Hey friends! I am excited to reshare this Carrot Celeriac Spiralized Salad recipe and include new photos and a NEW video! Heck I even talk about the health perks in the video. Hope you enjoy it, it’s perfect for Spring or Summer. Thank you for following Cotter Crunch Y’all!.
I have this place in my heart for ugly produce. I really do. Remember my love for rutabagas? It’s like, the uglier the fruit or vegetable the more I want to take it and make it into a Swan of a dish. But here’s the thing. Often these ugly duckling of a produce have so much nourishment inside. It’s what’s inside that counts, right? Hehe. Is that too corny or what?
Take this Carrot Celeriac Spiralized Vegetable Salad. It looks so pretty, healthy, and tasty, right? Please say yes.
But this spiralized salad did not start off looking like this.
Celeriac (also known as Celery Root) actually looks like this (below). GASP!
It’s like I pulled a misshaped turnip out of the grown and the sliced off his green mohawk (aka the “celery” stem). Oh poor celery root. I mean celeriac. Not only is it ugly, but it’s name sounds like a disease. But it actuality, this vegetable can help cure disease! How about that for awesomness?!
Let’s discuss!
Fact! Celeriac has a taste that is similar to a blend of celery and parsley. Plus it contains some pretty SUPER root vegetable nutrients.
Health benefits of eating Celeriac (celery root):
- First of all, it’s pretty low in calories and carbs. So it’s a great replacement for those looking to lighten up or “spring clean” their meals. It can be used as a mash, in soup, and of course… SPIRALIZED SALAD! Which is more fun anyway.
- Second, celeriac contains a good amount of Vitamin K. Which is vital for our bone health! Vitamin K improves bone mineralization by promoting bone BOOSTING fighting activity (all within the bones).
- Third, it contains some pretty crucial ESSENTIAL minerals that helps boost our immunity and energy. Essential minerals such as phosphorus, iron, calcium, copper, and manganese.
- And fourth (and the reason I love it), celeriac is said to have calming, antiseptic, and other therapeutic properties. Especially in regards to the digestive system. So those that suffer from digestive disorders, IBS, indigestion, etc. This just might be THE HEALING vegetable you’ll want to ADD to diet ASAP. Ahhh… bliss!

- 2 Tablespoons dijon mustard
- 2 Tablespoons olive oil
- 1 Tablespoon apple cider vinegar (or red wine vinegar)

- Once it’s marinated in fridge, remove and add the parsley and pumpkin seeds.

Don’t have celeriac available? No problem! Try turnips, Jicama, or Daikon radish.

We love making this salad alongside roasted chicken or baked chicken. It’s a perfect potluck side or side dish for Easter…. just sayin.
That being said, but you can easily eat this as it. Although, you’re gonna want to go back for seconds or thirds, so you better make that a double celeriac salad. Just sayin….
This salad literally takes 10 minutes to make with no cooking required. YAY! It’s also paleo, whole30 approved, vegan, yada yada yada. ..
But most importantly… it’s FLIPPING GOOD!
So here’s my challenge to you. Go get yourself an ugly celeriac (celery root) and trying making something with it. Actually, start off with making this easy peasy carrot and celeriac spiralized salad, then progress from there. Keep me posted, mmm k?
Here’s the spiralizer I use. It has 3 blades and I ADORE IT!
Ever tried Celeriac? Or spiralizing something other than zucchini?
Cheers,
Delicious! I made this the other night. I am going to make it again for a dinner party next week. I think I am going to add some apple just because I love celery root and apple together.
★★★★★

