Have I spooked you? Haha, I hope not! Well, unless it’s a good thing, because it’s SCARY how good these deviled egg eyeball appetizers and treats are. Okay, my puns are over, but stay with me till then end so I can share the recipe!
So, can I let you in on a secret? I love Halloween for the fun treats and parties, but the actual Holiday itself still scares me. Yep, I grew up with three older brothers who would taunt me with Freddy Krueger and Chucky the Killer doll sound effects. Needless to say, after the age of 10, I could not look at my dolls the same, nor could I keep the lights off in my room. 22 years later, I still have a closet light on. Come on, I know you’re the same. Haha!
Healthy Halloween Snack Ideas
Well, today’s spooky recipe roundup is not suppose to scare you, although it might make you JUMP (into the kitchen). 😉

How to Make Deviled Egg Eyeballs
This deviled egg recipe is actually an old family favorite recipe. Not the eyeball looking part, but the recipe itself. So don’t tell my great great grandma I let you in on the secret.
- Scoop out the yolk from cooked hard boiled eggs and place in a bowl.
- Mix in the rest of your ingredients, except the paprika and olives.
- Taste and see if it’s salty enough, if not, add a dash more salt or even pickle juice.
- Mix until smooth then spoon the egg yolk mix into your egg white halves.
- Smooth the the surface of the egg and then place the olive with the pimento sticking up. Now it will look like the eye pupil.
Fun right?
Protein packed and full of healthy fats, yes –> I’m going to trick you into eating healthy! Boo! And don’t worry, there’s another option for the paleo mayo if you aren’t a mayo person. The olives are a must though! Black or green will work.

Description

All you need are green olives, spices, eggs, and your favorite paleo condiment to mix in! Deviled egg eyeballs a favorite with the kids (and adults) at Halloween parties but also easy to make and healthy!
Ingredients
- 6 eggs
- ¼c to ⅓ cup paleo mayo (see notes for alternatives)
- 2 tsp pickle juice
- 1 tsp ground mustard
- ¼ tsp sea salt
- ¼ tsp black pepper
- Green olives with pimentos
- Paprika for topping
Instructions
- First hard boil your eggs. Let them cool before peeling.
- Once peeled, slice your eggs vertically.
- Scoop out the yolk and place in a bowl.
- Mix in the rest of your ingredients, except the paprika and olives. The more mayo you use, the creamier. If you want it more thick, use only ¼ cup amount.
- Taste and see if it’s salty enough, if not, add a dash more salt or pickle juice.
- Mix until smooth then scoop a ½ tablespoon to 1 tablespoon of egg yolk mix into your egg white halves.
- Smooth the the surface of the egg and then place the olive with the pimento sticking up, to look like the eye pupil.
- Sprinkle with paprika to make it look bloodshot.
- You can also use chili sauce if you prefer.
Notes
You can also use cream cheese or a hummus if you don’t like mayo.
If you are making 12 dozen eggs, just double the recipe but add in the salt ¼ teaspoon at a time and taste to make sure it’s not too salty.
