And Udis Gluten Free BOWLS Recipes week continues… dun dun nah nah… Gluten free homemade pizza bowls! Yes friends, that would be a bowl of gourmet pizza toppings and a gluten free pizza crust with tomato and garlic for the “scooper.” In other words,  your new favorite healthy-ish comfort food savory bowl !

Here’s the truth though. You see, I’m a little picky when it comes to pizza. And I mean picky as in, I pick around, add too, or arrange my toppings. Usually when we buy a gluten free pizza or order one, the topping are either skimpy or just not evenly spread about. Yes, I am picky and OCD.. Haha. But it’s all about the balance of flavors. The only way you can really do that is making it homemade pizza. Right? A little extra goat cheese here or there never hurt. Or maybe you like caramelized onions and extra garlic (with a side of breath mints).

Yes, EVERYONE has their own way. Which is why I thought we ALL need these homemade pizza bowls in our life. You can literally PICK how much of a topping you want of each, where to place it on your pizza crust, and then repeat. Scoop and serve!

In this specific homemade pizza bowl we have 4 gourmet toppings. 2 I love a lot. 2 the Kiwi loves a lot. We both Like it all. If that makes sense?

You got your goat cheese fans (ME ME ME), and your caramelized onion fans (Kiwi cotter favorite for sure), especially when those onions start to cook and brown.. oh my!

Then we have crumbled chicken sausage and spinach, which we both like equally. But combine that with your goat cheese and caramelized onion and you have what I like to call a FLAVOR BOMB! Or just plain melt in your mouth good!

See where I’m going with this?

The whole point of making homemade pizza bowls is to customize and share! You make all your favorite gourmet toppings. Arrange them in one big bowl or several small bows. Toast your pizza crust, then SCOOP up HOWEVER much topping you want to each.

You can go heavy on the cheese with one scoop, spinach on the next, or heavy on the caramelized onions with every slice and scoop.

Each bite or pizza slice it totally customized! Think of it as tapas meets gluten free pizza meets flatbread of some sort.

No more skimpy toppings ya’ll! And no more trying to arrange the pizza crust so that everyone has like one slice they like. Nope, you can make it BOWL style and save yourself some energy.

Another reason I am really diggin (or scoopin, haha) these pizza bowls is that they require little work.

Picture this… because it really did happen to us. You walk in from a VERY long day, and waiting hours at an appointment, only to realize it’s 8pm. WHAT?!?! How so? MUST MAKE DINNER ASAP!

Chop chop, sauté sauté , then TOAST (yes I said toast, like in toaster oven), your naked sliced pizza crusts. 10 minutes later you have pizza bowls. And for me, a glass of wine to go with it. That’s how simple it is! Udis Gluten Free pizza crust are super quick to cut, slice, and toast/bake. I adore the thin crust and flavor. It tastes almost like a sourdough and crispy french bread crust combined. Best of both worlds if you ask me.

Okay, enough scoop talk. Let me share this BOWL of goodness! And I gave you a quick version recipe for caramelizing onions! It’s my go to recipe for caramelizing onions and other veggies! SOOO GOOD!

Gluten Free Homemade Pizza Bowls {Easy, Healthy}


Ingredients

Units Scale
  • For the Caramelized Onions:
  • 1 red or white onion (sliced)
  • 1 tbsp oil or butter
  • ¼ tsp sea salt/pepper each
  • 1–2 teaspoon balsamic vinegar
  • For the Pizza and Bowl:
  • 1 Gluten free Pizza Crusty 8 in (udis gluten free)
  • 4 oz cooked ground organic chicken sausage (make sure it’s gluten free)
  • 4 oz goat cheese (crumbled or block to melt)
  • 4 cups spinach or greens (2 cups once cooked)
  • 1 garlic clove, minced
  • chopped basil
  • 1 small Roma Tomato Sliced
  • Olive oil to drizzle
  • additional sea salt/pepper

Instructions

For the Caramelized Onions

  1. Clean and peel onions. Slice then place in a dry skillet on medium high for 5 minutes until they start to brown. Add in one 1tbsp butter or oil and cook for an addition 10 minutes, stirring. THen add in your salt/pepper/vinegar and cook for an 3-4 minutes until everything is caramelized. Remove from heat.
  2. For the Bowls and Pizza Crust
  3. Preheat oven or Use toaster oven at 400F. Slice your pizza crust and place in oven to toast for 5 minutes. Remove and set aside.
  4. Next grind up or finely chop your pre cooked chicken sausage. Place in skillet to warm or in microwave.
  5. Place your greens in a skillet or microwave bowl with 1 tablespoon water. Cook for 1 or 2 minutes on medium heat until wilted. Remove and place in bowl.
  6. Next warm up your goat cheese. You can use microwave or a pot. Just turn on medium low heat until all the cheese melts. Set aside.
  7. Slice your tomatoes and mince your garlic. Feel Free to use garlic already minced from store.
  8. Place tomatoes on top of pizza slices, then add a pinch of garlic to each drizzle olive oil on top of each. Just about ¼ teaspoon to ½ teaspoon or so. More if desired.
  9. Now arrange your bowl
  10. Add about ¼c to ⅓ c of your spinach, cheese, sausage, and onion to 3 small bowls OR you can place everything in one BIG bowl. Your choice. Garnish with fresh basil and pepper/salt.
  11. Scoop with the tomato garlic pizza crust slices and enjoy!

Notes

Feel free to use ANY topping for your bowl. You really just need to cook them before hand and arrange. It’s so easy and delicious. Share as a appetizer or make a fun meal!

        For recipes like this, I usually just make my own nut cheese or even cheat and just use olives and some other flavorful ingredients! I’ve only tried a taster of Kite Hill cheese, it was pretty good! For shredded, the Follow Your Heart blocks (not vegan gourmet) are surprisingly good. I’ve never actually liked cheese though so it isn’t something I crave!

    What an amazing idea! I do this with tacos and nachos all the time and use the taco shells or tortilla chips to scoop up the goodness in the bowl. Of course, it would work for pizza too!! Genius! Can’t wait to try!

    Vegas would literally eat pizza every day if I let her. I think a pizza bowl might satisfy her… and she SHOULD be eating gluten free. Le sigh. Totally going to try to sneak this by her this week… maybe with some lean ground beef (her fav) and artichokes (my fav)!

    I used to be CRAZY picky about pizza, and by that I mean that I wouldn’t eat it if it had anything other than tomato sauce and cheese on it 😆 Yup. And this is the same girl who thought the perfect spaghetti was buttered noodles buried under parmesan sauce. This looks amazing, btw!
