Paleo Meal Ideas for One

Paleo. If feel like it’s such a strong word these days. Maybe a little too dogmatic for some. And to be honest, I don’t like focusing on an one size fits all diet, but rather a REAL food diet that works best for each individual.

So I titled this post PALEO(ish) because that’s what we eat from time to time, with a REAL FOOD focus. Some weeks we have more carbs and lactose free dairy, some weeks we focus on getting in more protein, and some weeks we focus on grain free with higher fat intake. It really depends on what is going on in our life (and health) and the amount of training we are or are not doing. Needless to say, the body will let you know what it needs, yes?!

Okay, now that that is out in the open, I have another little confession. This week I’ve been cooking for one. You see, the kiwi is off racing back to back weekends and I couldn’t go because I get to go be NUTTZO this weekend at blend, yay! When it’s just me cooking, I tend to make more PALEO(ish) simple meals with lots of good fat. Did I mention I love butter and kefir cheese? I do, and with the kiwi gone this week, i get to hog it all! Haha.

Here are a few of my favorite PALEO(ish) appetizers/light lunches/brunch ideas for one!

balsamic glazed scallops caprese

You all know salad caprese, right? Well replace the mozzarella with sautéed scallops and you’ve got yourself a tasty appetizer or small meal. I sauté the scallops in garlic and butter for about 6 minutes or until they are no longer opaque. Then add to sliced cucumber or zucchini, basil, tomato, and drizzle with balsamic glaze. To make this a full meal, add a sweet potato or regular potato with feta! See.. paleo(ish) with the dairy.

Julian Bakery Paleo wraps have become quite the staple in our house. We love them! Great for sweet or savory dishes. I’ve been making this wrap part of lunch on a regular basis.

  • coconut wrap
  • 4oz roasted chicken
  • 1/2 cup steamed white rice with 1 tbsp coconut butter or real butter
  • 2-4 tbsp spicy kimchi
  • Srirachi to top!

And lastly, my beloved breakfast/brunch ideas. The coconut waffle is from Julian Bakery. I love how big and fluffy it is! I also love that is is dense in nutrients because it’s made with coconut milk. I heated it in the oven then topped an egg on top. But don’t forget to add butter and a little maple syrup! The toast on the right is Julian’s Bakery Cinnamon Raisin Paleo Bread. I think this bread has to be one of my favorites because it toasts up so nicely and I love the smell of cinnamon raisin bread. I topped mine with Kefir Creamed Cheese, banana, and coconut sugar. A sweet and savory combo!

Their new Honey Bread  is a little softer and higher in calorie/carbs. I love using this bread for post workout French toast or even a simple PB Banana sandwich! Just coat the bread in almond milk and egg then fry in skillet!

    I’ve seen this Paleo bread before and really wanted to try it! My favorite meal to make when I”m by myself is some kind of breakfast for dinner. The hubs isn’t a huge fan, so I have to take advantage of the times I’m flying solo. 🙂

    This could also be titled (hashtag)notstrictpaleo 😉

    I follow a paleo diet with dairy, and have grains occasionally. I eat sweet potatoes and butternut squash, sometimes quinoa and Basmati rice for running fuel, and love that all cheese is okay.

    The only thing I’m really strict on is sugar, just won’t have it. I use xylitol instead.

      it depends on how strict you want to be with paleo. I would say just dabble in it if you want. Keep the rice and focus on good protein fat and veggies! Good to hear from you Jan!

    I’ve always loved your non-preachy nutritional advice. I definitely cringe whenever I see Paleo in the title of someone’s blog post, because I find that a lot of people DO treat it as the be-all, end-all and bash any style of eating that isn’t in line with it. Not fun. I love my grains! Any any diet that tells me I can’t eat oatmeal is not one that’s going to sit well with me.

    My favorite lunch is a salad topped with leftover protein from dinner, plus whatever veggies (raw or roasted) are in my fridge. During TX summers, I can’t get enough salad! Oh, and I recently tried the almond Paleo Bread for the first time..so good! Especially topped with mashed avocado and an egg 🙂

    I tried their coconut paleo bread awhile back and I couldn’t get it to take! 🙁 I have, however, been eyeing the wraps. Amazing! I love Julian Bakery and love taking trips up there!

    I’m not a strict Paleo eater…but I do follow much of the Whole30 “way” although definitely not strictly. I don’t personally believe in eating one specific “program” or another. I believe in moderation, eating mostly natural foods, but enjoying some packaged goods and treats occasionally. The whole 80/20 or 90/10 philosophy, but not being rigid about it b/c somedays are 70/30…etc.
    Anyways, I hope I win this Giveaway for these Wraps and Bread! I’d make variety of things using them!

