Super Simple and SEASONAL Paleo Cobb Salad! Take advantage of seasonal produce and make this healthy Paleo Cobb Salad that’s fit for a king! Winter’s Bounty Cobb Salad

I might have gone a bit overboard with stuffing this salad to the brim, but hey, this is my WINTER’S BOUNTY Cobb Salad.

Benefits of Eating Seasonally

Well, for one, when you eat foods that are in season, you are retaining more nutrients. Seasonally fresh fruits/vegetables are picked when the produce is perfectly ripe and developed. This means that the “seasonal” plant has had more sun exposure and a higher content of antioxidants. Yea!

And two, it’s SAVES YOU MONEY! It’s much cheaper for the farmers to produce and therefore cheaper for you! Cash in on the seasonal bounty –>  Um, yes, let’s eat well and save money post Holidays. We like that!

Also, feel free to leave out the meats and egg to make it vegan friendly. It’s all delicious and nutritious!

Winter Cobb Salad Ingredients:

  • Celery 
  • Cauliflower (I used crumbled so it looks like cheese, sneaky sneaky)
  • Roasted Ham or Turkey (So you can use up any leftover turkey or ham from Holidays)
  • Sweet Potato Wedges
  • Sage
  • Kale, Swiss Chard, and Spinach (it’s hidden underneath, I promise!)
  • Cranberries (which I coated in a little coconut oil for healthy fats)
  • Yellow or White Grapefruit (which is why it looks yellow, not orange). They have a great sweet/tart balance!
  • Avocado
  • Egg Also, feel free to leave out the meats and egg to make it vegan friendly. It’s all delicious and nutritious!

About the dressing: I was spoiled by my mom at Christmas and received a local Pear Balsamic Vinegar. I paired it with avocado oil on this salad. It was divine! That being said, I think a creamy avocado or homemade buttermilk dressing would also be lovely. I’ll leave that up to you!

So you see, winter isn’t all that bad, right? And switching up your eating routine for seasonal produce can do wonders! Well, at least that’s what I’m telling myself.

Description

Winter’s Bounty Paleo Cobb Salad! Take advantage of seasonal produce and make this healthy Paleo Cobb Salad ! It’s packed with, flavor, protein, healthy fats, and LOADS of seasonal fruits and veggies! You’ll love how easy and delicious is to make for one or for the whole family.


Ingredients

Units Scale
  • 3 ½ cups loose winter greens (Kale, Spinach, Swiss Chard, etc)
  • ⅓ cup chopped celery
  • ⅓ cup chopped cauliflower
  • ⅓ of an avocado (sliced)
  • ½ of a small white grapefruit (slices)
  • ¼ cup fresh cranberries
  • 1 teaspoon coconut oil, melted
  • 4 sliced wedges of cooked sweet potato (⅓ to ½ small sweet potato)
  • ⅛ cup or 1oz slivered almonds
  • 1 hard boiled egg cut in half
  • 1 oz cooked roasted ham, turkey, or chicken
  • 1–2 sage leaves (optional)
  • Black pepper
  • Sea salt
  • Oil/vinegar or paleo dressing of choice
  • (see notes if you want to make this vegan)

Instructions

  1. Wash fruit and vegetables. If you haven’t already, cooked your egg (if you are using) and sweet potato, do so beforehand or use leftovers. You can steam a sweet potato in microwave in 3-4 minutes. Make sure to pierce with fork first.
  2. Dry and slice/chop vegetables into ¼ cup to ⅓ cup servings.
  3. Toss cranberries in 1 teaspoon coconut oil and set aside.
  4. In a large salad bowl or small serving bowl, arrange your greens. Then top with vegetables, avocado, and fruit. Leave the meat, egg, sage, and almonds for last.
  5. Add cracked pepper and sea salt on top to taste.
  6. Drizzle with olive oil and vinegar or a creamy avocado dressing of your choice.
  7. This works great as a large salad for one EXTREMELY hungry person or 2 smaller salads. Makes 3 if you are wanting to use as a side dish.

If you are wanting to make this vegan, simply replace the egg and meat with tofu and/or tempeh. It’s delicious!

    I adore this: the colors, the ingredients, the health benefits, the seasonality of it all. I wish I could face plant it right now, although I would totally sneak in some cheese alongside the cauliflower (tricky, tricky).

    Oh my gosh! I want this salad SO BAD! I really want to crunch that celery, it looks perfect. And who ever puts celery in a Cobb salad? Perfection, the whole thing.

    This is my kind of salad – I bet shrimp would be amazing with that grapefruit as well! Loving how colorful this is as well, who said salad had to be boring!!

    I wouldn’t even be able to eat this salad because it is so damn beautiful! 🙂 but for real, crumbled cauliflower is genius. I like to chop up broccoli like confetti, but I have never thought about that with cauliflower!
