They say some people age like a fine wine, meaning they just get better with age. I like to think that is true for me. Grant it, I have yet to pop out any kids, but still, my brain thinks better and therefore I am much more thankful for my body’s abilities and overall well being. If I were a fine wine today, I just might be a New Zealand Pinot Noir. It’s surprisingly bold yet mellow.
But what if we talked food and aging. What could we relate it to? Well, yesterday I turned 30, and as I whipped together a batch of grain free pancakes, I thought to myself… “I’ve kinda aged like these pancakes.” I flipped, I flopped (will probably flop again every now and then), but I’ve finally learned to keep the ingredients simple, practice patience, always share, and savor every bite. I like that kind of aging. It’s worth the mess and the clean up.
Today I am savoring life, health, friends, and family. Simple ingredients. Quality ingredients. The perfect PANCAKE of LIFE.

Do you have a perfect pancake recipe? If so, come share it with me in the Udis GF community Forum!
What food and wine do you compare your life too? Come on, you know you have one!
Cheers,

p.s. Check out who won the Chobani here. And Congrats to Maren for winning the Larabars and Attune giveaway!
Hey,
These look amazing!! I can’t wait to try them. I have been looking for a gluten free pancake recipe that actually tastes like pancakes for a very long time. Pancakes have always been my daughters favourite, but after she developed a severe gluten allergy, and eats very healthy due to other stomach problems, has been unable to enjoy Christmas breakfast. My only concern, knowing my daughter, she will want to know the nutrition facts before she eats them (too much sugar and fat don’t play nice in the sandbox with her stomach), so I was hoping that maybe you would have the nutrition information?
Thanks
let me know whatcha think!
Happy (belated) birthday friend! You are one of the most warm, kind, and Godly women I know. I pray your 30’s are your best and most blessed years yet! xoxo
Happy Belated!!!! I love how you can be so reflective on your life. Mine is like…well, gee, I don’t know. I need to think about this for a bit longer. 🙂
i’d say your like chobani.. real, genuine, flavorful, and just full of GOODNESS!
family and the beach – the best! add some wine — that is even better 😉
yes pancakes!! we love them 🙂 we love any kind of pancakes.
you two make the best pancakes.. i learn from YOU!
Well, I can’t really drink too much wine (allergies…) but if I had to compare myself to a wine, I guess I would be like a moscato d’asti – sweet and refreshing. At least I hope that is how people see me 🙂
love the moscato! refreshing and light! <3
Ha I love your pancake analogy! Makes perfect sense! Hope you had a great bday! It took me awhile to perfect my pancake recipe too but it’s been working for me for awhile now! I use oat flour though so depends what kind of oats you get to be gluten free or not.
GF oat flour is awesome! yes, good recipe Lauren!
that just made me want to go give my hubby a huge hug for some reason. 🙂 Marvelous post.
oh good! hugs are a good thing!
I love pancakes so very much. 🙂 The perfect day is pancake brunch & coffee after a really awesome morning workout. I have no idea what food or wine my life is most like..I’m going to think on that one for a bit!
Hope that your 30th birthday was as wonderful and amazing as you are. Lots of love!
Happy Happy Birthday my friend!! I love that you compare yourself to a fine NZ pinot and life to pancakes. Doesn’t get better than that! I’m not the pancake maker in the house. My husband has taken over that duty I think because I usually make a bit mess!
haha, i think you are wise for getting the husband to cook them. Men have more patience. And then you can savor them more!
Those pancakes look superb. Usually I like soft, fluffy pancakes but lately I’ve been craving some thin, crunchier ones. mmm!
kinda like crepes!!
I feel like this post just reached out and hugged me:) Wiser already, like a fine wine.
LOVE pancakes, but unfortunately I have a Trisha Yearwood recipe that is the complete opposite. It’s about balance, right? 😉
i am hugging YOU! ((hugs))
Very interesting comparison, but at the same time, embracing all things with age. That pancake recipe sounds great, and perfect with the use of coconut flour!
happy happy birthday my beautiful friend!! You age like a fine fine wine 🙂
thank you. now.. what wine would you be.. today?
