It’s ALREADY MARCH!!! Geeze, sorry. I just don’t get how all of sudden it’s almost Spring and mid March and we’re frockling in all things Easter (carrot cake), Irish, Lemony, green, and more. But… I’m totally on board because that means HEALTHY BITES recipe. Yes, I have festive no bake lemon pistachio shortbread cookie recipe for you. In the form of no bake bites that is.

But first, the story of these lemon pistachio shortbread cookie bites. Because there’s always a story. You know this!

So my husband (the kiwi) is obsessed with shortbread. The more sugar, the better.  Actually, the more the more shortening the better. Whatever crumbles like a shortbread cookie, the better. And trust me when I say he is the master at picking cookies that crumble … all over the floor. Haha. He’s also obsessed with lemon bars, lemon cookies. All lemon desserts. Those these no bake lemon bars. Do you see where I’m going with this?

Because FOOD is my love language, I wanted to create a something similar to a lemon bar or shortbread cookie for him. Yep. this next cotter creation will be in the form of lemon and buttery deliciousness.

That being said, I’d also like to spare the pound of sugar and shortening in each recipe. Hey, the gift of health is also important, right?

Hence this lemon pistachio shortbread cookie bites recipe! When you combine the coconut flour with the ground pistachios and a bit of honey, you get one fantastic sweet crumble. Now, mix in some creamy almond butter and well… there’s your buttery goodness. You get my point, right? Copycat shortbread cookie bites made healthy, and without even baking. Winner!

Ingredients to make no bake lemon cookie bites!

  • pistachio
  • coconut flour
  • lemon
  • almond butter
  • honey
  • vanilla
  • Lemon extract!

That’s about it ya’ll! Each bite is around 70 calories or so. That means 3 would be equivalent to a dessert or energy bar. Make sense? Also, please note that the batter texture will vary depending on the brand of coconut flour and almond butter you use. Adjust with more or less honey if needed.

Now let’s get things rollin. 😉

No Bake Lemon Pistachio Cookie Bites {Gluten Free, Vegan, Paleo Friendly}


Ingredients

Scale
  • 1 cup pistachio (meats, shelled)
  • 1 tsp grated lemon
  • 1 cup coconut flour (sifted or very fine works best. Not clumpy)
  • 1 tbsp coconut sugar (optional for thicker texture and for coating)
  • ½ cup no stir almond butter or sunflower seed butter
  • ½ cup honey or maple syrup
  • ½ to 1 teaspoon lemon extract
  • ½ tsp vanilla extract

Instructions

  1. First grind up your pistachios in a food processor or blender. Be sure not to blend into a flour, just a mealy like texture. Similar to almond meal. See picture above for what the grind will look like.
  2. Next, grate your lemon to form a bit of lemon zest.
  3. In large bowl, add in all your dry ingredients (flour, nuts). If you’d like a more dense texture, add in 1 tablespoon of coconut sugar with your dry ingredient.
  4. Then mix in your nut butter, and last the lemon zest, honey or maple syrup, and extracts. Depending on how thin your almond butter is and how fine your coconut flour is, you might have to add more honey and/or almond butter.
  5. Mix well (I use my hands) and roll into bite size balls.
  6. Place in freezer to harden.
  7. Once the bites have harden, coat the bites with extra lemon zest and a coconut sugar if desired. Or feel free to coat in a little bit of vanilla protein (omit protein if paleo)
  8. Freeze or keep in refrigerator to maintain freshness.

Notes

Depending on how thin your almond butter is and how fine your coconut flour is, you might have to add more honey and/or almond butter. Which is why i gave a range of measurements there.

    No. Just no. These are not good. I tripled the amount of wet ingredients (honey, maple syrup, lemon juice) and added more peanut butter and they were still very dry. They scratched my throat so much when I ate them that they hurt to eat. They physically hurt to eat. Wow – I’ve never encountered anything like that before other than spicy foods. They tasted okay but not anything like shortbread. No one who tried them liked them. I had to just throw them away.
    Also, of course the wet ingredients should be mixed together separately, and then dry ingredients should be mixed together separately, and then mixed together. That seems like a basic baking instruction that you failed to convey. Wish I had followed my gut on that one instead of following your directions.
    This recipe needs improvement.

    I’m with the Kiwi on this one. These might be my favorite bite recipe yet. I am a sucker for anything lemon and then you toss shortbread in the mix….be still my heart. I love these. As soon as I have any energy, I am making them.

    Oo those porcelain cake pans are a baking dream come true! Would love to get those and perhaps a bread pan if they make those. My favorite cookie today would probably be snickerdoodle, but ask me tomorrow and it might be peanut butter, smore, lemon, chocolate chip…the list goes on!

    I have a weird obsession with bowls. Like I will go to home goods and buy a single bowl frequently..I loved misshaped bowls, shallow wide ones, ones with unique designs….its the little things! So if I won the REVOL giveaway I would get some breakfast bowls…although the coffee mugs are SO CUTE!
