Happy national almond butter COOKIE DAY! Okay I totally made that up, but somebody please research that because I’m sure it exists. And I bet you that national flourless cookie day exists as well. If they don’t, I’m declaring both today. Mmm k? But in all seriousness, cookies are on the brain today. I’ll tell you my story.
I’m sure I’ve mentioned this before but back in the day (meaning 8 years ago), gluten free foods were pretty hard to find. I mean QUALITY gluten free foods. Yes, that is when my gluten free journey began and when I started making gluten free “fuel cookies” for my husband. You see, he used to drink coke and and eat high fructose filled energy bars while training. Yep, long runs and rides were full of HFS (high fructose corn syrup). And to be honest, I didn’t pay attention much because all I knew this is what he was accustomed to, sadly. It wasn’t until he REPEATEDLY came home from training complaining about a toothache and headache that I decided we really needed to figure out some clean”quick fuel” options. Sorry but cavities and a cranky triathlete just don’t mesh well. LOL!
Well, 8 years later and the types of food and fuel we use has changed again. Which is not a bad thing, but it’s definitely more individualized. I get tons of requests for more grain free, paleo, and vegan type cookies/fuel/snacks/bites. I also have a husband who has retired from those 5 plus hour training days and requests more light and low carb fuel. Because that’s what currently makes him feel his best. The good news is most of these request come from people who have learned (through trial and error) what REAL FOOD fuel works for them. The sad news is that we still put a label on diets. Darn. But either way, real food is good food. It just depends on how us as INDIVIDUALS utilize it. And I know most of us agree, we all have UNIQUE nutritional needs. Can I get an AMEN?! Haha!

- Banana chips help reduce the sugar and add in some lovely potassium.
- Almond butter provides you with healthy fats and vitamin E.
- And Egg or Chia Seed (depending on paleo/vegan) both add in protein and healthy fats. WAM BAM THANK YOU MAM!
