Have you ever wanted to try Salmon but been too afraid to cook or bake it? Well, I have the perfect baked Salmon recipe for you. It’s basically our favorite way to eat it, plus these salmon bowls are perfect for meal prep! Although, I need to confess. Yes, a big whopping confession. You see, the way most of you feel about trying new salmon recipes is the way I feel about meal prep.

Come on, you know that’s how you feel, right? Haha, but I love me some easy peasy BBQ baked salmon. It’s so simple to make. But when I started to meal prep recipes for my husband’s lunches, it totally didn’t not come naturally, or feel simple. In fact, I complained. Shame on me.
That beings said, I decided to change my ways and my focus. TOTALLY! Another NEW approach, because we’re on this new kick, right? Haha.. Hence these Honey BBQ Baked Salmon Bowls. The best part about these bowls are that they take little time to put together. All you need is a batch of quinoa, zoodles (any other julienne/spiralized vegetable or or “riced” vegetable), bbq sauce, avocado, honey, roasted seeds, delicious wild caught salmon fillets, and seasoning! They only take 20 to 30 to cook. It is that easy!
Before I dive in to how these bowls are made, let’s continue with the confession part. Cool?
You see, when my husband was racing triathlon, professionally, we both were lucky enough to work/train from home. I would teach fitness classes, coach nutrition, and then the rest of time I was feeding him. Haha, literally. He needed all the calories! So I never meal prepped. Instead, I FUEL prepped. My rice cooker was used for oats, quinoa, lentils, and more. I made bulk batches of bars, bites, and trail mix. And the crock pot was constantly filled with protein (chicken, shrimp, lamb, pork, etc.). BUT I NEVER HAD TO PUT IN A CONTAINER. Like a TO GO container. Nope, just threw it back in the fridge and when we wanted food, we just grabbed a fork and bowl.
You can see where I’m going with this right?

Bowls, Mason Jars, Glass bento boxes, and stainless steal bento boxes are where it’s at ya’ll! a A a tasty BBQ Baked Salmon that lasts for days and it good on EVERYTHING, really! Quinoa, the superfood “psuedo” grain that packs in extra plant based complete protein, not to mention lighter/fluffier in texture for storage (p.s it’s easy to make in rice cooker). And then a veggie that can hold it’s texture well. I picked zucchini because i feel like it pretty much goes with everything flavor wise, but also because you can create zoodles. Those seem to last longer in jars or bowls for meal prep.
