Let’s just keep the celebration theme going this week, mmm k? So far we had a fiesta party with Mexican falafel on Monday, Thai -Style Stir fry party (because it’s my fav bday dish) on Wednesday, a corny Cotter Grace and Grit Thursday, and now I’m all about a little Friday Happy Hour celebration with these No bake coconut margarita bites. Yes, Frozen coconut Margarita… in bite form… with coconut… and lime salt. Like for reals. PARTY IN YOUR MOUTH good!

In all honesty, I’ve been DYING to share these Coconut Margarita bites ever since I made them 2 months ago. TWO MONTHS! That’s a long time to hold back no bake boozy balls… I mean bites! Although they can be made virgin of course. Either way, the time has come to profess my love for frozen fruity goodness once again.

You see, for the past few months, I have been working on updating my Healthy Bites first edition ebook. Obviously I am way behind in my efforts. But basically, I have been simplifying the ingredients and tweaking the recipes. I am also reshooting the pictures. Meh… they need some work, still, but that’s a whole other story.

Anyway.. I was remaking the pina colada bites when I suddenly realized I had an insane amount of coconut left. And no bake booze bites were still on the brain. So I asked myself. “Self, should we keep this frozen drink theme going?”

Obviously the answer is clear, yes, yes, yes, Heck yes!

I give you No Bake Coconut Margarita Bites with lime margarita salt. A must!

Ya’ll, these frozen Coconut Margarita Bites Bites are a GOD SEND during the hottest month of the summer. I mean TRULY! Not only are they refreshing, but they are gluten free, vegan, grain free, and if count tequila as paleo (which you so should because it’s healthy in moderation and sorry for my run on sentence), then these margarita bites are also PALEO friendly! WOO WOO!

But I know what you are thinking. How are these frozen Margarita again? Well, you keep these in the freezer! Actually I store all my healthy bites in the freezer, but frozen lime and coconut mixed in the bites sure do make the flavor even more REFRESHING and margarita style. Capeesh?

It’s really simple though. All you need are cocktail essentials and KEY ingredients hold them together. I do not recommend peanut butter as it can be overpowering in the flavor, ya know?

No Bake Coconut Frozen Margarita Bites Essentials: 

  1. Lime Zest/Lime Juice
  2. Coconut (shredded)
  3. Almond Butter 
  4. Coconut Flour
  5. Almond Flour
  6. Agave Nectar or Honey if paleo.
  7. Lemon extract 
  8. ALL THE TEQUILA! Haha, okay kidding. But remember, tequila can be good for you! Oh and you can also add in triple sec if you so dare. Don’t worry, I have the non-alcholic version listed in the recipe too.

So you see, these are probably items you have in your pantry already, am I right? Which means you better skedaddle and make some for the weekend.

These bites are higher fat and lower carb. Great for a satiating dessert or snack!

Description

super easy and delicious No Bake Coconut Margarita Bites {Vegan, Paleo friendly}

agave vs honey please note that if you use agave, it is thinner. Which means you might not need as much. Honey is thicker and sometimes you will need more. Start with 1/4c to 1/3 cup and adjust after you mix the batter.


Ingredients

Scale
  • 1 cup almond flour
  • 1 cup and 1 tbsp coconut flour (sifted rolls best)
  • 1 cup unsweetened shredded coconut
  • 1/2 cup creamy almond butter or cashew butter (no stir is easiest)
  • 1/3 cup agave nectar or honey/maple syrup if paleo.
  • 2 tsp lime juice
  • 2 tbsp tequila (*see notes for non alcoholic version*)
  • lime zest (as much or little as you want)
  • 1/4 tsp sea salt
  • 1/4 tsp lemon extract (to enhance citrus flavor)
  • Lime salt (*optional* for coating)
  • optional triple sec (1 -2 tsp)
  • extra coconut for rolling.
  • vanilla protein powder or coconut flour to coat if desired

Instructions

  1. Place your almond meal, coconut flour, and coconut in a large bowl. Mix together.
  2. Next Add in your nut butter, lime, zest, tequila, and remaining ingredients. .
  3. Stir ingredients all together.
  4. Add in your agave/honey mix again, I usually use my hands.
  5. Roll into 1-1.5 inch balls and place on cookie tray or plastic ware with parchment paper underneath.
  6. Before you place in the freezer, you have the option to dip each one in a tiny bit of margarita salt, additional lime zest, and coconut.
  7. Let them freeze for 20-30 minutes then transfer into a Ziploc bag.
  8. Dust with additional vanilla protein or sifted coconut flour if you want more cakey texture.
  9. keep in fridge or freezer for up to 6 weeks.

Notes

Non alcoholic Version Use coconut extract or rum extract (1 tsp) instead of tequila. Both give it a tropical drink taste!

Omit all together if you just want lime and coconut. Still great!

    P.S. Have you tried subbing some of the almond flour for protein? I wonder if it would mess up the texture…
