Two things I dreamt of last night. One, I was running the Boston Marathon today and had not even trained, one bit, nada. Phew, glad that one wasn’t real! But the second dream that followed was definitely more realistic. I I dreamt that this Paleo blueberry coconut soufflé bake was fresh out of the oven and waiting for me the moment I awoke. Accompanied with a pot of coffee of course. I’d like to think this sweet soufflé craving came from all that running I was doing in my first dream.
Maybe it was supposed to be my post marathon celebration meal, don’t you think?
Well, I might not be running the Boston Marathon this morning, but I will cheer on those who are and celebrate with making a super dreamy Paleo blueberry coconut soufflé. Besides, my appetite is all worked up now.
Speaking of dreams, and speaking of celebration, today is big day for us Crazy Cotters. You see, our dreams have changed drastically over the past year. Most of you know my has husband is now retired from the pro athlete life and has been searching for a new path (for us both). It’s definitely been a hard transition, but one that we needed to go through. Luckily we survived with small victories and a new dream is upon us! Yes, a whole new career that’s a total 180 life direction of the past 8 years.
Today marks the first day of my husband’s new job/career. I could not be more ecstatic for him and proud to be his wife. Which leads me to the celebration part.
Today we celebrate! So much! So many fulfilled dreams! So much goodness! And so much Paleo blueberry coconut soufflé to share.
I picked this dessert/brunch bake because one of my husband’s favorite desserts is custard. And boy does this blueberry coconut soufflé have a rich and creamy custard like center, not to mention a light crust topping. Best of both worlds ya’ll!
And I’m not gonna lie, ever since my cooking school days back in college, a soufflé (of some sort) has been a recipe I’ve always wanted to revisit. That and I just love French desserts. Heck I just love France in general. But I digress…
Celebrate we will with something so dreamy, so heavenly, and so easy to make.
Oh and of course I made it healthier by using healthy fats (COCONUT) and natural sweeteners (BLUEBERRIES) plus a wee bit of coconut sugar! That way you can enjoy more. Or if you want a single serve, try these Paleo Strawberry Pudding soufflés from Perry’s Plate!

Description
Paleo Blueberry Coconut Soufflé Bake! {Low Carb, Healthy, Easy}
Ingredients
- 4 room temp eggs separate (4 egg yolks, and 4 egg whites)
- 1 whole egg (room temp)
- ¾ cup coconut milk (drinking milk)
- 3 tbsp clarified butter or vegan/dairy free butter
- 3 tbsp coconut flour (thin or sifted)
- ¼ tsp (a pinch) of salt
- 1 tsp vanilla extract
- ¼ cup fine coconut sugar
- 1 ¼ cup blueberries
- ⅓ cup shredded unsweetened coconut
- Optional Toppings – Swerve sugar free powdered sugar or honey
Instructions
- First, whisk your butter and milk in a small pot on medium low. Once blended together slowly add in your coconut flour. Stir until batter is form. Don’t over mix. Remove from heat and let cool.
- In a small bowl, combine your egg and egg yolks together, add your vanilla, salt, and fold in your milk/flour/butter mixture. Stir until smooth and set aside.
- Next, combine your egg whites in a mixing bowl. Beat on medium speed until foamy peaks start to form. Keep beating and slowly add in your sugar. Beat again.Set aside.
- Now go back to your egg yolk/flour mix bowl. Gently fold in ½ cup of your berries, then half your egg white mixture. Repeat again. Fold in another ½ cup berries, then rest of your egg white mixture and your coconut shavings.
- Mix gently and not to overmix.
- Pour batter into 9×9 greased baking dish or into 4 -5 dessert ramekins
- Bake at 375 F Bake in middle rack until puffed and browned crust on top but still soft looking in center. This usually takes 18-24 minutes depending on oven. Ramekins could take anywhere between 12-16 minutes. Try not to open the oven while cooking. If you are using ramekins,
- Remove and serve immediately. Add extra berries, coconut, cream, or honey on top of each if desired. The soufflé will deflate a tad due to it being grain free, but it’s still delicious as is!
Notes
This soufflé bake can be made earlier to save time. Just assemble up to 30 minutes before baking. Keep it covered with an upside large bowl. Make sure the batter doesn’t touch the bowl. Keep it out at room temperature until ready to bake.
If you are at altitude, your souffle make take less time to bake.
