My birthday always seems to sneaks up on me. I blame it on summer. So much going on and then bam, it’s end of July. Well, this year I really can’t forget my birthday. It’s the big 30! As I sit here realizing it’s less than 2 weeks away, I can’t help but think “should have I done a 30 by 30 list?” Should I have made big plans, set a goal, run a race, etc.? I take a sip of wine (it’s 6pm on Sunday night, so it’s allowed), smile, and think… Nah, it’s all good. I like where I’ve been, what I’ve done, who I’ve met, what dreams I have chased (and still are chasing), and what’s come from it all. GROWTH! Spiritual, Mental, Physical, and Emotional growth. And sometimes, we just need to enjoy where we are. Nothing to prove but age. A growing age. Okay and maybe a bathroom selfie post hair cut and highlight.
Honestly, I love getting older. You laugh at yourself more. Rest more (or in my case, act like a grandma). You enjoy slowness and simplicity. You just like being. As I age I find myself planning less and embracing more. Which brings me to this week. I had not planned to travel or take a vacation this month, but then I realized I wanted to, scored a few Southwest Airline passes, and off I go. Beach time, girl time (me and my mama), R&R time.
Things just fell together last minute and well, I just can’t pass that up, ya know? Do I have guests posts lined up? Nope. But I don’t think you’ll mind. Absence makes the heart grow fonder, yes?
But before I go, I’ll leave you with this. A recipe I adapted from this WONDERFUL WOMAN linking up to yet ANOTHER WONDERFUL WOMAN’s Meatless Monday Post.

Sarena’s GF Biscuits are Heavenly. I made a quick fix version that hit the spot!
Ingredients
- 1 cup Gluten Free Flour Mix
- I used ⅓ cup each- Millet, almond or coconut flour, and tapioca
- 2 teaspoon baking powder
- ½ teaspoon xanthan gum
- ½ teaspoon sea salt
- 1 egg
- 2 tablespoon cooking Vinegar
- 1 tablespoon Herb mix (Rosemary, thyme, Basil)
- chopped garlic (½ clove)
- ½ Oil or butter
Instructions
- I did the quick fix version. Throw everything in a bowl. Mix well. Roll in to 4 balls. Place on baking sheet and bake for 16-20 minutes at 400F. This made 4 large biscuits. Not as fluffy as Sarena’s but very moist (hate that word) and airy. Best serve with extra garlic and butter or vegan butter with garlic. My husband loves to add vegemite. Such a kiwi! [/print_this]

Made these tonight, but they didn’t look or act like yours. I’m wondering which flour you used, almond or coconut, as they are very different. Also is the vinegar really 2 Tbsp? Seems like a lot. Also mine turned out oily using almond flour (coconut is more absorbent). They tasted great! Was more like a batter though, so I put in 6 muffins cups.
First, let me get the exclamations of joy about those biscuits, and how I want to bake some quick bread RIGHT NOW. [Maybe I’ll wait until this afternoon…]
Secondly, let me say that I had a little bit of a breakdown about turning 29 in less than two weeks and knowing I was going to be alone, in my new apartment, in my new life, on my new journey, and even though I know it is the right one…I am still nervous and scared and wondering where time has gone. I need to remember that this is all part of a grander plan. [And I think I just quoted Rascal Flatts by accident.]
I love everything about this post. EVERYTHING. And I couldn’t agree more with all of it. I’ve never been one to put pressure on myself to do things by a certain age. Life is so much more enjoyable if you just LIVE it.

I am pretty sure that I use garlic in nearly everything. For some reason I seem to think that it should be added to all dishes ;). My favorite, though, is the good old-fashioned garlic toast!

My sister’s big 3-0 is NEXT MONDAY! I just texted her about that ACTUALLY because I remember on my 25th birthday last year she made fun of me saying, “ha ha, 5 more years until your 30” and I was like, “uhhhhhhhh Daniele, really? You’re gunna be 30 in a YEAR! LMFAO!!!” – TAKE THAT SISTER! ah ha ha ha!
I have heard that the 30s are the best years though, so you have TONS to look forward to!

Truth, my 30s have been far better than my 20s in so many ways. I think you definitely learn to adjust and accept yourself more, or at least I did. No, life is not always fun or perfect, but I definitely laugh more and relax more (not sweat the small stuff more)! Enjoy your R&R with your mamma! That is so special! The biscuits look perfect! YUM! Max and I were just talking about these the other day. I think it’s time to make some! Love the additions you made!

I definitely find the older I get (and I’m only 23), the more I enjoy silence and just… being. I love just sitting outside with no music or anything. I love just listening and watching the world around me. It happens more and more the older I get and I definitely embrace it. <3 My favorite use for garlic is in ANYTHING Italian. I could eat garlic raw if I wanted to because it's just in my blood 😛
