Such as these…Sweet Char-grilled apricot parfait dessert bowls. Well… they will first be devoured and then licked clean. And since it’s summer, you don’t need a napkin. We’re breakin rules here people!
Honey Sweetened Grilled apricots … Yup. Do it. Perfectly crunchy and toasted granola… Yup… Devour it. Whipped ginger coconut cream…. Yup. Lick the bowl clean! These parfait dessert bowls are not only gluten free but vegan friendly bowls. True story.
Speaking of story, here’s my story. I gotta end bowl week with a good food story’s. Friday’s should always end with dessert bowl and a story. Right?
Okay, so once a upon a time, like in 2007, I ventured over to New Zealand (with the Kiwi). It was my first time there. The kiwi was eager to show me ALL of New Zealand so started off exploring a lot of the South Island. Yes, we totally drove all of the Lord of the Rings film sets too. We’re nerds. But anyway, that’s another story. One of my FAVORITE places we went to was Queenstown, New Zealand. It is UNREAL ya’ll! So many mountains, lakes, beauty. OH MY! They also had the most amazing food, wine, hotels, and all the things you want out of life, right? Haha.
We stayed in the cute little hotel by the lake. It was stunning! I remember waking up next to the lake, seeing the beautiful fog, then we headed down to the lobby for an amazing breakfast. Can you guess what we ordered?
Fruit Parfait bowls. Little did we know we were ordering the most EPIC dessert bowls for breakfast! The fruit topping was GRILLED. Char – Grilled in a sweet glaze then all sliced up over yogurt and topped with granola. Till this day I still rave to the Kiwi about that breakfast. I keep saying we should go back, just for the grilled fruit alone. Okay and for the parfait dessert bowls. Okay and because it’s New Zealand and I just think life is grande there! I may be a but naive. LOL! It’s Friday, just go with it. Ok?
These sweet char-grilled apricots parfait dessert bowls are my inspiration passed onto you! A healthified dessert bowl that will transport you into another land. The land of “ohhhh and ahhhh.”
It looks fancy, but it really isn’t. Another reason you should “ohhh and ahhh” over this recipe.
You can char-grill the apricot inside on the stove or outside. Just slice, add a little honey, then grill on each side for a few minutes. The taste is unreal. Sweet, tart, juicy (ugh, hate that word but it’s true!).
Now let’s talk about the “yogurt” part of the parfait bowl. It’s actually my coconut cream whip frosting. Yes, dairy free and vegan! Except this time I added in a little fresh ginger to ZEST it up. Again… dreamy. Oh so dreamy! Just look at the whip.. whip it good!
The granola is obviously KEY here. Udis Gluten Free Au Natural granola is one of those simple but qaulity granola’s you can’t help but use in everything. From trail mix, to healthy bites, to oatmeal bread, and more. I love using this simple wholesome granola as a breakfast or a dessert. They use wildflower honey and natural vanilla extracts to enhance that nutty delicious parfait granola flavor..
Plus Au Natural is also french. So … ya know… it goes with PARFAIT just PERFECTLY (parfait is French for perfect). Speaking of Parfait, this Triple Berry Crisp Smoothie Parfait from Go Dairy Free sounds and looks beyond perfect (and portable). YES!
Now that I’ve made you dream of New Zealand, char grilled apricots, French granola parfait, and all things dessert bowls… let me share the ACTUAL BOWL recipe. Grab your spoons and get ready to dive in! It’s PARFAIT. Yes, I am clever!
