How do you make a gluten free BLT? Forget the bread and bake it with eggs instead! Super easy and delicious, this Bacon, Lettuce, and Tomato Egg Casserole is great for breakfast, lunch, brunch, or dinner. A gluten free, grain free, and low carb recipe.
So… we’re home from New Zealand. Back to reality. Jet lagged and in need of some serious grocery shopping. Have you ever been too mentally tired to really get the “bulk” of your grocery shopping done? Ahh, guilty! I am. Hence this baked egg casserole recipe.
All you need to make a gluten free BLT casserole are a few basics ingredients. And who doesn’t love a good bacon/egg combo?
Want to know another thing I am guilty of? Well, here goes. I’m going to reheat this gluten free BLT meal for us daily until we polish it off. Then we will move to gluten free PB &J sandwiches and smoothies. But then I promise to get some REAL grocery shopping done and send the Kiwi to Costco! I think that’s the only thing he missed while in New Zealand… Costco.
But back to this dish. Bacon… Lettuce… Tomato. Wait, how can you bake lettuce? I’ll let you in on a little secret. I frozen some mixed herbs and greens before I left. Now all you have to do it sauté them a bit with the bacon before adding it the to egg mix. See, told you I was frugal. But it totally works, and you don’t have to waste a thing!
The good news is that FRESH greens works too. I’m sure they are even better, but I like i mentioned before, I just used what I had on hand and/or frozen. Not too shabby eh?
This gluten free BLT casserole recipe really is amazing!
1 cup cooked cauliflower “rice” or chopped potato (or white rice works too)
4 strips GF uncured bacon
4 eggs
⅓ cup cream or non dairy milk
1 /4 cup chopped onion or green onion
1 large tomato, sliced.
1 –2 handful of greens like arugula or spinach
¼ c potato starch or arrowroot
¼ cup shaved parmesan
½ tsp smoked paprika
¼ tsp garlic seasoning
dash of black pepper
Instructions
First chop you bacon and sauté with greens and onions until almost all cooked. Do not over cook. Set aside. In another bowl, add in your egg and beat or mix until fluffy. Add in your spices, cream, and starch to the egg mix and beat or mix again.
Combine your potato or rice mix with the bacon and veggies, toss together, then spread on casserole dish. Pour egg mixture over top and layer the tomato slices on top of that along with your parmesan cheese. Sprinkle with any extra spices you desire, such as black pepper.
Bake at 350F for about 22-25 minutes. check at 20 minutes to make sure it’s not overcooking.
Notes
Vegetarians can easily use Tempeh or tofu bacon vs the real bacon.

Okay okay, let’s pretend it’s Friday and make this for Brinner! Deal?
Hi, y’all, I’m Lindsay Cotter, a Nutrition Specialist with a focus on Gluten-Free eating. I love creating delicious nourishing food that anyone can enjoy.
This is a great recipe and I love the idea of a throw it all in there egg bake. Beautiful pictures too. Welcome home my friend. Now go grocery shopping. 🙂
I’m with you, can’t get enough eggs and bacon. Seriously, it’s like a daily breakfast hit over here. Eggs always…. so this recipe just looks amazing. Welcome home! Jet lagged, in need of groceries… and wine?! 😉 In all seriousness I’m glad you had a safe trip!
This looks so much more balanced and hearty than the little grilled cheese sandwiches I make after coming back from a trip 🙂 this is perfect!! Thanks, lady! xoxo 🙂
Cornbread Cotter, I think this is just rude for you not to send me this- It is screaming to be eaten cold…. Like ice cream. I scream you scream we all scream for BLT egg casserole.
Glad you’re back! I can’t say I would have whipped this up as the first meal home – I probably would have started with the smoothies and pbj. 🙂 But it looks gorgeous and who doesn’t love eggs with bacon?
I love a home-made burger. But I also love a HUGE burger from a restaurant as well, so it’s not necessarily different. I feel like my potential is not being reached when I see what hubby gets to eat vs. what I get to eat. Can I move in with you guys for 3-6 months, train with hubby, and eat all your food? I want abs.
Yay! Welcome home! Glad you got home safely. Hope you adjust back to the norm quickly! This dish looks fantastic! Great for reheating for leftovers too, which makes it an instant win in my book!
This egg casserole looks awesome!! My boys love it when I make eggs for breakfast for them – I try to make some as muffins on the weekend so that they can just heat up a couple every morning for breakfast.
Hope your trip was awesome!!! I hope that when y’all are ready you (and/or)the Kiwi sill share about the race.
