This week flew by and I do have to say, the Cotter household is feeling much better. But still planning to rest and digest more. The car situation is the same, but hey, at least we have family around.

Ta Da!!  —->  CURRY!
You already learned about Turmeric and my love for Thai Green curry in this salmon recipe, so now I’m going to add on to that and include Red and yellow curry recipes! Are there any others? Hmmm.. I’ll have to look into that.
Red curry (paste)- Thai origin. Red coloring derived from dry red spur chile.
This Roasted Pumpkin Coconut Curry from Eat your Way Clean is a simple healthy way to try red curry paste in a recipe!
Yellow curry (paste) – Thai and Indian Origin. More spicy. Contains spices such as turmeric, cumin, coriander, fenugreek, garlic, salt, bay leaf, lemongrass, cayenne pepper, ginger, mace and cinnamon..
All curry is magical (nutrition wise). And all curry can be used in AMAZING ways within a recipe. So let’s get this immunity boosting recipe round up started, mmmm k?
