Paleo. If feel like it’s such a strong word these days. Maybe a little too dogmatic for some. And to be honest, I don’t like focusing on an one size fits all diet, but rather a REAL food diet that works best for each individual.
So I titled this post PALEO(ish) because that’s what we eat from time to time, with a REAL FOOD focus. Some weeks we have more carbs and lactose free dairy, some weeks we focus on getting in more protein, and some weeks we focus on grain free with higher fat intake. It really depends on what is going on in our life (and health) and the amount of training we are or are not doing. Needless to say, the body will let you know what it needs, yes?!
Okay, now that that is out in the open, I have another little confession. This week I’ve been cooking for one. You see, the kiwi is off racing back to back weekends and I couldn’t go because I get to go be NUTTZO this weekend at blend, yay! When it’s just me cooking, I tend to make more PALEO(ish) simple meals with lots of good fat. Did I mention I love butter and kefir cheese? I do, and with the kiwi gone this week, i get to hog it all! Haha.
Here are a few of my favorite PALEO(ish) appetizers/light lunches/brunch ideas for one!
You all know salad caprese, right? Well replace the mozzarella with sautéed scallops and you’ve got yourself a tasty appetizer or small meal. I sauté the scallops in garlic and butter for about 6 minutes or until they are no longer opaque. Then add to sliced cucumber or zucchini, basil, tomato, and drizzle with balsamic glaze. To make this a full meal, add a sweet potato or regular potato with feta! See.. paleo(ish) with the dairy.
Julian Bakery Paleo wraps have become quite the staple in our house. We love them! Great for sweet or savory dishes. I’ve been making this wrap part of lunch on a regular basis.
-
4oz roasted chicken
-
½ cup steamed white rice with 1 tablespoon coconut butter or real butter
-
2-4 tablespoon spicy kimchi
-
Srirachi to top!
And lastly, my beloved breakfast/brunch ideas. The coconut waffle is from Julian Bakery. I love how big and fluffy it is! I also love that is is dense in nutrients because it’s made with coconut milk. I heated it in the oven then topped an egg on top. But don’t forget to add butter and a little maple syrup! The toast on the right is Julian’s Bakery Cinnamon Raisin Paleo Bread. I think this bread has to be one of my favorites because it toasts up so nicely and I love the smell of cinnamon raisin bread. I topped mine with Kefir Creamed Cheese, banana, and coconut sugar. A sweet and savory combo!
Their new Honey Bread is a little softer and higher in calorie/carbs. I love using this bread for post workout French toast or even a simple PB Banana sandwich! Just coat the bread in almond milk and egg then fry in skillet!
Julian’s Bakery makes Paleo(ish) eating easy for one or for many. All their PALEO products are Non GMO, grain free, and they have variety paleo breads which will suite your macronutrient/nutrition needs. I know, I sound like a commercial, but I’m being honest here. I’d love for you to try out Julian’s Bakery yourself! So guess what, about another giveaway? Open to US residents only. But they do have a Canada Website, so check that out!
*Julian Bakery sent me these products to try out for free, but all my creations and opinions on their products are my own!
Cheers!
Stir fry with tons of veggies & eggs and spicy sauce add-ins!
I love making pancakes for myself-or PB&Js. I also rock at making pasta dishes for dinner-so easy too!
salads or just heating up some pre-made spag squash with veggies and chicken or shrimp.
i usually make a big salad with canned salmon or sardines (husband does not like these!)
I am a huge protein pancake fan!
My favorite meal to make for myself is eggs. I can eat them for breakfast, lunch or dinner. Hope you had a great time at blend 🙂
I love making omelettes with veggies and cheese when it’s just me for dinner 🙂
I love making a spaghetti squash dish if I’m cooking for just myself. Or a mini frittata.
dying to try this!
I’ve seen this Paleo bread before and really wanted to try it! My favorite meal to make when I”m by myself is some kind of breakfast for dinner. The hubs isn’t a huge fan, so I have to take advantage of the times I’m flying solo. 🙂
They all look so savoury. One of each please 😉 Have an awesome time at Blend!
My favorite meal to make for myself is dhal and naan. But I’m kinda sick of it, soooo …
ohhh nice job lady! i’ll come eat it if you are sick of it!
This could also be titled (hashtag)notstrictpaleo 😉
I follow a paleo diet with dairy, and have grains occasionally. I eat sweet potatoes and butternut squash, sometimes quinoa and Basmati rice for running fuel, and love that all cheese is okay.
