This marinated vegetable spiralized salad is simple and healthy to make, not to mention delicious! A paleo, vegan, and whole 30 friendly veggie noodle salad option you can make under 30 minutes. Celeriac (celery root) is an extremely versatile vegetable and rich in nutrients!  Don’t have celery root? No prob! Try jicama or turnips instead! All you really need are the right seasonings and oils. Let’s make some light and zesty, Carrot Celeriac Spiralized Salad!

I have this place in my heart for ugly produce. I really do. Remember my love for rutabagas? It’s like, the uglier the fruit or vegetable the more I want to take it and make it into a Swan of a dish. But here’s the thing. Often these ugly duckling of a produce have so much nourishment inside. It’s what’s inside that counts, right? Hehe. Is that too corny or what?

Take this Carrot Celeriac Spiralized Vegetable Salad. It looks so pretty, healthy, and tasty, right? Please say yes.

But this spiralized salad did not start off looking like this.

Celeriac (also known as Celery Root) actually looks like this (below). GASP!

It’s like I pulled a misshaped turnip out of the grown and the sliced off his green mohawk (aka the “celery” stem).  Oh poor celery root. I mean celeriac. Not only is it ugly, but it’s name sounds like a disease. But it actuality, this vegetable can help cure disease! How about that for awesomness?!

Let’s discuss!

Fact!  Celeriac has a taste that is similar to a blend of celery and parsley. Plus it contains some pretty SUPER root vegetable nutrients.

Health benefits of eating Celeriac (celery root):

  • First of all, it’s pretty low in calories and carbs.  So it’s a great replacement for those looking to lighten up or “spring clean” their meals.  It can be used as a mash, in soup, and of course… SPIRALIZED SALAD! Which is more fun anyway.
  • Second, celeriac contains a good amount of Vitamin K. Which is vital for our bone health! Vitamin K improves bone mineralization by promoting bone BOOSTING fighting activity (all within the bones).
  • Third, it contains some pretty crucial ESSENTIAL minerals that helps boost our immunity and energy. Essential minerals such as phosphorus, iron, calcium, copper, and manganese.
  • And fourth (and the reason I love it), celeriac is said to have calming, antiseptic, and other therapeutic properties. Especially in regards to the digestive system. So those that suffer from digestive disorders, IBS, indigestion, etc. This just might be THE HEALING vegetable you’ll want to ADD to diet ASAP.  Ahhh… bliss!

And I’m not gonna lie, I kinda had fun making this dish because of all the noodles it produced by only a few VEGETABLES!

Marinated Carrot Celeriac Spiralized Salad {Vegan, Paleo}

Description

A Vegan and Paleo friendly spiralized salad tossed in a light olive oil mustard dressing. SEE NOTES for options if you don’t have a spiralizer.


Ingredients

Scale
  • 2 large carrots (peeled)
  • 1 medium celery root/celeriac bulb (peeled) – See notes for alternative vegetables
  • 2 Tablespoons dijon mustard
  • 2 Tablespoons olive oil
  • 1 Tablespoon apple cider vinegar (or red wine vinegar)
  • 1 teaspoon honey or agave nectar (maple syrup is fine too. It’s just for a sweetener) – omit for whole 30
  • ½ of a lime (juiced)
  • ½ teaspoon black pepper
  • ½ teaspoon sea salt
  • 3 Tablespoons or more or roasted pumpkin seeds
  • 2–3 Tablespoons chopped parsley

Instructions

  1. First clean the vegetables. Cut off the tops to both carrot and the celeriac and peel with a peeler.
  2. Place in spiralizer and spiral all the vegetables. If you don’t have a spiralizer, you can just use a grater or julienne cut.
  3. Place noodles in bowl and add in all the ingredients minus the parsley and seeds.
  4. Toss the noodles with the marinade and let it sit in the fridge for 20-30 minutes.
  5. Once it’s marinated in fridge, remove and add the parsley and pumpkin seeds.
  6. Serve immediately or keep in fridge for later.

Notes

Don’t have spiralizer? Simply julienne cut the vegetables.

Don’t have celeriac available? No problem! Try turnips, Jicama, or Daikon radish.

    This salad looks gorgeous (and I’m sure it tastes the same)! I absolutely love celeriac root. I have a tough time spiralizing carrots. Sometimes in the UK you find really large carrots but not lately 🙁 Do you think it would work with sweet potato? I love sweet potato in my salads.

    The last time I had celeriac was back in my old OLD blog when there was some weekly challenge thing going on. I made a celeriac and apple slaw with mustard sauce. It was SO good. How can something so ugly taste so good?!!?

    That looks amazing & I like the simple ingredients since I am not paleo so I don’t eat as much fat as the paleo folks. 🙂 I do eat healthy fat though!!!

    No spiralizer or grater.. you know how lazy I am.

    I have heard of celery root but not that name for it. I LOVE the benefits!!!!! Also this is easy to change up what you add to it to change the taste!

    I always want to pick one up and try celeriac… but it’s kind of expensive. But this is a great way to get the most out of it! I’m going to have to pick one up for Dave. We are slowly healing his gut, and now that I know this has the ability to help, well it’s worth the $$

    I’m such a kid in the produce department, taking my time, looking at and touching everything, and giggling at all the funny names. I know, I know…. celeriac is on my list but they didn’t look very good last time I look at them. I know you’re probably laughing not that they are suppose to be cute, not even one of those so ugly it’s cute, but they were a slimy and just didn’t look good. You know like when beets don’t look the best or carrots have that look?

    I had no idea what celeriac was until I got it once in my Blue Apron. I think I may have even taken a picture with it like “wtf is this?”

    I always forget all the different ways I can use my spiralizer so thank you for reminding me!

    I’ve picked up Celeriac and put it back more times than I can count on one hand – but now I’m picking it up and bringing it home! This bowl is gorgeous and I had no idea Celeriac was so good for me!

    I’m with you on the ugly veggie love. Rutabagas are one of my favorite veggies, such an under appreciated delicacy! I like celeriac too. There is a local restaurant that uses it as one of the many veggies in it’s vegetable miso soup. It’s my favorite part. Sometimes I save all the pieces for last.
