Strawberry vinaigrette dressing with mint is an easy homemade dressing that is light, fresh, and perfect for your summer salads. This vinaigrette dressing recipe is also paleo, vegan-friendly, made with simple, real ingredients, and good on just about everything. This is a staple salad dressing recipe you will want to use over and over again!

Strawberry Vinaigrette Dressing with Mint

Let’s talk about it. Ya, the GO TO staple recipes. Like how this is my GO TO salad dressing for summer salads, potlucks, etc. Think of this vinaigrette dressing as the fraternal sister twin to my green goddess dressing. Same real food focus. Same obsession. Same thought process when using —> PUT IT ON EVERYTHING! Grilled fruit with coconut ice cream, fresh fruit and cheese…the possibilities are truly endless.

Allow me to plead my case (and obsession) over this vinaigrette dressing just a little more, mmk? It’s naturally sweetened, takes all of 3 minutes to make, and I bet you could even get your “no salads for me” loving spouse (or sibling) to eat a salad with this dressing. Maybe even your vegetable fearing children. Gasp! I may be overreaching with that comment, but hey, I stand strong. 😉

How do you make a strawberry vinaigrette? What ingredients do you need to make strawberry vinaigrette?

 

Just a few simple ingredients and a couple whirls in the blender and your vinaigrette dressing will be ready to use!

  • Strawberries
  • Mint
  • Olive or avocado oil
  • Lemon or lime juice
  • Honey (or agave for vegans)
  • Salt & pepper (or white peppercorns for an extra kick)

See, simple. Blend and serve. But then…. there’s more. Because in this case, more is better. MORE nourishment for you. That’s the way real food was “mint” to be. Haha, pun totally intended.

What are the health benefits of mint?

The mint is this vinaigrette dressing is optional, but gives it a note of freshness and extra zing. And we like that extra zing around here. 😉 Plus, the health perks of mint are quite impressive, especially when it comes to digestion. Mint is a calming and soothing herb, and can help relieve indigestion. And we all know we could use more of that. *wink wink*.

Types of salads to pair with this zesty Strawberry Vinaigrette

What, you aren’t going to drink the dressing straight from the bottle like me? Okay, okay, I’m kidding. Kinda 😉 This vinaigrette dressing is very light and summery, so it pairs well with light and summery salads. But truly, the possibilities are endless. Let me know what you end up pairing it with!

  • A summery strawberry Spinach Salad (paleo)
  • Zingy Apple & Beet Salad
  • Detox Broccoli Salad
  • a simple fruit salad or Chickpea and Quinoa Salad
  • This zesty dressing would also make a refreshing dip for veggie summer rolls or drizzled on an open faced salad sandwiches!

Needless to say, I am now hungry. Please remind me NOT to finish writing these posts on an empty stomach.

Description

Strawberry vinaigrette dressing with mint is an easy homemade dressing that is light, fresh, and perfect for your summer salads.


Ingredients

  • 1-1.5 cups strawberry halves (fresh or frozen)

  • 1/4 cup extra virgin olive or avocado oil

  • 2 tbsp lemon or lime juice

  • Red wine vinegar, optional

  • Sea salt, to taste

  • Pepper, to taste (or 1 tbsp whole peppercorns)

  • 1 tbsp honey for sweetness, optional (agave may be substituted for vegan option) 

  • 3-4 mint leaves


Instructions

  • Clean and slice your strawberries, removing tops.
  • Place everything in a blender or small food processor. Blend until creamy dressing is formed.
  • Pour into a sealed container and store in fridge for up to a week.

Notes

  • If in a bind, you can use substitute 1/3 c to 1/2 c pure strawberry jam plus a splash of red wine vinegar for fresh strawberries. It will taste a little sweeter, so adjust seasoning and vinegar as needed.

      Oh and yes, I devoured lunch after! Haha funny thing is I didn’t feel like having a salad. So I ate baked sweet potato topped with greek yogurt, tahini, and a side of strawberries. Seriously delish!
