No Bake Dark Chocolate Whiskey Cake Bites! Oh yes, you heard me! Booze bites! These rich and decadent dark chocolate whiskey cake bites are so delicious and simple to make with REAL ingredients. Gluten free and non alcoholic versions as well. Great for dessert or fun party snacks. Cheers!
So I might be a tad selfish with this dark chocolate whiskey cake bite recipe today, but hear me out because I make up for it later. Ok?
You see, chocolate whiskey cake as been on my recipe bucket lists. Just for kicks and to see if I could make it gluten free! Let’s face it, gluten free cake, that actually tastes like cake, is hard to find these days, unless it’s almond cake. Plus I’m always intrigued when booze is involved in a recipe. I digress… anyways, when cooking or baking with spirits or liquor, it’s hard to know what is gluten free and what is not gluten free. It’s also hard to know how much grain is removed in the fermentation process. Bottom line, it really comes down to the brand and how/where it’s made.
Whiskey may be made from gluten grains, but most of the gluten is removed to 20 ppm; which according to most Celiac Disease experts, is probably safe to drink for most Celiacs. So even though the final product (distilled drink) does not contain gluten, the company is not allowed to display or advertised “gluten free” on their label, labeled as gluten-free. Everyone responds and reacts to gluten differently, so it’s best to figure that out for yourself first. You know? Here’s a list of gluten free whiskey brands if you need them and a complete list of gluten free Alcoholic Beverages!
Okay, that being said, I FOUND A GLUTEN FREE WHISKEY brand that reacts well with us (health wise) and used it in these oh so amazing no bake CHOCOLATE WHISKEY CAKE BITES (aka Healthy Bites)!!
HOW TO MAKE DARK CHOCOLATE WHISKEY CAKE BITES:
There is no protein powder in this bite ya’ll. Just pure cocoa, almond flour, coconut flour, honey, and some other super duper healthy ingredients. Oh and melted dark chocolate. Then once the bites freeze, you roll them in more cocoa and coconut sugar!
These chocolate whiskey cake bites really “take the cake” on all my no bake healthy bite recipes thus far! Haha, I may be exaggerating and getting a little corny, but you get the point. They are adult friendly and perfect for the Holidays. And don’t worry, I gave you a non-alcoholic substitute in the recipe as well. I wouldn’t want you to eat a whole batch and get buzzed now, right? Wink Wink. See, my chocolate whiskey cake selfishness pays off, right?

Description
Dark Chocolate Whiskey Cake Bites {No Bake, Gluten Free}
Ingredients
- â…” cup unsweetened 100% cocoa powder
- â…” cup coconut flour
- ½ cup almond meal
- ¼ to ⅓ cup smooth creamy almond butter
- ¼ cup dark chocolate (melted). For vegan option use Enjoy life dark chocolate
- 1 tbsp or .5oz gluten free single malt whiskey (see notes for alternative)
- 1 tsp vanilla extract
- ½ tsp butter extract (optional)
- ½ cup maple syrup, honey, or agave nectar
- Dash of sea salt
- extra cocoa powder and coconut sugar for rolling
Instructions
- In large bowl, add in all your dry ingredients. Then mix in your nut butter, and last the melted chocolate, maple syrup (or honey) and extracts. Mix well ( I use my hands) and roll into bite size balls. NOTE: If you are using a thicker honey, you might need to add more to get batter to stick. Maple syrup is thinner to work with.
- Place in freezer to harden.
- Once the bites have harden, coat the bites with extra cocoa and a coconut sugar if desired. Freeze or keep in refrigerator to maintain freshness.

If you want to make these alcohol free, just replace the whiskey with ½ teaspoon rum or bourbon extract.

Made these this weekend. Easy and delicious! However, the coconut sugar did not stick to the whiskey balls at all. Any idea why not or how I can make the sugar stick? As good as they were, I think they would be even better with a sugar coating along with the cocoa powder coating.
hey sue! did you roll them in coconut sugar before or after you froze them? I find that rolling in them before you freeze works best. Or coat in a little bit of coconut oil and then roll and then freeze. Make sense? Keep me posted!

These sound really yum!! Unfortunately I cannot have cocoa or dark/milk chocolate.
Do you know if I could perhaps use something like white hot chocolate powder in place of cocoa, white chocolate in place of chocolate, and white chocolate liqueur in place of the rum?
Also I can only tolerate a small amount of nut product -could I perhaps use a rice bran margarine in place of the almond butter?
I am really keen to try and make a version that I can eat =)
I think all would work except maybe the rice bran margarine. Cam you use sunflower seed or soy nut butter? I bet those would work. You just need something with the same consistency and hold as almond butter. Does that make sense?
You are doing a great service for people suffering from depression and/or obesity who have no clue that gluten sensitivity or celiac might be at the root of their problem and gluten free might be a solution more powerful than Zoloft et al. Thank you!

These are brilliant! chocolate and single malt whiskey are two of the best foods ever, so of course I would get these and eat them all (ok, maybe I’d share with my Scotch-loving husband 😉 ).
