Gluten free Yeast Free Rolls

Well, I think I am on a baking roll here. We finally have cooler weather, some might even say “fall-ish.” That means the smell of fresh-baked cookies, bread, and rolls are a necessity, right?

First up, cheesy Gluten Free/Yeast Free rolls. I love these. No I did not make them from scratch. I bought them in the freezer section. They are Brazilian Tapioca Cheesy Rolls and my oh my are they good. Sarena has a homemade version that I am sure is even better.

Speaking of Sarena. This woman inspires me in the kitchen. Love her! And I love her Gluten Free Biscuit Recipe. I made my own quick fix ROLL version (without yeast) with a few fresh herbs.

Description

Gluten Free Rolls/Biscuits are Heavenly. I made a quick fix version that hit the spot!


Ingredients

Scale
  • 1 cup Gluten Free Flour Mix – I used 1/3 cup each- Millet flour, potato flour, and tapioca flour
  • 2 tsp baking powder
  • 1/2 tsp xanthan gum
  • 1/2 tsp sea salt
  • 1 egg
  • 2 Tbsp cooking Vinegar
  • 1 Tbsp Herb Mix
  • 1 tsp garlic powder
  • 2– 4 tbsp melted oil or butter as needed

Instructions

  1. This is where I did the quick fix. Throw everything in a bowl.
  2. Mix well. Roll in to 4 balls. Place on baking sheet and bake for 16-20 minutes at 400F.
  3. This made 4 large biscuits.
  4. Best served with butter!

So now we have an abundance of GF rolls in the house. All I am missing is a sweet kind. Hmmm, maybe I should make some GF scones to even it out, eh?

On a whole other note, good luck to all those racing this weekend. I know Jess is on Sunday! We also have friends/athletes in town for the Austin 70.3 Ironman. The hubs was suppose to race this, but of course he is still healing, so we are going to cheer on our friends. Why? Because everyone needs a cheerleader. That I am sure of!

Who’s your cheerleader? If you don’t have one, I’ll designate myself. Winking smile

    Hi–these sound yummy but I want to be sure before trying them that they are rolls and not biscuits. It looks like the older comments call them “biscuits” and the newer ones “rolls”–but they are two very different things! And the photo attached to the recipe looks much more like biscuits than rolls. Could you clarify? Thanks.

      Hey there Ricki! This recipe is almost 10 years old. EEK! I need to update it. It’s a yeast free roll recipe. So you could make them into biscuits. LOL! It was inspired by my friend’s gluten free biscuit recipe. Honestly, it needs a retest and an update! Thank you for bringing this to my attention.

    Hi, Lindsey! I made these rolls today using coconut flour, sweet rice flour, and chickpea flour. You recipe doesn’t say how much oil/fat to add, but I added 1/2 tbsp of ghee to it (cuz I didn’t think it wa 1/2 cup….haha). Mine turned out quite hard, but I think it is delicious!! Thank you for the recipe!!

      i think it’s the brown rice flour, makes them a little hard. I’d try half tapioca next time. But glad they worked!!!

    The first roll reminds me of those cheesy/garlic-y rolls from Red Lobster. Growing up in New Mexico (ahem, desert), I had no idea that RL wasn’t qualified as “real” seafood by the most standards, haha. Now I’d just go there for the cheesy goodness.

      i used mediterranean herbs. It was the perfect blend! but I think basil or rosemary alone would be nice.

    Those cheesy biscuits sound delicious!! I haven’t had a biscuit in ages. Now I’m craving one! I definitely agree that you need to make some scones as well… that’s my sweet tooth speaking!

    I hope the hubs heals up fast! At the same time, it’s kind of fun to watch from the sidelines when you can’t be part of the action.

    Don’t you worry…I’ll never be done with your cheesiness!! And I don’t think I’ll ever be done with those GF biscuits either…yum! It’s been a long time since I’ve made homemade bread, mainly because when I first went gluten free and tried to bake, I had so many flops! Haha. Oh, the life of a GF baker. (or maybe just me!) 😉

    I hope The Hubs is healing well…When will he be able to race again?

    Oh, and you should definitely dress up as Jane Fonda! We’ll be twins!

    omgnesssss pao de queijo!!! that stuff is soooo delicious, and I would love to eat it everyday~haha. I totally understand about finally having cooler weather and all, b/c we get it here in cali ONLY sporadically.     It’s funny how you call them “biscuits” (we call what you call “cookies,” “biscuits,” if that makes sense) I think it’s my british-influenced NZ upbringing! Confusing, yet fascinating. Doesn’t matter anyway, as they look delish! I haven’t used tapioca flour before, I am intrigued – and anything that functions as a vehicle for MARMITE (or vegemite) works for me 🙂 What kind of pom poms do you favour in your cheering endeavours? xx

      James (the hubs) calls his biscuits too. So you can imagine his face when I told him they were cheesy/herb biscuits. haha. The important thing is they are hold vegemite well! You are right!

      As for pom poms, i like the big poofy ones.