The only thing I’m really strict on is sugar, just won’t have it. I use xylitol instead.
Hi Linds! I love making a big ol’ salad with roasted veggies and a grass-fed burger patty on top. 🙂 Those waffles look delish! Good waffles are one of the things I miss most…
I’ve been dying to try their bread! Love the wraps and make turkey or tuna roll ups in them often. Well, not too often because they are so expensive!
i hear ya! hopefully you will score some more wraps!
(((OFF TO FIND AND BUY WRAPS FER HUSBAND!!))))
I love breakfast food and any veggie on the grill!
Mmmm waffles with eggs on top? Now you’re talking 🙂 Thanks for sharing an interesting looking new product (I’ve got to find those wraps) and have fun at Blend this weekend!
i think you’d love the waffles! so so good!
Protein pancakes for breakfast & Breakfast for dinner when I’m cooking for myself..what can I say.. I LOVE breakfast foods!
I love making a big salad with lots of color and lemon dressing.
Julian’s Bakery has been furiously flirting with me for quite some time, but I have had to bat him away because in the end, he’s just not right for me!
it’s the eggs, right? silly bat
Yesum! However the coconut wraps I could possibly do!!!! His flirting could be WORKING!
I love to make egg in the holes! So good and a bunch of protein!
Looks amazing and delicious. I love your focus on real food! And have such an amazing time this weekend at Blend. So sad to miss it!
Thanks for so many tips for easy, simple meals! I am so tempted to try paleo but I’m scared it will be too hard…I think I just need to dive in & do it. Summer is the perfect time!!
it depends on how strict you want to be with paleo. I would say just dabble in it if you want. Keep the rice and focus on good protein fat and veggies! Good to hear from you Jan!
Protein pancakes with PB hummus and jam 🙂
I love greek yogurt bowls… however, they aren’t hard to make… and definitely aren’t paleo ;}
oh but they are sooooo good! i do the same with kefir yogurt.
I love oatmeal!!
I gotta admit, I don’t really like to cook for myself. I do like cooking up a veggie burger (sorry, frozen).
I’ve always loved your non-preachy nutritional advice. I definitely cringe whenever I see Paleo in the title of someone’s blog post, because I find that a lot of people DO treat it as the be-all, end-all and bash any style of eating that isn’t in line with it. Not fun. I love my grains! Any any diet that tells me I can’t eat oatmeal is not one that’s going to sit well with me.
My favorite meal to make for myself is a veggie and egg scramble. Those wraps look great!
My fave meal to make for myself is pancakes… yum!
I tend to stir fry anything!
oatmeal – any time of the day!
Well, since I live by myself and eat by myself my favorite meals to make and eat alone are…ALL OF THEM! Hahaha!
I like making really big salads!
All my meals! 😉 But I am a sucker for breakfast!
My favorite lunch is a salad topped with leftover protein from dinner, plus whatever veggies (raw or roasted) are in my fridge. During TX summers, I can’t get enough salad! Oh, and I recently tried the almond Paleo Bread for the first time..so good! Especially topped with mashed avocado and an egg 🙂
I keep it easy. Chicken and veggies.
I tried their coconut paleo bread awhile back and I couldn’t get it to take! 🙁 I have, however, been eyeing the wraps. Amazing! I love Julian Bakery and love taking trips up there!
these breads are way different!! the almond meal base is much better and they are soft. SO SO GOOD
coconut waffle?! yummy!!! my favorite meal when i’m solo is sushi, but when i make dinner for myself, i go with eggs!!! sounds like i’m not the only gal here with the same meal!
I’m not a strict Paleo eater…but I do follow much of the Whole30 “way” although definitely not strictly. I don’t personally believe in eating one specific “program” or another. I believe in moderation, eating mostly natural foods, but enjoying some packaged goods and treats occasionally. The whole 80/20 or 90/10 philosophy, but not being rigid about it b/c somedays are 70/30…etc.
Anyways, I hope I win this Giveaway for these Wraps and Bread! I’d make variety of things using them!
~Amy 🙂
Honestly? I love making myself nachos. I make some amazing nachos.
But, since I girl can’t live off nachos, when it’s just me, I like to try out heavy veggie dishes, since the fiance thinks those are less-than-desirable!
I completely agree with you on defining a “one size fits all diet”. I typically follow what I like to call an 80% paleo lifestyle, with mounds of peanut butter as my love! My favorite meal to make for myself is definitely breakfast for dinner! Pancakes, waffles, eggs…a mixture…YUM!