    But, since I girl can’t live off nachos, when it’s just me, I like to try out heavy veggie dishes, since the fiance thinks those are less-than-desirable!

    I completely agree with you on defining a “one size fits all diet”. I typically follow what I like to call an 80% paleo lifestyle, with mounds of peanut butter as my love! My favorite meal to make for myself is definitely breakfast for dinner! Pancakes, waffles, eggs…a mixture…YUM!

    I wish I was there keeping you company and enjoying these yummy eats 😉 I agree, no one-size-fits all and there is always a ‘fad’ word or way of eating, and it doesn’t mean it works for all either. I tend to eat similarly to you, especially when prepping for one 🙂

    I always love my breakfasts but when Nathan is gone and I’m making dinner for myself, I usually go for something super easy and fast, like spirazlied zucchini. And there also usually ends up being an egg on top 😉

    I love how you use the term PALEO-ish. You should copyrright it and write a book and an accompanying cookbook and go on Dr Oz and make tons of money and then retire early and open a winery in NZ.
    But it’s true — that’s one of the reasons why I love Kessler’s personal Paleo code. Approach.

    The coconut wraps… do you heat them up before? We have them but can’t get them to stay together well. 🙁

    My favorite solo meal… sounds so lazy but I love a big smoothie with pieces of plantain bread broken up in it. If I didn’t have a hubby, I would be fine eating salads and shakes all day long!

      i keep them at room temp. Sometimes we steam or heat up for a bit, but they never fall apart. I wonder why yours do? hmmm… on another note, i’m going to miss you at blend!!!

    I eat paleo-ish, too. I do eat some grains and some dairy, but it’s all how I feel. I focus on real food, and that’s most important! My favorite meal is grilled chicken, butternut squash and a green veggie sautéed in coconut oil.

    I have not been a fan of Julian Paleo but willing to try again since have not had the ones you are giving away. The waffles sound great!. I loved their regular breads before they stopped making them!

    my favorite meal to make is dinner! it’s a great way to wind down after work and get creative in the kitchen. usually, i use what i’ve prepped for the week, such as baked sweet potatoes and whip up something to go with it, like a yummy curry sauce or some baked fish! always with some kimchi on the side 🙂

    I have never tried Kimchi but would really like to. I need to take care of that stat! The Cinnamon Raisin Bread sounds great. My favorite meal to make myself is grilled chicken, grilled vegetables, and sweet potato- simple and so satisfying 🙂

    I love that you aren’t focused on a “diet” but rather whole, healthy foods. No labels. As for favorite thing to make for myself, that’s a tough one. If I’m home alone, I just toss random things together based on a protein and tons of veggies. Probably not exactly answering your question huh 😉

    I’m so intrigued with that coconut waffle–I think I may need to try that one at home! I prefer to drop the labels all together when it comes to food. Too restricting for me. Because I don’t eat a ton of meat, so many people look at me like I’m nuts when I do eat meat–“Wait, I thought you were a vegetarian!?” Gaaah. No I just eat what my body tell me to eat! Sometimes it’s meat, sometimes it’s a whole plate o’ vegetables. Well that turned into a rant. Have a nice day. 🙂

    Whoa! That kimchi chicken wrap looks absolutely incredible. So much flavor!
    My favorite meal to make for myself is brown rice or farro with grilled chicken, avocado, and roasted brussels sprouts on top!

    So many delicious ideas! I think paleo-ish is a great way to eat. By myself, I’m usually making eggs or large salads with smashed avocado and salmon.

    My favorite meal (that’s not sweet potatoes with nut butter) is spaghetti squash mixed with grilled artichoke hearts (and maybe mushrooms) topped with two poached eggs. Yum!

    I love making a huge bowl of frozen veggies topped with a scrambled egg and a Dr. praeger’s kale burger!

    These are cool ideas. I’ve never tried paleo bread and have only made a few baked goods mainly out of my own views about paleo…but to spike some variety in our meals once in a while it might not be a bad thing! Especially for my husband. He would love the wraps I’m sure. Oh and the scallops are such a good idea!

    I often enjoy just cooking for myself…I make an effort not to make a “lazy” meal and often do things like roasted and stuffed sweet potatoes, peanuty noodles or huge salads with lots of grilled veggies and a fried eggs.

    I’ve been wanting to try Julians Bakery for quite sometime. I’ve heard nothing but wonderful reviews.

    When I’m by myself I usually have eggs or a sandwich. I like to keep it simple & not give myself many dishes LOL

    I love loaded sweet potatoes and clean out the fridge so nothing goes to waste big green salads topped with a black bean or veggie burger. I think I’m getting hungry!
