Description
Strawberry vinaigrette dressing with mint is an easy homemade dressing that is light, fresh, and perfect for your summer salads.
Ingredients

1 – 1 1/2 cups strawberry halves (fresh or frozen)

1/4 cup extra virgin olive or avocado oil

2 Tablespoons lemon or lime juice

Red wine vinegar, optional

Sea salt, to taste

Pepper, to taste (or 1 Tablespoon whole peppercorns)

1 Tablespoon honey for sweetness, optional (agave may be substituted for vegan option)

3-4 mint leaves
Instructions
- Clean and slice the strawberries, removing tops.
- Place everything in a blender or small food processor. Blend until creamy dressing is formed.
- Pour into a sealed container and store in fridge for up to a week.
Notes
- If in a bind, you can use substitute 1/3 c to 1/2 c pure strawberry jam plus a splash of red wine vinegar for fresh strawberries. It will taste a little sweeter, so adjust seasoning and vinegar as needed.