My husband and oldest would be all over this!
I think it would depend on where we were and how long…. probably a big smoothie, maybe a salad, maybe a breakfast bowl, hmm that is such a hard question!
I would kill for this right now. Our oven in the new place still isn’t working… so we’ve been eating out a lot. I am having a TON of salads though. After traveling fresh greens never looked so good!
Ahhh, this sounds amazing. I saw the title quick on Facebook this morning, but didn’t have time to look until now. MAKING!!! I love breakfast for dinner…or lunch, so this will be perfect!
Totally feel ya on being too checked out for a big load of groceries at times. And I can eat “breakfast” foods at any time of day! Glad y’all made it back safely.
YUM! Never thought to freeze greens so as not to waste them. I HATE when that happens and I haven’t used up my spinach or something! Def doing that next time I travel. As for me, I always crave greens!!! always.
Oh Lindsay, I think you have magical powers! lol. Seriously, what a great dish, and on the fly, using what you have. YUM. Okay, I am very curious about the arrowroot powder or potato starch…is it for texture? I am thinking it would add to the fluffiness and hold-factor, but perhaps that’s just in my head. PS, you’ve totally inspired me to stop making little grocery store runs here and there, and just use what I flipping have! LOL
Good question Jessica! potato starch and arrowroot starch are thickeners that are more allergy friendly and grain free. It kind of helps gelatinize the casserole so you don’t get just egg fluff. More texture. Plus potato starch is a great resistant starch for the gut! Hope that helps, keep me posted!
I may have to totally do this to use up my big old bag of power greens from Costco before they go bad…LOL. Glad you are home safely and good luck recovering…we’ll chat soon friend, when we can both find the time…HA!
Welcome Back Cotter !!!!! <—- Lulz for days on that, thank you for putting up with me.
Sometimes I am at the store and I know I should get…like gallon of water or some papertowels.. usually big stuff.. but I just…don't feel like it. Nope. Don't feel like lugging it all in and putting it away. If it can wait it does.
I love a good BLT! Nothing tastes better to me than tangy tomatoes and salty crunchy bacon. I don’t eat bacon very often, but when I do, it goes down very easy. This looks amazing!
Glad you made it home safe and sound, lady! I make a beeline for the bleeder as soon as I get home from travelling… I miss my smoothies! I’m actually tempted to pack a tiny blender in my suitcase for when I leave to Hawaii 😆
Welcome home! This looks super easy, filling, and tasty (I could sub out for tempeh bacon easily). I’m thinking it’d be a great post long-run lunch too!
When I return home from an extended trip I often eat a ridiculous amount of salads. Especially after long flights and hotel hopping, I find my body lacks the freshness and nutrients from jam packed salads, so I crave them a lot.
I loved the beautiful pictures from the trip. How wonderful it is there. I’m glad y’all are back safe and sound. This looks so comforting and homey for the first back home dish!
Welcome home! Definitely a great, hearty dish to enjoy upon your return 🙂 I love making overnight oats as well as delicious egg dishes, when I come home from a long trip. And yes, gotta love Costco.
This is a great recipe and I love the idea of a throw it all in there egg bake. Beautiful pictures too. Welcome home my friend. Now go grocery shopping. 🙂
This look super yummy. Do they have any big wholesale stores in New Zealand that you can shop at to get big quantities of groceries?
they sure do! but it’s not the same as costco. .haha, nothing can compare!
Ahh, the post-vacation grocery shopping is the worst! But at least you have this deliciousness. 😉
I think i would hire someone to do it all for me! LOL!
This looks so much more balanced and hearty than the little grilled cheese sandwiches I make after coming back from a trip 🙂 this is perfect!! Thanks, lady! xoxo 🙂
ohhh grilled cheese sounds good too!
Looks amazing!!! I am making egg muffins this morning….now I wish I was making this instead 😛
egg muffins are good too! love how portable they are
I love eggs. This is genius!
Cornbread Cotter, I think this is just rude for you not to send me this- It is screaming to be eaten cold…. Like ice cream. I scream you scream we all scream for BLT egg casserole.

I put spinach and kale in my last breakfast casserole! Gave it some great color 🙂 Eggs are always my go to- along with baked sweet potato fries!
My husband and oldest would be all over this!
I think it would depend on where we were and how long…. probably a big smoothie, maybe a salad, maybe a breakfast bowl, hmm that is such a hard question!
This looks amazing! I can’t wait to make it! It’s definitely happening this weekend 🙂