Happy birthday, you wise and wonderful 30 year YOUNG lady! Someday, I’ll be smart like you and make wonderful pancakes on a Sunday morning.
You are fabulous and I love reading your lob!!
My husband makes really yummy yet simple pancakes. On the weekends, he spoils me and does all the cooking.
save me a plate next weekend, k?
Will do!!
Oh and that should be blog, not lob, haha
Happy birthday again, Lindsay! You’ll truly get better as you get older! 🙂
Hm, I think I’m definitely a white wine. Something light that makes your mind creative without making you tired (hopefully), so rather a white wine without much body. Sometimes I can be sparkling and inspiring, but other times I just give you comfort.
With food … probably a home-cooked comfort meal, because I’m a homebody and I like my home to be comfortable. 🙂
home cooked meals are the best and made with LOVE!! <3
I simply love your ingredients to how you live your life.
I love taking bites out of life and savouring each and every mouthful. It’s the little things that matter most. I love to enjoy all the bite size goodness life has to offer. There’s probably a reason why I make more protein bites than pancakes…and why I love your healthy bites so much 😉
That being said, I’ll flip to Mama’s pancakes any day hehe
Hope your birthday was fabulous xo
i need to try mama’s!
Love that so much. Happy belated birthday beautiful friend<3
You deserve the best celebration ever!
Great post! I’d have to say wine would be a Zinfandel, a little fruity, can be spicy, bold, but yet soft and sweet at the same time. Food… hmmm… that’s a tough one! I’ll have to think on it.
I love the concept of aging like a fine wine – just getting better & better, more complex and mature. It looks like you had a wonderful weekend of celebrations!
I friggin’ love your like analogy!!!! 😉
Hmmmmmmmmm what food represents my life… I think squash in general because there are MANY different types to GIGI (ah ha ha yeahhhhh multipe personalities, okay no – this really is alluding to the fact that I was once a competitive horse back rider, then I moved to competitive snowboarding, and track, and gymnastics, etc – and I am proud of all of them) and they’re all delicious!
Those pancakes sound perfect, and I love the analogy of life. 🙂 Hope you had an extra special birthday, my friend!
Hope your birthday was awesome!!
I love the wine analogy! I feel the same way – that I’ve gotten better with age – mostly because I’ve learned how to be happy with myself. What kind of wine would that be? Something that ages well for sure!!
Happy birthday!!! If I were a food, I think I’d be pistachio nuts. You have to work at it to enjoy me. 🙂
LOL! so nutty too
I think I’d be a Malbec…dark yet mysteriously sweet…fruity yet spicy…calming and refreshing…
I think 😉
I’m glad you enjoyed your birthday! I did Pancake Sunday in my kitchen too because it just felt right.
Cheers to 30 being amazing!
Happy birthday! Love the analogy and yes I do have the perfect pancake! Vegan and it’s my sunday breakfast every week!
That is the most perfect analogy ever! Happy Birthday darling, and thanks for the recipe!
xoxo
What a fun post! And what better to relate your life to than something as awesome as WINE!?! I’d compare mine to a wine & cheese fest with some dessert tossed in…lots of different aspects, all positive 🙂
Beautiful post from a beautiful person, inside and out. You have a gift for writing and sharing such meaningful topics in a relatable way. Thank you and happy 30th birthday!
I just love you friend. Wish i had a perfect recipe. Mine are always an experiment and a mess. Ha. Happy Birthday yesterday! Welcome to the thirties.
How did I not see it was your birthday?! So sorry – happy birthday sweet girl! I turn 30 in a couple months and I never really worried about it, but it’s definitely something that seems just SO BIG looming on the horizon! Exciting nonetheless 😉
Happy Belated Birthday! Welcome to the 30s! Hope you had a fabulous day!
YES! I just bought some coconut flour so I’m totally making those pancakes! Thanks!
I love your comparisons!!! You know I’d compare myself to a wine… I’m just not sure which! Maybe an Amarone? Deep and bold, a little strong, but the berry undercurrent balances it and makes it work. Oh, and it’s expensive. LOL!
Happy Belated Birthday, Lindsay! You always have the best way of looking at life.
