Healthy and gluten free Vegetable Stuffed Baked Egg Boats! For breakfast, brunch or dinner! These veggie packed baked egg boats are super easy, super healthy, and a tasty vegetarian meal that everyone enjoys!
What’s one meal time you struggle with the most? Is it breakfast, lunch, or dinner? I will confess, our breakfast these days are SUPER rushed and I’m usually just standing in the kitchen eating really fast or drinking a smoothie. Baking is not really involved, unless is it’s the weekend and I am making baked Swedish pancakes for pancake Sunday. Eggs are usually saved for weekend or dinner too. And baked egg boats? Well, I’ve only experienced these amazing creations once at a brunch, but I digress….. more on that later.
Anyway, I know what you’re thinking. At least we’re eating breakfast. At least we can can cram just about any veggie or protein into a smoothie. But I still feel like something needs to change in that area.
Why is it that BREAKING the FAST seems to get too FAST? Hmmmm….
My goal for this next year is to BREAK the FAST more slowly and with real food. Food you can sit and chew! Even if it’s just quick to make. Even it’s just 2-3x a week. Basically, taking the tiny bit of extra TIME to make a meal that’s balanced, protein packed, full of wholesome ingredients, nutrient dense, and CHEWABLE
I’ll give you my reasoning behind this. It’s called rest and digest. And I’ve been far from both at meal time.
Rest and digest means you allow your parasympathetic nervous system to settle down and do it’s thing.
Here..
Parasympathetic system conserves energy as it slows the heart rate, increases intestinal and gland activity, and relaxes muscles in the gastrointestinal tract.
In other words… REST and DIGEST allows for proper digestion, proper muscle recovery, proper nutrient absorption.
I don’t know about you, but that’s one thing I DEFINITELY need more of in the hustle and bustle of the holidays.
Okay, so now let’s talk about these stuffed brussel sprout baked egg boats. A healthy (quick) baked egg breakfast that’s packed with veggies, protein, healthy fats, and yes… YOU CAN CHEW IT!
All you do is scoop out the middle of the bread.
Add a little buttah… oh ya, buttah! Next, fill it will veggies, an egg yolk, parmesan, garlic, spices, etc.
Then bake for 15 minutes!
But more importantly, since this meal takes less than 20 minutes to make, you can sit around the table the family and enjoy it. Rest and digest a healthy gluten free breakfast or brunch!
These veggie packed baked egg boats are also great for a vegetarian recovery meal. So maybe you’re an early morning workout goer. Just think about how amazing this would be for post workout meal/breakfast. You’ve done the hard part, now take that time to allow the body to really digest and absorb all those amazing nutrients from the eggs, brussel sprouts, and healthy gluten free carbs.
Bonus Nutrients–>
- Eggs are packed with choline (good for the liver), selenium (immunity boosting), and a naturally a good source of vitamin D! Yes, we need that ALL THOSE during winter months.
- Brussel Sprouts – Fiber, Vitamin C, Vitamin K
- Shallots- More nutrients dense than onions! Plus they actually contain a good source of iron and anti-oxidants such as quercetin. (remember how much WE LOVE QUERCETIN in grapes?)
- Udis Gluten Free Baguette – Non GMO whole grain that’s easier to digest and Celiac friendly.

What about using hollowed-out zucchini as the boat?
Oh totally! veggies on veggies! Just might have to make sure the zucchini isn’t too watery. Scoop out as much as middle as possible
Very helpful and Great information,

Any recipe that ditches the white and embraces the yolk is one I can totally get down with.
I also love the Brussels Sprouts and butter and that you combined them all in a delicious baguette. Brilliant.
Similar to you, I often don’t have time to make breakfast. In fact, I eat pretty much the same thing from Monday-Friday (overnight oats with some fruit). It’s not until the weekend that I can enjoy a nice savoury breakfast. Even then, sometimes I feel like making something quick and easy and this is perfect for that!
Oo oo oo. Somebody ring the breakfast bell and I’ll come running! Prettiest breakfast ever, what a treat!

