Healthy light lunch recipes are my go-to on most days. Using seasonal vegetables, fresh fish, and healthy greens means these healthy light lunch recipes are super quick and easy to make. Today’s recipes are all gluten-free with a few paleo/vegetarian options too!
I don’t know about you, but I like lunch to be light, fresh, and full of healthy veggies. Fresh fish pairs perfectly with fresh vegetables, and it’s packed with healthy Omega oils and fatty acids. Plus, fresh fish cooks up quickly, so it’s a no-brainer for me when deciding what protein to add to healthy light lunch recipes.
For anyone looking to eat a protein-packed healthy meatless lunch, legumes, quinoa, and lentils are the way to go. In addition to the protein they provide, they will also fill your body with healthy fiber.
Oh, and can I just say how in love I am with sheet pan meals? I have a seasonal root veggie sheet pan meal that I think you’ll go crazy for. It smells amazing when it’s cooking in the oven!
