Gluten Free Salted Caramel Protein Bites! The perfect protein ball recipe to satisfy your sweet tooth! Super easy to make with no baking, kid friendly, great for snacking, desserts, etc.
Well guys, I wrote this whole post awhile back and just found out it was deleted. Sadness. But I do remember I wrote about my favorite flavor ice cream (caramel with snickerdoodle cookies mashed in). Hence these salted caramel snickerdoodle protein bites.
And at least these salted caramel protein bites have already been shipped to the winner and enjoyed by all, right?
So let’s just drool over those little caramel bits while we remake this batch! Because let’s face it, you can’t go wrong with any salted caramel and if you put in the form of a “protein” bite then it makes it even more magical…. err… healthish? Yes, let’s go with that!
But in all seriousness, you have to try these bites. They are so good for parties, healthy snacks for kids and adults, etc. Jam packed with flavor a protein and no oven required!
No bake gluten free salted caramel protein bites for ALL!! Heck, just bring them to your next function and watch them be attacked. You know what I mean. Hunger, then hanger. We’ve all been there. The best part about these gluten free salted caramel snickerdoodle protein bites is that you can really use any protein. Or even peanut/oat flour. Something to hold up the caramel bits and cinnamon together.
For me, personally, I like a vanilla pea protein or a peanut flour because it brings out the caramel/cinnamon combo, adds an extra punch of gluten free protein, and is dairy free! Oh, and of course, oh so tasty!
That being said, I won’t leave you hanging (and drooling) any more, let’s make a HUGE batch and celebrate the whole salted caramel trend in a healthy no bake gluten free protein bite form…. mmm k?
PrintSalted Caramel Snickerdoodle Protein Balls
- Total Time: 10 minutes
- Yield: 28-30 1x
Description
Salted Caramel Snickerdoodle Protein Balls
Ingredients
- ¾ cup peanut flour or oat flour
- ½ cup vanilla protein (we used spiced vanilla protein mix)
- ½ cup caramel chips or chopped caramel candy bits
- 1 tbsp cinnamon
- ¼ tsp sea salt
- ¼ tsp butter extract (optional)
- ¼ tsp vanilla extract.
- ½ cup honey or maple syrup
- ½ cup nut butter of choice
Instructions
- In large bowl, add in all your dry ingredients.
- Then mix in your nut butter, extracts, and last the honey. Mix well (I use my hands) and roll into bite size balls. You can then roll bites in the extra protein/cinnamon powder after you roll. Makes about 30 balls.
- Feel free to roll into larger bites, or smaller to make more.
- Add more honey/nut butter if they end up being too dry to roll. Just depends on type of protein you use.
- Freeze or keep in refrigerator to maintain freshness.
Notes
- Butter extract is optional. But it does help bring out the salt flavor. You can also add in caramel extract!
- the caramel candy will be frozen when you place in freezer for storage. So I would keep these in fridge if you want them softer and chewy. If you are looking for dairy free caramel, you can find them hereÂ

Did you mix equal parts Flapjacked and Protein powder?
Hi Teresa! The flapjack mix just contains protein. So you just 1/2 cup of a protein pancake mix. The one I used was a spiced flavor so it helped make it more flavorful. Or you can use vanilla protein texture and add in cinnamon. Either works! Depending on your protein, you might need more or less honey/nut butter. does that make sense?

my childhood favorite ice cream flavor is def Mint Chocolate Chip, however, I’ve recently really started to enjoy flavors that my parents have always loved…but I wouldn’t touch with a 10 ft pole-like Butter Pecan and Vanilla Bean. My favorite ice cream growing up was mint chocolate chip! Every year for my birthday, my mom would get a mint chocolate chip ice cream cake from Baskin Robbins. Today, it’s more along the lines of dark chocolate or salted caramel 🙂

I loved how ice cream was a ‘you and your dad’ thing…my uncle would always take me out to buy a popsicle somewhere in the summer and he even did it into my middle school years! He has since passed away, but I will never forget those times and I’m so thankful I was able to have that special memory of him. 🙂

I LOVE anything caramel! My current favorite icecream flavor is salted caramel coconut milk ice cream with homemade chocolate sauce. As a kid my dad and I always shared a mild obsession with chocolate, but I’m learning to branch out! And those double chocolate muffins sound divine! I cannot wait to try these bites!

These sound so yummy! I love all things salted caramel. But my favorite ice cream has always been mint chocolate chip, but only if the chocolate chips are the tiny flakes of chocolate.

Growing up I used to love plain ol’ chocolate ice cream – then I became a vanilla girl – but, now, (after a recent trip to Ample Hills Creamery in NYC) my fav is cinnamon oatmeal ice cream that I had there. It’s not available here so I have to make it – but I don’t mind that – till I go back! 🙂

Is Flapjacked GF? I was reading the label on the one I have in the pantry and it doesn’t say it is so I wasn’t sure if it was safe to eat.
They are made with gluten free ingredients but not certified gluten free. So celiacs might be careful but the muffins are certified gluten free. It all comes down to cross contamination in the oat flour, which is very very little. I know they will be updating their packages to get certified gluten free soon. The oat flour works well with me because I know it’s super clean and where it’s processed. Unlike say, a cereal company making oat flour. Does that make sense?

My favorite ice cream as a chile was cookies and cream. In high school is was Ben & Jerry’s Phish Food. Today… probably one of the Jeni’s ice creams. Her pear reisling is unreal! Or the bourbon salted pecan…
I went through phases with flavors. First I loved just plain strawberry, then I was all about Neapolitan, but then when I was older I would just die of coffee ice cream with marshmallows, but you had to wait for the marshmallows (little ones) to “freeze” a bit…then..ooo so good!

Choosing a favorite ice cream is impossible. My childhood go-to was chocolate with peanut butter swirl, but lately… oh gosh. I love banana peanut butter chip at my local ice cream shop. It’s pretty delicious!