They look so good! I’d love to try them.
I’ve got to try those coconut wraps!
Hadn’t heard of them before and am always left out when the kids have tortillas!
I would LOVE to try the Julian Bakery products!!
I eat alone most nights, my go to is chicken salads loaded with raw or roasted veggies!
Breakfast is definitely my favorite meal to make. Eggs with some sweet potatoes cooked in coconut oil…yum
My favorite meal to make for myself is breakfast for dinner whether that’s coconut flour pancakes or an omelet.
I really should eat before I read blogs in the morning!
I really enjoyed Julian’s bread when I was in AZ last Christmas. I finally found their coconut wraps here in Calgary, now I hope the bread comes soon too!
Holy guacamole that scallop caprese salad is calling my name! I literally just looked at my schedule to see if I had time to hit the grocery store for some scallops … no dice today, but it WILL come soon! And I’ve heard so much about the wraps (from Laura at Sprint2theTable, I think!) … yum!
When I’m cooking for one, I love making a great stir fry with chicken, mixed veggies and some kind of green sauteed in a pan on the stove. 🙂
I wish I was there keeping you company and enjoying these yummy eats 😉 I agree, no one-size-fits all and there is always a ‘fad’ word or way of eating, and it doesn’t mean it works for all either. I tend to eat similarly to you, especially when prepping for one 🙂
My favorite meal is eggs + sweet potato + ground turkey + avocado and hot sauce. So, go good. Really, any breakfast food is a winner.
I want that waffle and egg! I was really hoping this was a local bakery.
I always love my breakfasts but when Nathan is gone and I’m making dinner for myself, I usually go for something super easy and fast, like spirazlied zucchini. And there also usually ends up being an egg on top 😉
My favorite meal to make for myself is lunch– I love a good sandwich, salad or avocado toast. I’d love to try this bread!
I’m still learning about Paleo and trying to figure out what is best for my house. These recipes do look and sound delicious.
Craving scallops now.
BIG TIME.
My wallet is craving farm raised tilapia. LOL.
I love how you use the term PALEO-ish. You should copyrright it and write a book and an accompanying cookbook and go on Dr Oz and make tons of money and then retire early and open a winery in NZ.
But it’s true — that’s one of the reasons why I love Kessler’s personal Paleo code. Approach.
oh my gosh i love you! can we make that happen, please?! be my muse!
i love making shrimp or scallop stir fries with quinoa 🙂
Yum! Always wanted to try Julian Bakery wraps! Favorite meal to make is breakfast of any kind, but paleo pancakes are the best 🙂
I love making meals centered around eggs for myself. Eggs are delicious and nutritious, and they are easy to make for one!
Good luck to the Kiwi!
The coconut wraps… do you heat them up before? We have them but can’t get them to stay together well. 🙁
My favorite solo meal… sounds so lazy but I love a big smoothie with pieces of plantain bread broken up in it. If I didn’t have a hubby, I would be fine eating salads and shakes all day long!
i keep them at room temp. Sometimes we steam or heat up for a bit, but they never fall apart. I wonder why yours do? hmmm… on another note, i’m going to miss you at blend!!!
I eat paleo-ish, too. I do eat some grains and some dairy, but it’s all how I feel. I focus on real food, and that’s most important! My favorite meal is grilled chicken, butternut squash and a green veggie sautéed in coconut oil.
I love making myself a big colorful salad with salmon
I love making pancakes or eggs for myself!
I love that you don’t follow a rigid diet of any sort, and take in the carbs when needed (this is an approach my friend Becky would love!). Great recipes.
My new favorite is chicken, sweet potato, and BBQ sauce.
Breakfast is by far my favorite, which is why I often eat it more than once a day! 😉
amen!!!
Definitely oatmeal in the mornings 😉
Everything I make is just for me since hubby & I eat differently! 🙂
I have not been a fan of Julian Paleo but willing to try again since have not had the ones you are giving away. The waffles sound great!. I loved their regular breads before they stopped making them!
i love their waffles and the texture, but they are higher in calories. Just so you know. The cinnamon raisin bread is only 50 calories and you’d love it!! great texture!
my favorite meal to make is dinner! it’s a great way to wind down after work and get creative in the kitchen. usually, i use what i’ve prepped for the week, such as baked sweet potatoes and whip up something to go with it, like a yummy curry sauce or some baked fish! always with some kimchi on the side 🙂
I also am paleoish. My body definitely feels best eating this way.