I like so many different wines . . . so maybe I’m a fan of enjoying the variety and spice of life! 🙂
Well, if I was old enough to drink wine, I would definitely have one to compare myself too 😉 Love the comparison to pancakes! Somedays I feel very sporadic and kind of like a watermelon – you never know what to expect on the inside just like you can’t always predict what I’m about to do next!
Also, love that quote about not forgetting the things we have!
Well said, friend. And happy (belated) birthday! You are such a kind-hearted, open, genuine, talented, funny and giving woman – a wonderful sherpa wife, hard worker, fit and creative individual. May you be blessed with a fresh perspective in life and JOY abounding in this next year!
mmmm i stil have yet to try pancakes made with coconut and banana! since i love you are your recipes so much, i might just have to make these the first!
i agree i get better with age, too. i really have never compared my life to a food to be honest! you’re so deep and thoughtful. it’s amazing
You are adorable! Happy 30th birthday cotter crunch!!
Happy belated Birthday! I’m turning 30 in a few weeks!
Yet again, happy happy birthday beautiful lady! I hope you had an absolutely wonderful weekend 😀 And wine + pancakes, you know I’m all over both of those!!!
Love this!
I guess I’d be a nice Malbec- partly because it’s one of my favorites…and the other…Malbec grapes are much different than the grapes for Cab or Merlot. They have thicker skin and need more sunlight and heat–I myself, am stubborn and need to be pressured sometimes so I guess I relate to that. And cheese…yes cheese is my favorite thing so we are just going to say I am a nice Malbec with cheese, preferably goat cheese or brie.
i have to admit i haven’t made pancakes…maybe ever. my mom made them a lot when i was a kid, but then I went through this whole phase of ohh they are so unhealthy and just haven’t gotten back to them….huh strange.
i think i need to make you vegan pancake bites.
Love your last quote AND this: Today I am savoring life, health, friends, and family. Simple ingredients. Quality ingredients. The perfect PANCAKE of LIFE.
So happy you had a wonderful bday! You are getting it right! 🙂
Love that pancake recipe too!!! YUM!!!
Beautiful pics Lindsay! I am not a wine person. Food & life – COOKIES!!! Fun & sweet & always a different one to chose if the first one is not quite to your liking! 🙂
Pinot Noir all the way 😉 I hope you had a fantastic day my friend. And I love that quote!
Happy birthday, Lindsay! You have such a wonderful perspective on everything in life.
I turn 30 this year, too, and would have to agree I get better with age. Well, maybe not my under eye bags, but you catch my drift!
Love your wisdom.
My life is a cookie with a big dash of salt. Because the salt brings out the sweet stuff. Hehe. Happy Monday!
Hmmm…sushi (livening things up with uniqueness) and craft beer (no reason, just awesomeness) and I WILL start using a bowl like THAT!
Happy belated birthday, lady <3 I honestly can't really think of any food or wine that I'd compare my life to, but I've definitely noticed that I get better with age. I look back on some of my younger years and can't help but wonder… what the heck was I thinking?! 😯
You truly have the aging gracefully thing down and are wise beyond your years. Happy birthday!
salty beef jerky? 🙂
Aw, I love this 🙂 And pinor noir makes sense… because that’s my favorite 😉 haha I think I’d be a Riesling, haha sweet, fruity… sometimes too fruity 😉
I have to say right now life is a bit like Apothic!. Blended of sweet, but bold, and fulfilling. Can’t ask for more! 🙂
Pancakes are such an easy yet completely satisfying breakfast! I definitely need to make them more.
Happy Monday! <3
good choice!
So glad you had an amazing time for your birthday. Loved all of the pictures on IG. 🙂 Have a great week friend!
thank you friend. it sure was! xxoo
HAppppppy belated birthday!! I hope it was as wonderful as YOU!
I really love that quote in your post. I’m writing that down to use as my new mantra. I also know a few other people who need to keep that saying in mind….it’s so true!
Happy belated birthday, friend! Such a lovely post and perspective on another year. 🙂
This really has nothing to do with this post but your blog has quickly became my favorite 🙂 such great posts. I’d probably have to compare life to but butter since we are all a little “nutty” 😉 yet still good people!
You always write the most beautiful posts. I truly do look forward to your post on a daily basis.