Definitely gorgeous, and I bet it tastes just as good!
I would have to agree hehe
Such a pretty bowl of veggies- I just love celeriac root, it’s way underutilized!
Right?! So agree
This salad is absolutely gorgeous! I love the texture that the pumpkin seeds add to the party!
★★★★★
Thanks Becca!
I love what you do with a spiralizer, my friend!
Now this is how you eat the rainbow! That just looks so refreshing!
This is so pretty! Guess it’s time to put a spiralizer on my shopping list.
So healthy looking!!
★★★★★
Love the flavor of celeriac! It may be ugly, but the taste makes up for it. 🙂
Beautiful for sure!! I love the flavor of celery root but it’s been off my radar!!
What a refreshing and delicious salad!
I’ve never had celeriac but this looks lovely dear!! Pinning!
I LOVE celeriac but I never thought to spiralize it! I always have it mashed! This is so smart. Pinning!
Just got our spiralizer! This looks like such a pretty (and super healthy) salad!
thanks Christie
This salad looks gorgeous (and I’m sure it tastes the same)! I absolutely love celeriac root. I have a tough time spiralizing carrots. Sometimes in the UK you find really large carrots but not lately 🙁 Do you think it would work with sweet potato? I love sweet potato in my salads.
yep, totally! I made a sweet potato spaghetti casserole with spiralized sweet potato. I would spiralize first, then cook or steam in microwave
My spiralizer hasn’t gotten nearly enough love lately! I love spiralizing sweet potatoes and actually don’t love zucchini all that much. This I’ll try – I also love ugly produce 🙂
The last time I had celeriac was back in my old OLD blog when there was some weekly challenge thing going on. I made a celeriac and apple slaw with mustard sauce. It was SO good. How can something so ugly taste so good?!!?
i think i remember that post! and recipe! Yes, good one
It makes my heart happy you shared a recipe with Celeriac. Root vegetables for the win!
you make me happy! always
That looks amazing & I like the simple ingredients since I am not paleo so I don’t eat as much fat as the paleo folks. 🙂 I do eat healthy fat though!!!
No spiralizer or grater.. you know how lazy I am.
I have heard of celery root but not that name for it. I LOVE the benefits!!!!! Also this is easy to change up what you add to it to change the taste!
I think you’d love making celeriac mash! low carb. It’s easy! xxoo
What a beautiful salad!
★★★★★
thanks julie!
I always want to pick one up and try celeriac… but it’s kind of expensive. But this is a great way to get the most out of it! I’m going to have to pick one up for Dave. We are slowly healing his gut, and now that I know this has the ability to help, well it’s worth the $$
celeriac soup is also really good for gut health! Make that next. when you can $$. haha. I so get that.
I’ve never bought or eaten celeriac! You sure know how make an ugly food look TASTY in a dish 😉
haha thanks friend
I just pinned this one to try! We’re going to be eating a LOT of veggies after a week in Vegas and Big Bear. Vegas will just have to suck it up. Ha!
keep me posted bro!
I haven’t bought a celeriac in ages and it always overwhelms be a bit. This seems doable and hey looks pretty darn good.
If it’s that healthy, I am gonna get it this week.
★★★★★
it’s so doable! go for it friend!
I’m such a kid in the produce department, taking my time, looking at and touching everything, and giggling at all the funny names. I know, I know…. celeriac is on my list but they didn’t look very good last time I look at them. I know you’re probably laughing not that they are suppose to be cute, not even one of those so ugly it’s cute, but they were a slimy and just didn’t look good. You know like when beets don’t look the best or carrots have that look?
haha i can so relate. And ya, don’t go for slimy! EEK!
I had no idea what celeriac was until I got it once in my Blue Apron. I think I may have even taken a picture with it like “wtf is this?”
I always forget all the different ways I can use my spiralizer so thank you for reminding me!
haha i think everyone does the WTF moment!
I’ve picked up Celeriac and put it back more times than I can count on one hand – but now I’m picking it up and bringing it home! This bowl is gorgeous and I had no idea Celeriac was so good for me!
One of my favorite root veggies!!! Celeriac is just so “beautiful” in my opinion 😉
I’m with you on the ugly veggie love. Rutabagas are one of my favorite veggies, such an under appreciated delicacy! I like celeriac too. There is a local restaurant that uses it as one of the many veggies in it’s vegetable miso soup. It’s my favorite part. Sometimes I save all the pieces for last.
I have never tried celeric, but I totally want too now that you shared all kinds of fun details. I am obsessed with my spiralizer (I just ate spiralized sweet potatoes in my eggs!) so I’ll take any excuse to use it!
That looks delicious! I’m kind of obsessed with my spiralizer right now since I just recently got it! Have to make this!
I have to say, one of the blogs I missed the most when gone was… YOURS. Cause you’re a genius. And delicious. And I want to eat everything you make. And well. Balls.
I missed you! take me next time!!
Going to SE Asia at the end of this year…. You in?! 😛
I’m IN!!!! ASIAN FOOD FOR LIFE!
Oh yum! I’ve never seen it before. Is it just next to the celery in the grocery store?
it’s kinda with the radish and turnips. At least in my grocers but it can be with celery too. The head is celery stick haha. You’ll have fun with this!
I am OBSESSED with my spiralizer and use it almost every day but I have yet to try it with celery root! This salad would be amazing with some chicken for a perfect lunch 🙂
haha! You crack me up.. celeriac kind of does sound like a disease…. Luckily this salad is beauuuuutiful and super healthy. I love it.
I was thinking the same thing lol. Never heard of it before 🙂
I spy with my little eye a way to use my new Kitchen Aid Spiralizer!
My mom actually swears by celery root and puts it in soups, salads, and god knows what else. I like it, but I remember being completely freaked out the first time she asked to buy it for her 😆
Got my new spiralizer for Christmas Lindsay, so I’m now always on the hunt for great spiralizer recipes, like this.
Thank you! 😀
you did!?! YAY! get to work… SPIRAL! haha
You DID manage to make it look pretty! I’ve never had celeriac, and I certainly wouldn’t have known what to do with one if I purchased it at a store. This sounds delicious!
Oh good. Yay for ugly produce love!
I’ve never tried it but I’m pretty sure I’ve seen it at my market and wondered what it was. Going to try this one!