I have never tried Kimchi but would really like to. I need to take care of that stat! The Cinnamon Raisin Bread sounds great. My favorite meal to make myself is grilled chicken, grilled vegetables, and sweet potato- simple and so satisfying 🙂
I love that you aren’t focused on a “diet” but rather whole, healthy foods. No labels. As for favorite thing to make for myself, that’s a tough one. If I’m home alone, I just toss random things together based on a protein and tons of veggies. Probably not exactly answering your question huh 😉
I have these saved to my amazon wish list and want to try them so bad!
When my husband’s gone, I cook like if he’s home and then enjoy the leftovers. If I’m feeling lazy, I’ll just throw together a giant salad or eggs & veggies.
As a single gal, I’m ALWAYS cooking for myself. Lately I’ve been loving egg or egg sandwiches and stuff!
My favorite meal for one is a salad with anything/everything I can find on top of it
I love all these ideas! Especially the grilled scallops one because I had them for the second time last week and fell in love with them and have been looking for some ways to cook them!
And my favorite thing to make for myself is probably pancakes – for breakfast, lunch, or dinner! 😛
I love making new things. Nothing specifically, but I like experimenting with new recipes and techniques that I’ve never used before.
i have been wanting to try those wraps 😀
I love making breakfast for dinner!
I love making cauliflower crust pizzas and homemade fries are a current favorite as well 🙂
I’m so intrigued with that coconut waffle–I think I may need to try that one at home! I prefer to drop the labels all together when it comes to food. Too restricting for me. Because I don’t eat a ton of meat, so many people look at me like I’m nuts when I do eat meat–“Wait, I thought you were a vegetarian!?” Gaaah. No I just eat what my body tell me to eat! Sometimes it’s meat, sometimes it’s a whole plate o’ vegetables. Well that turned into a rant. Have a nice day. 🙂
best comment ever!! and AMEN!
I love a bit ‘ole salad with tuna and banana peppers! Yum! That scallop salad looks amazing!!
anything that involves eggs, oatmeal, or avocado 🙂 🙂
I love to make chorizo and put it over a sweet potato. Easy peasy, and so delicious!
I LOVE those wraps! Finally found then at Whole Paycheck. Now I just need to try to bread.
Favorite meal to make myself: dessert. My nightly dessert bowl makes me happy.
STIR FRY!! love stir fry on days I’m alone!
Whoa! That kimchi chicken wrap looks absolutely incredible. So much flavor!
My favorite meal to make for myself is brown rice or farro with grilled chicken, avocado, and roasted brussels sprouts on top!
So many delicious ideas! I think paleo-ish is a great way to eat. By myself, I’m usually making eggs or large salads with smashed avocado and salmon.
haha I love paleo(ish) living. I eat real food, but that’s not always paleo. And I’m ok with that!
I love Julian’s! Their wraps are out of this world! I always sm only cooking for myself so…every meal is my favorite 😛
My favorite meal (that’s not sweet potatoes with nut butter) is spaghetti squash mixed with grilled artichoke hearts (and maybe mushrooms) topped with two poached eggs. Yum!
Wow these products look absolutely fantastic! They need to start up in the UK 🙂
or maybe you move here? hehe
I love making a huge bowl of frozen veggies topped with a scrambled egg and a Dr. praeger’s kale burger!
Easy clean up too!
These are cool ideas. I’ve never tried paleo bread and have only made a few baked goods mainly out of my own views about paleo…but to spike some variety in our meals once in a while it might not be a bad thing! Especially for my husband. He would love the wraps I’m sure. Oh and the scallops are such a good idea!
I love baking chicken and a sweet potato for myself. Simple, but so delicious!
I often enjoy just cooking for myself…I make an effort not to make a “lazy” meal and often do things like roasted and stuffed sweet potatoes, peanuty noodles or huge salads with lots of grilled veggies and a fried eggs.
same here! it’s how i unwind. I love taking my time!
I’ve been wanting to try Julians Bakery for quite sometime. I’ve heard nothing but wonderful reviews.
When I’m by myself I usually have eggs or a sandwich. I like to keep it simple & not give myself many dishes LOL
I love loaded sweet potatoes and clean out the fridge so nothing goes to waste big green salads topped with a black bean or veggie burger. I think I’m getting hungry!
