Vegan Creamy Vanilla Coconut Mojito Smoothie {“Fauxjito” Mocktail Option}
Ingredients
Scale
- 1/2 ripe avocado
- 12 oz coconut milk or almond milk (light)
- 1/2 cup vegan coconut yogurt (can use plain yogurt too)- see notes for coconut yogurt brand
- 2 tbsp lime juice (more if you like it more tart)
- 1 tsp vanilla extract
- 2 oz white rum or vanilla rum (fauxjito can use rum extract 1 tsp)
- 1 tbsp maple syrup
- 1/4 cup frozen pineapple or pineapple juice concentrate
- Mint leaves (8 divided)
- ice- optional
Instructions
- Blend together all ingredients plus 4 -6 mint leaves. Save 2 mint leaves for garnish.
- Add ice if you want it more slushy.
- Garnish with mint leaves and extra maple syrup/lime if desired.
- Serve cold.
- For non alcoholic version, use 1 tsp rum extract or none at all.
Notes
I used so delicious plain coconut yogurt but greek yogurt or vanilla yogurt will work too.
Nutrition – Calories for just the fauxjito smoothie are around 215- 230. 13 grams fat, 17 carbs, 5 grams protein, and 8-10 grams sugar.
