Move over cinnabon, these gluten free snack bites are even better! Chocolate or Plain Cinnamon Bun Oat bites! Great for breakfast on the go.

Well, it’s September. Whoa.. where did summer go? I don’t know about you, but as soon as September hits, I start to crave Fall flavors, smells, etc. Maybe it’s the memory of childhood? You know, the back to school hot oatmeal drenched in maple syrup and mom’s cinnamon rolls on the weekend. Hmmm.. no wonder I had cavities. LOL! Okay, not so healthy but it’s the memory and the experience that makes me smile.

Anyway, September’s Healthy Bites flavor captures all of Fall in a Ball. Clever, aren’t I?

And it just so happens that September is build a better breakfast month, so why not go with a breakfast flavor too, a healthy one!

Gluten Free Cinnamon Bun Energy Bites


Ingredients

Scale
  • 1 Cup gluten free super oats or granola (if you don’t have super oats, then use 3/4 cup GF oats and 1/4 cup chopped pumpkin seed, flax, or chia seed).
  • 1/2 cup Vanilla Protein of Choice
  • 1/2 cup coconut flour
  • 1 tbsp Cinnamon and 1/2 tbsp cinnamon sugar
  • 1 tsp butter extract
  • 1/2 tsp Cinnamon roll or cinnamon extract
  • 1/3 cup peanut butter or seed butter (chocolate or plain work great!)
  • 1/3 cup maple syrup (or honey if you can’t use maple syrup)
  • Optional – 1/2 tsp vanilla extract
  • GRAIN FREE OPTION – Use banana chips or ground coconut instead of oats

Instructions

  1. In a large bowl, mix your dry ingredients. Add in your nut butter and syrup and extracts being the last .
  2. Note: If you use bigger oats or thicker protein, you might need to use more honey or nut butter.
  3. Mix well ( I use my hands) and roll into bite size balls. Coat bites with extra vanilla protein/cinnamon. I usually coat them after they have set in freezer for at least 5-10 minutes. Then return to freezer after. You can grind your oats if you want before hand if you’d like, or keep it crunchy and leave it as is.
  4. Makes anywhere between 26-27 balls. Just depends how big or small you roll them. Mine are usually around 18grams
  5. Freeze or keep in refrigerator to maintain freshness
  6. Note – if you use a peanut butter that is no stir, it might be easier to hold together. The natural peanut butters work great but you will have to add more honey (to prevent from crumbling) if you are using the last bit of the jar.

          Hi heather! all my bites are between 45-50 calories and 5-7grams carbs , 2-3 grams protein. Does that help?

    These look so good! Wow, need to make them, I have a ton of coconut flour but have not been successful baking with it.
    I am a huge cereal fanatic but have to onyl buy it occasionally since I’ll eat the whole box in one sitting. But I would feel better about it if it were these power O’s 🙂

    I dump cinnamon on things year round, but there is something about cinnamon flavors in the fall that feels perfect! Now if only fall would hurry up and get here so I can bring out my boots and sweaters 🙂

    Yes starting to crave the Hineycrisp apples :). And wearing jeans ! But don’t want to say bye to summer quite yet. Especially since I was not able to run this summer due to injury.     Favorite breakfast: plain greek yogurt with cinnamon and oats or else a crunched up luna/lara/think thin bar. OR plain oatmeal w/ cinnamon cooked topped with grapes and vanilla almond milk (hot/cold combo is amazing!)

    Fall isn’t really a celebrated month here in the UK – you only find pumpkin in the stores at Halloween and even then they are carving pumpkins and no use for eating 🙁
    But I do buy tinned pumpkin all the time and love to use! Fall (or autumn as we call it here) for me has to be full of apples! All those varieties that finally come into season! Delish!

    Cinnamon rolls right out of the oven were ALWAYS a favorite breakfast of mine growing up. I’m still a sucker for all things “cinnamon bun” flavored!

    Nothing unique here…my favorite fall flavor is pumpkin! I got a taste or early fall in PA and now I’m kind of sad that it’s still so hot and humid down in FL!

    Well not to be super basic, but my favorite fall flavor is either pumpkin or apple spice. It’s a toss up. I do have a favorite fall smell, too, though–campfire!

    I always love the warm spices…. cinnamon, cloves, nutmeg, etc. in my Fall and Winter brekkies.

    I am curious… the recipe calls for 1/2 cup of the super oats, but yet you suggest using more than double that if you use oats/seeds combo… is there an error there? I would love to try these!

    Favirote fall flaves if mine are Pumpkin and apple. For breakfast I rotate between the 2 flavors in my oatmeal. Actually to be honest it’s my staple breakfast year round. Love your blog and thank you for sharing your creative recipes. I can’t wait to give this one a try.

    When I think Fall, I get excited to make baked oatmeal when I’m visiting my family! If it’s early autumn, I add figs…later in autum, I make pumpkin spiced oats!
