Hey hey! How did this week go? Are you back to routine? I’m pretty sure routine does not exist in our house. Unless having no routine is a routine. Ponder that for bit. Haha! But friends, I’m so glad we don’t have a routine diet with the same foods because then we would skip out on all the wonderful seasonal produce. Like in this Winter’s bounty Paleo Cobb salad!! Hallelujah to the winter produce Gods because they make some tasty fruits and vegetables!
Now, as you know, this the green week. And this paleo cobb salad will conclude the week. In case you missed it, I posted a Kiwi Green Smoothie Monday and a green chimichurri white bean hummus Wednesday.
This Winter Paleo Cobb salad is definitely worth saving for the end. And underneath all that topping is a huge bowl of winter greens! I might have gone a bit overboard with stuffing it to the brim, but hey, it’s all good.
It’s all good because it’s called WINTER’S BOUNTY Cobb Salad –> a bounty means generosity or a reward for completing a task. So let’s consider this your BIG reward for making it through green week, back to reality week, and through the holidays! Plus using the word bounty in a salad title just makes you smile, am I right?
What’s in this seasonal paleo cobb salad and what are the benefits of eating seasonally?
Well, for one, when you eat foods that are in season, you are retaining more nutrients. Seasonally fresh fruits/vegetables are picked when the produce is perfectly ripe and developed. This means that the “seasonal” plant has had more sun exposure and a higher content of antioxidants. Yea!
And two, it’s SAVES YOU MONEY! It’s much cheaper for the farmers to produce and therefore cheaper for you! Cash in on the seasonal bounty –> Um, yes, let’s eat well and save money post Holidays. We like that!
THIS Winter’s Bounty Paleo Cobb Salad:
- Celery
- Cauliflower (I used crumbled so it looks like cheese, sneaky sneaky)
- Roasted Ham or Turkey (So you can use up any leftover turkey or ham from Holidays)
- Sweet Potato Wedges
- Sage
- Kale, Swiss Chard, and Spinach (it’s hidden underneath, I promise!)
- Cranberries (which I coated in a little coconut oil for healthy fats)
- Yellow or White Grapefruit (which is why it looks yellow, not orange). They have a great sweet/tart balance!
- Avocado
- Egg
About the dressing: I was spoiled by my mom at Christmas and received a local Pear Balsamic Vinegar. I paired it with avocado oil on this salad. It was divine! That being said, I think a creamy avocado or homemade buttermilk dressing would also be lovely. I’ll leave that up to you!
Also, feel free to leave out the meats and egg to make it vegan friendly. It’s all delicious and nutritious!
Winter’s Bounty Paleo Cobb Salad

Description
Winter’s Bounty Paleo Cobb Salad! Take advantage of seasonal produce and make this healthy Paleo Cobb Salad ! It’s packed with, flavor, protein, healthy fats, and LOADS of seasonal fruits and veggies! You’ll love how easy and delicious is to make for one or for the whole family.
Ingredients
- 3 ½ cups loose winter greens (Kale, Spinach, Swiss Chard, etc)
- ⅓ cup chopped celery
- ⅓ cup chopped cauliflower
- ⅓ of an avocado (sliced)
- ½ of a small white grapefruit (slices)
- ¼ cup fresh cranberries
- 1 teaspoon coconut oil, melted
- 4 sliced wedges of cooked sweet potato (⅓ to ½ small sweet potato)
- ⅛ cup or 1oz slivered almonds
- 1 hard boiled egg cut in half
- 1 oz cooked roasted ham, turkey, or chicken
- 1–2 sage leaves (optional)
- Black pepper
- Sea salt
- Oil/vinegar or paleo dressing of choice
- (see notes if you want to make this vegan)
Instructions
- Wash fruit and vegetables. If you haven’t already, cooked your egg (if you are using) and sweet potato, do so beforehand or use leftovers. You can steam a sweet potato in microwave in 3-4 minutes. Make sure to pierce with fork first.
- Dry and slice/chop vegetables into ¼ cup to ⅓ cup servings.
- Toss cranberries in 1 teaspoon coconut oil and set aside.
- In a large salad bowl or small serving bowl, arrange your greens. Then top with vegetables, avocado, and fruit. Leave the meat, egg, sage, and almonds for last.
- Add cracked pepper and sea salt on top to taste.
- Drizzle with olive oil and vinegar or a creamy avocado dressing of your choice.
- This works great as a large salad for one EXTREMELY hungry person or 2 smaller salads. Makes 3 if you are wanting to use as a side dish.

If you are wanting to make this vegan, simply replace the egg and meat with tofu and/or tempeh. It’s delicious!
