I’ve always wondered who invented the boozy style smoothie. One thing is for sure, they are genius. They just classified booze as a health food. Kidding. Kinda. But in all seriousness, ever since I first saw this type of smoothie a few years back, I”ve been intrigued. The first “spiked” smoothie recipe I saw was a wine smoothie… or maybe it was a slushy? Of course I pinned but haven’t been able to try it. I’m a wine purist, what can I say? It just seems wrong to me. Haha. But Maybe some day. Creamy Vanilla Coconut Mojito Smoothies on the other hand… .. oh so right! In my humble opinion.
The coconut mojito smoothie I’m posting today is way more functional. Meaning, it’s delicious nutritious and has a “fauxjito” option. That’s code for non alcoholic. Boozy or not, it’s creamy minty fresh goodness that everyone will love.
Smoothies are in full swing here. Ahem.. It was 90F yesterday. And Mojitos are definitely coming into season. Well, when are they not? It makes perfect sense to start practicing these refreshing combos in order to prepare for summer heat. Yes, that’s my logic.
But let’s back the boozy train up here. Mmm k? What exactly is in a mojito? Can we make it healthy? Glad you asked. I mean, glad I asked.
A traditional mojito cuban cocktail consists of five ingredients: white rum, sugar, lime juice, sparkling water, and mint. The Mint sprigs are muddles with sugar and lime juice. Rum added and topped with soda water then garnished with mint leaves.
Now, here’s where I butcher the classic mojito cocktail a little bit to make it “healthier” and with a non alcoholic paleo option. GASP! Shhhh… don’t tell the bartender I’m pretending to be a healthy mixologist.
For starters, we are going to say ADIOS to the white sugar. Let’s use maple syrup (or agave nectar) in this Vanilla Coconut Mojito Smoothie instead. Ahh… So much better.
Second, we’re going to add in some healthy fats. Like avocado and coconut cream. That way our blood sugar stays a little more stable if you are having sugar/alcohol together. . You get my point. Food slows down alcohol absorption.
And third, we’re going to give everyone a “fauxjito” option without the real rum. You can either nix the rum all together or just use rum extract.
Fourth, whoops, I forgot there was a fourth. Lastly, we are going to blend it all together to make a huge batch to share. Wait.. is that healthy? Well yes and no. Yes, because you can serve smaller portions at a party or event.
And no because if you are like me and tend to drink straight from the blender, then this option might be dangerous if “spiked.” Unless you want to be slurping sideways and talking spanish after drinking half the blender.
That could be fun, yes?
Haha, okay ya’ll, joking aside, let’s just grab a straw and get REFRESHED!

Description
Vegan Creamy Vanilla Coconut Mojito Smoothie {“Fauxjito” Mocktail Option}
Ingredients
- ½ ripe avocado
- 12 oz coconut milk or almond milk (light)
- ½ cup vegan coconut yogurt (can use plain yogurt too)- see notes for coconut yogurt brand
- 2 tbsp lime juice (more if you like it more tart)
- 1 tsp vanilla extract
- 2 oz white rum or vanilla rum (fauxjito can use rum extract 1 tsp)
- 1 tbsp maple syrup
- ¼ cup frozen pineapple or pineapple juice concentrate
- Mint leaves (8 divided)
- ice- optional
Instructions
- Blend together all ingredients plus 4 -6 mint leaves. Save 2 mint leaves for garnish.
- Add ice if you want it more slushy.
- Garnish with mint leaves and extra maple syrup/lime if desired.
- Serve cold.
- For non alcoholic version, use 1 teaspoon rum extract or none at all.
Notes
I used so delicious plain coconut yogurt but greek yogurt or vanilla yogurt will work too.
Nutrition – Calories for just the fauxjito smoothie are around 215- 230. 13 grams fat, 17 carbs, 5 grams protein, and 8-10 grams sugar.
