It’s October… how did that happen? Either way, I’m excited! A new month brings new FLAVORS! And Fall flavors in particular. In fact, my twitter and pinterest is blowing up with ALL THINGS PUMPKIN. Think we’ll get sick of it by Christmas? Hope not! Here’s my newest pumpkin recipe you gotta try! No Bake Pumpkin Spiced Cookie Dough Bites

But wait..

It’s not your average pumpkin recipe. Nope. It’s way better, there might be some white chocolate and cookie dough texture involved.

How does No bake Pumpkin Spiced Cookie Dough Sound? Um, ya… you’re drooling now, right?

Actually, I should add that these are pumpkin “pumped” cookie bites since they have a little extra protein too. So yes, you can have holiday treats that are actually somewhat healthy. I don’t know about you, but I’m all about that.

Description

No Bake Pumpkin Spiced Cookie Dough Bites {gluten free}


Ingredients

Scale
  • ⅓ cup chocolate chips (dark chocolate chips from Enjoy Life Foods.)
  • ¼ to ⅓ cup coconut flour (can also substitute for peanut flour, oat flour, or almond flour)
  • ⅓ cup peanut butter
  • ¼ cup melted white chocolate
  • 1 cup Vanilla Protein Powder
  • ¼ to ⅓ cup honey or maple syrup.
  • ½ tsp Vanilla Extract.
  • 1–2 tablespoon Pumpkin Spice
  • Optional- for more crunchy texture, add in 3 tablespoon chopped nuts


Instructions

  1. In large bowl, add in all your dry ingredients. Then mix in your nut butters, extracts, melted white chocolate, and last the honey. Mix well ( I use my hands) and roll into bite size balls. When cooled, roll bites in more pumpkin spice! Makes about 20-22 balls. Feel free to roll into larger bites, or smaller to make more. Freeze or keep in refrigerator to maintain freshness.
  2. NOTE: Add more protein if batter is too runny. Add more nut butter or honey if it’s too dry. Just depends on the type of nut butters you use and the oil in it.

Notes

if you don’t have protein powder, you can use peanut flour or oat flour but it will not be as sweet.

The white chocolate addition (as mentioned in recipe) just happens to be ghirardelli white chocolate and is melted to perfection. A little goes a long way so it definitely sweetens these up without adding a ton of sugar. BLISS!

But don’t worry about oversharing! The good new is, you can make as many batches of these bites as you want and store them in the freezer for up to 6 weeks. That means you’ll have to plenty to last through the Fall and holidays, even if you do share!

    Oooh, hmm, that’s a tough one. I like my pumpkin in unbaked mode, so I’d have to say raw pumpkin pie mousse (a.k.a. nutty dairy-free pumpkin pie filling without the crust!)

    Those Healthy Bites look deeelish!! I just had pumpkin pie ice cream at a little local ice cream shop where I am. It was awesome!! Definitely not a “warm and cozy” fall food, but you can never go wrong with ice cream!

    I am such a sucker for white chocolate & pumpkin! My favorite pumpkin treat growing up was my grandmother’s pumpkin cheesecake rolls! Always such fun making them too!

    I love Pumpkin flavored coffees and coffee drinks in the fall. Pumpkin lattes, cappuccinos, iced coffee, etc. The best!

    I haven’t had a single thing pumpkin yet this year… but this might undo my withholding. Wow. That’s a lot of sexiness in this post. I may be too overwhelmed with the foreplay of those spreads to last long enough to finish the recipe!

    Pumpkin Crunch is hands-down my favorite pumpkiny treat! It’s basically pumpkin pie filling covered with pecans and butter. So good!

    These look unreal! I have many pumpkin faves but I think the one that tops the list is a pumpkin spice smoothie made with vanilla Vega protein, pumpkin puree, pumpkin spice and a frozen banana. So good!

    I cannot even keep track of all the pumpkin recipes on Pinterest…Lately I’ve been enjoying pumpkin smoothies with lots of nut butter. I do also like a good pumpkin scone! 🙂
