- Sweetener – I use a combination of coconut sugar and pure maple syrup to sweeten the bars, providing moisture and structure, while giving them a subtle maple taste. The steps for this recipe are pretty foolproof. All you need are two large bowls and a baking pan. Here’s a look at how everything comes together:
- Blend the oats. Pulse half of the oats in a food processor or blender until a coarse, mealy texture forms. Don’t process so long that you create oat flour! We want a bit of texture to help the bars hold together and turn out chewy, more like a granola bar than a soft, cakey consistency.
- Combine ingredients. Mix the dry ingredients in a large bowl, and whisk the wet ingredients in a second bowl until smooth. Pour the wet ingredients into the bowl of dry, and stir to combine. Fold in the chocolate chips, if using.
