This ice cream bread recipe is no exception to any of the above “conditions”. This is because it also has minimal ingredients and all you have to do is mix and bake!
What type of vegan ice cream is best for ice cream bread?
The best vegan ice cream to use in this recipe is one with a coconut milk base. Of course, the recipe also works with any flavor of dairy ice cream, if you can handle dairy.
The best part about making an ice cream bread recipe is that the flavor options are limitless!
Flavor ideas –
- vanilla ice cream with sprinkles (what’s more fun than a Funfetti dessert?!)
- peaches n’ cream
- vegan chocolate swirl
- mint chocolate chip
- any flavor you like!
My ice cream bread has vegan vanilla coconut milk ice cream and sprinkles. What can I say? Sprinkles make the world a better place! 😉

INGREDIENTS and SUBSTITUTION
The ingredients you’ll need for this delicious gluten free dessert recipe are minimal. So, put on your apron and get ready to bake, because I bet you have ALL of these items on hand already.
- softened vegan ice cream – Use any flavor of dairy free ice cream you like. Or, if you can tolerate dairy, go ahead and use real dairy ice cream.
- gluten free all purpose flour – I use Bob’s Red Mill brand
- baking powder
- sugar – You only need a tablespoon of sugar for the entire recipe. You can omit it if you want, or use your favorite sugar alternative. The bread is not too sweet, it varies depending on the ice cream flavor. So feel free to add more or less sugar to make it more a “dessert” bread.
- fine grain kosher or sea salt
- Mix in of choice – we use dye free (natural) sprinkles! You can add whatever you’re craving to your ice cream bread. Dairy free chocolate chips, a swirl of caramel, dried fruit or nuts… let your creativity go wild!
Gluten Free flour substitute for Self Rising Flour
Here’s the trick to self rising flour. Stick with a basil All purpose flour then just add in the extra’s you need to make it rise! In this case, we’re using Bob’s Redmill All Purpose Gluten Free Flour.
Bob’s Redmill Gluten Free All Purpose Baking Flour is a versatile gluten free flour blend, without xanthan gum or guar gum. This flour mix mix is made with garbanzo bean flour, potato starch, whole grain white sorghum flour, tapioca flour and fava bean flour. Great for bread and all kinds of gluten free baked goods! It’s also what I use to make my homemade vegan bread recipe.
For this vegan ice cream bread, we will be combing Bob’s Redmill All purpose plus baking powder and salt to create a self rising flour! Pretty simple, right?
How to make ice cream bread (video)
STEP BY STEP INSTRUCTIONS
Be sure to watch the RECIPE VIDEO (above) in this post to see just how easily this dessert comes together. In the meantime, here are step by step instructions.
- Preheat the oven and prepare a baking pan.
It’s important to line your loaf pan with a sheet of parchment paper. Otherwise, you will definitely have trouble removing the loaf of dessert bread from the pan.
- Whisk dry ingredients together.
Whisking dry ingredients together may not seem important but it really is! Like a traditional vegan bread recipe, this bread uses a leavening agent (baking powder) to help the loaf rise. If the baking powder isn’t fully incorporated with the other dry ingredients, the loaf may not rise properly.
- Add the ice cream and any additional ingredients.
Combine the ice cream into the dry ingredients by stirring it in with a wooden spoon. Keep stirring until a smooth batter is formed – it should look like the photo below.
Then, stir in any additional ingredients of your choice.
- Bake, cool, and serve!
Be sure to wait until the cake is completely cool before you remove it from the pan. Use the parchment paper to help loosen the bread from the sides of the loaf pan.

Ingredients
- 1 ½ cups gluten free all purpose flour (we use Bob’s Red Mill brand)
- 3 teaspoons baking powder
- 1 Tablespoon sugar (optional) – see notes
- ½ teaspoon salt
- 2 cups softened vegan ice cream
- Mix in of choice – we use dye free (natural) sprinkles!
Instructions
- Preheat oven to 350F. Line a bread pan with parchment paper and set aside.
- In a large bowl, sift or whisk together the dry ingredients together.
- Mix in the ice cream and stir until a smooth batter is formed.
- Gently fold in your favorite toppings (i.e sprinkles, chocolate, etc.)
- Pour into the prepared bread pan and bake at 350 F. for 40 to 45 minutes.

Sorry about that! Just updated. Since the ice cream is “ice cream of choice” the nutrition calculated a dairy free ice cream, not vegan. I updated the nutrition with vegan vanilla ice cream using Nadamoo brand. 🙂
