Sweet, Spicy, Salty Snack Mix
By now you can probably tell I love trail mix and slow cookers! You should try my Pumpkin Spice Trail Mix or my Crock Pot Chunky Monkey Trail Mix, both are totally amazing. Even if you’re not going for a hike or running to work like my crazy husband. Sometimes just taking pictures of food is enough of an excuse for a snack!
Seriously though, a handful of trail mix is so much more nourishing than a plateful of cookies or brownies, right? And adding Thai curry spices takes it to a whole new level of deliciousness. Maybe I’m biased, but this snack mix with the combo of salty, sweet, and spicy is so good!
Ingredients and Nutrition

1) NUTS: It contains brazil nuts which are a great source of selenium and mood booster. And since we’re not quite out of the home stretch of winter, we can all use a good mood booster! And nuts pack a huge amount of plant-based protein and healthy fats, perfect for post-workout or snacking. You can use any mix of your favorite nuts and it will still taste amazing!
2) SEEDS: This recipe calls for a cup of pumpkin seeds, full of good nutrients like zinc and magnesium. Zinc is KEY for boosting immunity. And did y’all know that magnesium has a calming effect on the nervous system? Excuse me while I go grab a handful of trail mix!
3) SPICES: And the spices (red curry powder, red chili powder, paprika, and black pepper) are chock full of anti-inflammatory properties. How could you possibly not want to snack now?
4) SWEET MIX-INS: I also added in goji berries (after cooking) for some phytonutrients, vitamins and trace minerals! Plus a boost in potassium. Chopped dried pineapple is optional, but it’s great for quick energy and contains bromelain, an anti-inflammatory compound.
How to Make Thai Curry Trail Mix
- Place nuts and seeds in a slow cooker. In a small bowl or measuring cup, whisk together the melted butter or coconut oil, tamari/soy sauce, sugar, and spices, and then pour over the nuts. Mix everything until thoroughly combined.
- Cover slow cooker with lid and cook on high heat for 1.5 hours, stirring every 30 minutes, until nut mixture is “candied.”
- Once everything is cooked, spread out the nut mixture on a large lined baking sheet or parchment paper to cool.
- Mix in the dried goji berries or dried fruit of choice.
- Sprinkle with red pepper flakes and extra seasoning if desired.
- Store in ziplock bag or container (sealed) for 10 days to 2 weeks. Or keep in fridge for 2-3 weeks.

Ingredients
- 5 cups raw mixed nuts (make sure to use some already chopped/halves and some whole).
- 1 cup pumpkin seeds
- 2 Tablespoons butter or coconut oil
- ¼ cup coconut sugar
- ½ Tablespoon Red Curry Powder
- ½ teaspoon red chili powder (Thai red chili is great to use here)
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 2 Tablespoons tamari (gluten free soy sauce) sauce (or coconut aminos)
- ⅔ – 1 cup goji berries and/or chopped dried pineapple
- 1 Tablespoon red pepper flakes (less if you want less spicy)
- Extra paprika or curry powder mix to season after if desired.

Hi, just discovered your website! I don’t do nightshades and have leaky gut issues. Can the nuts be socked before put in the slow cooker?
Glad you found us! Are you looking for a nightshade free trail mix? I have others and a nightshade free meal plan. I haven’t tried soaking the nuts before. They might be a little soft once cooked, unless you soak and dry out completely. If that makes sense.

Any homemade snack mix is my favorite! And thank you for the shout out to brazil nuts. I feel they often get overlooked and they are so good for us! I buy nuts in the bulk bins so I can really stock up, less waste, and less expensive so nut mixes are on the regular. I’ve never made them in a slow cooker though! You know how I feel about spices, so your blend is making my mouth water, Linds! I hope you thaw out soon! It’s SO bitter cold!
