This Strawberry Vinaigrette is an easy homemade dressing that is light, fresh, and perfect for summer salads. Made with simple, real ingredients, it’s a staple salad dressing you will use over and over again! Paleo and vegan.

Strawberry Vinaigrette with Mint

This is my go-to dressing for summer salads! Think of this vinaigrette as the sister to my green goddess dressing. Same real food focus, same obsession, same desire to put it on everything! It’s amazing on salads, ice cream, or a fruit and veggie platter…the possibilities are truly endless.

It’s naturally sweetened, takes all of 3 minutes to make, and I bet you could even get your “no salads for me” spouse to eat a salad with this dressing. Maybe even your vegetable fearing children!

Strawberry Vinaigrette Ingredients

  • Strawberries – These help add extra depth to the flavor while adding lots of fiber and a beautiful pink color to the dressing.
  • Mint – Mint is used to add a refreshing lightness to the dressing. Make sure to use fresh mint and discard any brown leaves.
  • Olive or avocado oil – Combines the ingredients, creating a rich flavor and smooth dressing.
  • Lime or lemon juice – Lime juice is used to enhance the flavor of the rest of the ingredients and adds extra zip to the dressing.
  • Honey – For natural sweetness. Use agave for a vegan-friendly dressing.
  • Salt & Pepper to Taste – Use as little or as much as you like. 

Health Benefits of Mint

The mint is this vinaigrette dressing is optional, but gives it a note of freshness and extra zing. And we like that extra zing around here. 😉 Plus, the health perks of mint are quite impressive, especially when it comes to digestion. Mint is a calming and soothing herb, and can help relieve indigestion. And we all know we could use more of that. *wink wink*.

How to Make Strawberry Mint Vinaigrette

A couple whirls in the blender and your vinaigrette dressing will be ready to use! How easy is that?

  • Clean and slice the strawberries, removing tops.
  • Place everything in a blender or small food processor. Blend until creamy dressing is formed.
  • Pour into a sealed container and store in fridge for up to a week.

What, you aren’t going to drink the dressing straight from the bottle like me? Okay, okay, I’m kidding! This vinaigrette dressing is very light and summery, so it pairs well with light and summery salads. But truly, the possibilities are endless. Let me know what you end up pairing it with!

Description

Strawberry vinaigrette dressing with mint is an easy homemade dressing that is light, fresh, and perfect for your summer salads.


Ingredients

  • 1 – 1 ½ cups strawberry halves (fresh or frozen)

  • ¼ cup extra virgin olive or avocado oil

  • 2 Tablespoons lemon or lime juice

  • Red wine vinegar, optional

  • Sea salt, to taste

  • Pepper, to taste (or 1 Tablespoon whole peppercorns)

  • 1 Tablespoon honey for sweetness, optional (agave may be substituted for vegan option)

  • 3-4 mint leaves


Instructions

  • Clean and slice the strawberries, removing tops.
  • Place everything in a blender or small food processor. Blend until creamy dressing is formed.
  • Pour into a sealed container and store in fridge for up to a week.

Notes

  • If in a bind, you can use substitute ⅓ c to ½ c pure strawberry jam plus a splash of red wine vinegar for fresh strawberries. It will taste a little sweeter, so adjust seasoning and vinegar as needed.

      Oh and yes, I devoured lunch after! Haha funny thing is I didn’t feel like having a salad. So I ate baked sweet potato topped with greek yogurt, tahini, and a side of strawberries. Seriously delish!
