Sunday Mornings are my favorite. There’s something about them that make want to stay in my pajamas for longer and cook up a good breakfast or brunch. And as long as I can remember, pancakes, eggs, or French toast have been on our regular Sunday Breakfast rotation.
That being said, guess what next Sunday is?
Did your eyes just fill up with little cartoon hearts? Ha ha yes, it is Valentine’s Day. A day where we love on each other, wait… I mean a day where we express our love for each other. A verb. TO LOVE (show appreciation, kindness, mushy emotions, etc).  As mentioned before, making food is definitely  how I show love and appreciation towards others, especially towards my husband. And as you can see, he’s definitely a breakfast man!
But here’s a little backstory for you. When I first learned I had to start implementing a gluten-free diet, over eight years ago, breakfast was tortuous for me. In fact, I think thought of making French toast give me anxiety. At the time, there was a very limited amount of GOOD TASTING gluten free foods, and no such thing as gluten-free French toast. Well, at least that I was aware of. Trying to fix a delicious Sunday breakfast for us was depressing.  And I’m sorry, but rice cereal or eggs and rice cakes just did not cut it.
Yes, I was a big ball of anxiousness and confusion. And you know what? My husband is the one who really pushed me to learn more and to helped me embrace the gluten free diet (cooking and all). He’s the one that bought me dozens of books on gluten-free living, he would help me research gluten-free options at restaurants so that I didn’t feel overwhelmed when we dining out. And he would would be patient while I read every label at the grocery store, checking for gluten.
But I think the most important, and (most impactful)Â thing that he did to support me during this transition was that he himself embraced it. Â And still does today. Okay maybe just 80% of the time. Ha ha.
I never asked him to eat gluten free for me, he just simply wanted to support. And goodness I love him more for that!
Today I’m raising a gluten free TOAST (A Valentine’s Day FRENCH TOAST) to my husband. He deserves more but let’s just start with a tall stack of goodness, ok? A Valentine’s Day breakfast made with all his favorite flavors and toppings.
There’s honey, because my husband has forever been obsessed with honeycomb flavors (and he’s my honey, mwah!).  And lemon vanilla because the man just loves anything sweet and lemon! Lemon shortbread, lemon bars, lemon pie, or lemon cream.
Now, about this gluten-free French toast. Well, it’s vegan friendly and gluten-free but there is so much more! And I promise you it does not taste bland like gluten-free. In fact, this egg free french toast batter definitely still tastes like traditional batter and here’s how —> COMBINE  Chia (grinded down), honey, almond milk, vanilla, dash of sea salt, cinnamon, and …. nutritional yeast. Really! Nutritional yeast gives it an eggy taste! It is optional, ALTHOUGH I HIGHLY recommend it, YUM!)
Lemon Vanilla Gluten Free French Toast (Vegan Option)
- Total Time: 20 minutes
- Yield: 2 1x
Description
Honey Lemon Vanilla Gluten Free French Toast {Vegan Friendly}
Ingredients
- 1 cup almond milk (regular or vanilla)
- 1 tsp vanilla extract
- 1 tbsp nutritional yeast flakes
- 1 tbsp chia grinded up (which is about 2 tbsp seeds- see notes for make chia flour)
- 1 tsp cinnamon
- Dash of sea salt
- 4–5 pieces of gluten free bread
- Powdered sugar
- Lemon slices
Optional LEMON CREAM SAUCE
- 1–2 tablespoon Vegan Butter or refined coconut oil (softened or melted)
- 2–3 tablespoon honey (Agave for vegan)
- ½ lemon , squeezed
- Sauce Makes about ¼ cup so double if you are serving more than 2 people
Instructions
- Combine your milk, vanilla, chia flour (see notes), cinnamon, salt, nutritional yeast, and optional honey in a large mixing bowl. Mix and let it sit for 10 minutes.
- While the batter is sitting. Preheat griddle or frying pan to medium high (350F). Use oil/butter and spread it even.
- Once batter and sit for 10 minutes, dip bread into batter (one at a time) and place on griddle. Make sure not to soak it too much or bread will fall apart. Fry for 3-4 minutes and then CAREFULLY use a spatula to flip and fry/cook another 3-4 minutes or until golden brown.
- Repeat until all pieces of bread are cooked and placed on a plate.
- Next combine your butter, honey, and lemon in a small cup and stir until it’s made into a sauce.
- Pour over french toast and garnish with lemon slices and powdered sugar. Sauce Makes about ¼ cup so double if you are serving more than 2 people
Notes
For chia flour, just combine 2-3 tablespoon chia seed in a high powered mixer/blender. Use 1 tablespoon of that for the chia flour.
For non vegan version replace chia and nutritional yeast, with one egg instead.

Aw that is so sweet about your hubby eating GF with you 🙂 HONEYCOMB, it must be the New Zealand/OZ thing. When I was in Australia they had honeycomb flavored EVERYTHING. The honeycomb Tim Tam’s were my fave… hee hee. They also had this FABULOUS honeycomb malted chocolate milk that I dream about pretty much every day.

We had some really good success with dave trying gluten free pizza crust this weekend without much reaction, I would love if he could do bread again (at least every once and awhile for dishes like this). Small steps! I so feel your pain on being “gluten free” overnight dealing with Dave’s allergies. But we are figuring things out!