These look amazing! I go in spurts of having quick breakfast or lunch and actually sitting down and enjoying it. I guess same goes for dinner. If there were enough hours in the day I would sit and enjoy every meal.
I love this! It looks scrummy and I always struggle at breakfast especially because I end up having to make my husband something different from me. This however, I can just swap out the bread – perfect.
★★★★
totally! you can even use potato instead of bread!
Great idea – thanks

Gorgeous and delicious-looking. I am not sure the baguettes I buy could be cut with a fork, but I’m up for using a knife if need be:)
i sliced mine a little thin so that’s why i could use a fork. haha!
I love EGGS…I actually had them for dinner last night and I am having them for breakfast this morning…WOOT WOOT! They’re so versatile and delicious! XOXO
i knew you’d love! perfect for nantucket weather too!
What a fun breakfast. My family would love that it comes inside bread. Perfect for a brunch too.
yes, such a fun family meal! Hope you get to try ti Christie
Pure genius, Lindsay!! I fry or scramble a couple of eggs in the morning for breakfast, along side a cup of coffee. But THIS? This is EPIC!
come for breakfast! and scrambled works too! 😉
I love everything about this. Thanks Lindsay!
And I love you
Swoon. Breakfast is usually the only meal I really sit down and slow down for, mostly because I eat it super early before the craziness of the day has a chance to settle in. My lunch and dinner could use some work, though 😆
i think i flip flop. I need to be more slow in the morning. LOL! i’m up early anyway
Yes to rest and digest! My day never feels right (nor does my stomach) if I rush through breakfast. I love eggs, especially for lunch, and these look like they’d be the perfect lunch paired with a side salad – yum!
totally!!! i need more time to digest everything in life. LOL!
Soooo… tell me again when you’re going to start delivering?
be there in 10!
YUUUUMMMMM!!! I am so in love with eggs lately. And eggs with brussels is one of my fav’s! Love the challenge to actually sit and enjoy breakfast. I love slow mornings with a tasty breakfast and cup of coffee. I have some new work changes in 2016 and I’m hoping I’ll be able to take the mornings a little more slowly 🙂
we can hold each other accountable!
Maybe a silly question but where do you find a gluten-free baguette? I have not seen those. Is there a brand you use? I will have to see if we have them in Canada!
this one is actually by udis gluten free. Have you checked the freezer section? We have tons at our whole foods. Keep me posted!
Oh my these look insane! As you know I can’t get enough eggs and baking them is one of my favorites.
yes, and a side of chocolate. kidding! 😉
Thes egg boats look so good! they remind of when my Dad used to make an “egg on an island” also called “toad in a hole”! This is like a grown up version of this and I bet my dad would greatly appreciate this! Pinned 🙂
i love your family!
“BREAK the FAST more slowly” – Yes!!! For one I love your breakdown of Breakfast – and second – lady, am all about sitting and chewing and lingering – especially when it looks as good as this – YASSSS to eggs and Brussels sprouts shavings in baguette boats!
and no noodles! LOL! kidding. Love you!
chewing is so important. Why do we hurry? gah, i’m so guilty of this. Working on it!
Oh man this looks amazing!!!
My breakfasts tend to be a bit monotonous when I’m in a rush–these are anything but and they look like the perfect weekend breakfast. You know I’m all about EGGS.
Dave and I were just talking about how breakfast is usually such a quick meal. This looks like the perfect way to slow down a little! Loving the Brussels and shallots combo – I’ve been eating Brussels like they are going out of style!!
me too! can’t get enough of those little green beauties
Perfect idea for guests this holiday! Such a simple but MOST DELISH looking dish for breakfast! I know I would be all over these!
totally FFF approved! plus oatmeal
Fetch me an oar 😀 My favorite way to eat eggs is probably an egg white omelet, done the French way so that it puffs up!
oh i need to try the french way!
Oh that egg photo makes me want to eat ALL of these. This is a great idea and how affordable. I think these would be perfect for holiday morning no stress… pretty and easy!
yes! come over. I’ll save you an EGGCELLENT egg boat
exactly! more time to sit and SAVOR right?
Look at that yolk!!! I love stuffing bread with eggs…it’s the best of all worlds, and it’s so darn easy. These sound delicious!
Rest and digest I like it and it makes a lot of sense too. I’m always eating in a hurry left with a stomach ache after.
Like a bread bowl but even better! Holiday houseguests are going to love this.
oh i hope they do! it’s so fun to make too
