG for me!! I love lemon blueberry and lemon poppyseed foods. Add THIS to my list.
If I won, I would order the Super Square Baker. Although, there are so many fun choices!
My favorite cookie is an egg free macaroon….love coconut!!
These little bites are soooo lovely. I am obsessed with lemon flavored goodies, and I can only imagine the deliciousness that is adding pistachios! I actually have almost all of these ingredients… I must try.

Hmm, I already have a pizza stone, but I’m intrigued by the REVOL basalt ones.
Favorite cookie: my great-grandma’s recipe for butter cookies.
Pistachio anything! Or chocolate with sea salt 🙂
So, I saw the graphic of the bites, but for some reason, I read Lemon Parsley. I was like – man, she is getting super creative today! 🙂 Love the flavor combo of lemon and pistachio. Plus, who doesn’t love shortbread!

Making these RIGHT NOW!!! Thanks so much! YUM!
just adjusted the recipe notes, so keep me posted! xxoo
I love everything that is no bake! These sounds so perfect for the spring time..thanks for the recipe!
Love the combo so much! Definitely a must try! But I don’t have to coconut flour, and it’s so pricey, can I use grated coconut? maybe grind them more, what do you think?
★★★★★
do you have another flour? Maybe almond flour or oat flour or even protein powder? They can totally sub!
I don’t have these items usually around 🙁 I’ll look for other bites you have
I am definitely in need of some nice serving dishes! And of course, my favorite type of cookie is anything peanut butter.. gotta be a soft, chewy cookie though!
★★★★★
Oo those porcelain cake pans are a baking dream come true! Would love to get those and perhaps a bread pan if they make those. My favorite cookie today would probably be snickerdoodle, but ask me tomorrow and it might be peanut butter, smore, lemon, chocolate chip…the list goes on!
oh that is wonderful!!! love me snickerdoodle too!
My favorite kind of cookie has to be chocolate chip! I just can’t get enough of them!! If I won the $50 giftcard I would buy the Basalt Large Baking Sheet and probably square baking dish because I can’t control myself with baking items!
Me too! love those cute baking dishes
Ooh the only time I really like lemon is in dessert form! These pictures are beautiful!!

These bites !! I think the mini chicken roaster from Revol looks awesome .
Pistachio anything is my favorite so these sound incredible! Have you tried making these with other variations? I’d be curious to hear how they turned out! Oh and taste these delicious bites 🙂
i did a chocolate coconut pistachio last september. SO GOOD!
Yum!! My favorite type of cookie is classic chocolate chip, although sometimes I mix it up by adding roasted almonds in them.
Peanut butter cookies are my favorite!!
They have an incredible selection! I would love a rectangular baker!

Your healthy bites are just the best!! These sound so springy and tasty!
So, so amazing! I love that you’ve made your husband’s favorite treat into something healthy. That’s the way to go! Plus, I’m all about LEMON at the moment…it just screams “Spring”! 🙂
I’m soooooo ready for warm weather. After the wind in Vegas and NASCAR, and the freezing canyons yesterday, I refuse to leave the sunshine today. Which brings me to my point – these look like sunshine.
I love everything about these ingredients and they sound so refreshing now that the temperatures are starting to creep up!
there ‘s always room for you here if you want to visit early to stay warm! haha
So this is what I should use my pounds of unopened coconut flour for 😉 Mmmmm Haha!
Lemon bars are my favorite non-chocolate dessert… I’m with the kiwi- bring on all the butter!!
I love anything lemon, these look delicious.
favorite cookie: chocolate chip peanut butter
I would order: bowls or ramekins
Holy yum! Lemon and pistachio are two of my favorite things but I never thought to combine them. Your genius never stops!
I would order the ramekins, so that I could make cute individual desserts for my friends! Also, my favorite cookies are definitely nutella-stuffed chocolate chip 🙂
★★★★★
Yes! Those are so cute
It’s so hard to pick between a really spicy gingersnap, and a warm, gooey chocolate chip cookie.
Looking forward to trying this recipe this weekend. I have a lemon pistachio cookie bar recipe that is out of this world, but not as healthy as these bites. Thanks for posting it!
I like oatmeal raisin walnut cookies the best too!
I need some new bowls so that would be first priority on ordering. 🙂
I always forget how good lemon-y desserts are. I’m kind of (HA!) a chocolate fiend, so I normally go that route with dessert, but I’d be MORE than happy to eat all these and get crumbs all over the floor 😉
Oh my goodness – you had me at Shortbread!! These look incredible and quite easy to make!
Healthy shortbread with lemon and pistchio= day made 🙂
Favorite cookie is definitely a BIG chocolate chip cookie with M&M’s. XOXO
I would definitely order some bowls…I love eating out of bowls for what seems to be ALL my meals! 🙂
If I won the REVOL, I would definitely order the Square Baker Dish.
good choice!
Love Pistachio and lemon together. I need these for my new job!
yes! wish i could deliver
My favorite type of cookie is White Chocolate Macadamia.
Now these just sound so good and resting! Cotter pottery haha!!!
I subscribe to the Cotter Crunch newsletter.
i love the lemon pistachio combo! I have too many favorite cookies actually, I haven’t had a shortbread in so long since it’s not exactly the easiest paleo variety but I want to try yours! So spring like too 🙂
I’m so excited about these! No only because I LOVE shortbread and lemon but because I have everything I need to make them!! Gonna make them today too since I’m leaving for a little weekend getaway and they’ll make the perfect roadtrip snack 😀 oh and I’m SO excited for your cake recipe, they all looked SO good!!!
You said it..these bites looks so cheery! A must try.
My favorite cookie might be oatmeal chocolate chip. But I love cookie dough more than the actual cookie 🙂
I have a weird obsession with bowls. Like I will go to home goods and buy a single bowl frequently..I loved misshaped bowls, shallow wide ones, ones with unique designs….its the little things! So if I won the REVOL giveaway I would get some breakfast bowls…although the coffee mugs are SO CUTE!
