Peppermint mocha protein bites! Grain free, no bake protein bites that are easy to make, and so tasty for holidays or for a healthy peppermint mocha dessert!

Welcome to the FIRST official Flavor Friday. I hope you all like these special recipes and giveaways. It’s the least I can do for now to give back and to thank you all for the support.

This peppermint mocha flavor is one of my favorites to eat. And if you are a coffee lover and mint lover like me, then you will too! It’s grain free and can be nut free if you use sunflower seed butter or tahini.

Okay, time to get in the kitchen.

No Bake Peppermint Mocha Protein Bites (Gluten Free)

Description

No Bake Peppermint Mocha Protein Bites


Ingredients

Scale
  • ¼ cup crushed dark chocolate chips (enjoy life chocolate chips for vegans)
  • ¼ cup crushed espresso beans
  • ⅓ cup almond meal or other nut flour (can also used ground almonds)
  • ¼ cup coconut flour (can also use more almond meal)
  • ⅓–½ cup chocolate nut butter (can also use a regular nut butter and add in cocoa powder.)
  • 6–8 tablespoon Vanilla or Chocolate Protein of choice
  • ¼ to ⅓ cup raw honey or agave syrup.
  • 1 tsp peppermint extract
  • Optional- ¼ teaspoon vanilla extract & 1 tablespoon crushed peppermint mixed in helps bring the flavor

Instructions

  1. Blend chocolate and espresso beans (or coffee beans) in food processor. Transfer into a large bowl and add in all the remaining ingredients with the honey being the last . Add your extracts and mix well ( I use my hands). Then roll into bite size balls. Coat bites (once frozen) with extra cocoa powder or protein powder.
  2. Freeze or keep in refrigerator to maintain freshness
  • Prep Time: 10 min

    These were awesome! I didn’t have candies to crush so I actually put in 2 tsp peppermint extract to boost the flavor. I also used more almond meal in place of the coconut flour. They remind me of thin mints!

    Also, regarding the “refocus” post — I LOVE it. I love that you point to God — I love that you are reminding yourself (and others!) that HE is in control. I love that you are trusting in Him. We may fail, but He doesn’t!

    There are too many flavors that sound good, but I could definitely go for the mint mocha or cookie dough. It sounds crazy but a pancake and maple syrup flavor would be cool if it could be done.

    I LOVE all the Healthy Bites I’ve tried so far! The ones you sent me were incredible: Mint Chocolate Chip, Muddy Buddy Mocha, Apple Peach Raisin Cinnamon, Cookie Dough, Pineapple Ginger Marshmallow. Plus, I’ve tried a few others like the Cherry Berry Delights and the Vegan Halloween Healthy Bites, which I loved!

    I’m not such a fan of the mint/chocolate combo..but my little taste tester looooves it..although I wouldn’t want to see what espresso beans could do to him lol

    I really enjoy the fruit combos most..and if I win, i would love it if you could surprise me with a little something special. I trust I’d love anything you come up with 🙂 X

    Hmmmm decisions, decisions… I’m definitely a huge fan of chocolate and coffee, so that flavor post sounds delightful! As for something new, maybe something including some avocado in a way?? Not sure if that would even be possible. I just like avocados ha. 🙂

    I’ve always wanted to try the recovery bites. They look and sound so good. I think some spring flavors would be pretty cool. I’m not sure what goes along in the spring but I think of easter such as carrots or light chocolate flavors!
