A Summer Must Make Meal
Peachy keen if you ask me! This baked salmon was born from my desire to put my chipotle peach salsa on EVERYTHING! And if you’ve been around here for any length of time, you know how much I love salmon!
And on top of using gorgeous fresh summer produce, this dish simply could not be any easier to throw together. You don’t have to think much about the whole cooking process. Chop up some ingredients, place on a pan, bake (or grill), and dig in!
Ingredients You’ll Need

For the Fish
- Wild caught salmon – One of my favorite healing foods. Salmon is rich in omegas DHA/EPA omegas, which literally feed your cell membranes and therefor aid in brain cognitive performance.
- Oil – Use either light olive oil or avocado oil to combine the ingredients and help the seasoning stick to the salmon.
- Minced garlic – For the best flavor, use fresh garlic.
- Yellow or red cherry tomatoes – Tomatoes are a great source of vitamins C and K, potassium, folate, lycopene, and more.
- Fresh lime – The acidity helps brighten the flavor and tenderize the fish.
- Sea salt flakes and fresh ground pepper
For the Salsa
- Diced Peaches – Fresh, canned, or even thawed from frozen! I was still able to make peach salsa with canned peaches, drained!
- Canned chipotle peppers in adobo sauce – Just one or two peppers, sliced, is hot enough and add that lovely smokey flavor.
- Sweet onion or red onion – Chop it into bite-sized pieces to add extra crunch and a bit of tang to every bite.
- Fresh diced cherry tomatoes – Tomatoes are a great source of vitamins C and K, potassium, folate, lycopene, and more.
- Cilantro – Provides a vibrant herby flavor that balances out the heat and sweetness of the other ingredients.
- Honey – A great all-natural sweetener, honey adds another layer of sweetness to this salsa.
- Lime – Freshly squeezed is best, but the bottled varieties will also work.
- Sea salt
How to Make Salmon with Peach Salsa
- Preheat oven to 425°F or heat up a grill.
- Prepare the chipotle peach salsa or use a pre-made fruit salsa of choice. Place the peaches, onion and tomatoes in a large glass or stainless steel bowl. Stir in one diced chipotle pepper, a smidge of adobo sauce, honey, salt, chopped cilantro and a splash of lime juice. Add additional salt and pepper, to taste.
- Place the salmon fillet on a baking sheet lined with parchment paper. Drizzle olive oil on top, then rub the minced garlic, salt and pepper into the salmon.
- Place the sliced tomatoes around the salmon and squeeze with fresh lime juice. Top with 3 to 4 thinly sliced pieces of lime. (see notes)
- Bake for 10 to 12 minutes or until salmon is no longer opaque and internal temperature reaches 145°F. (see notes)
- Remove and garnish salmon with salsa, cilantro, and crushed red pepper flakes. Top with extra salt, if desired.

Baked Salmon with Peach Salsa

Description
Easy Baked Salmon with Chipotle Peach Salsa! Peach relish and fresh tomatoes combined (salsa) make the perfect accompaniment to bake salmon. It’s a healthy dish made all in one pan.
Ingredients
- 1 lb wild caught salmon fillet
- ½ teaspoon light olive oil or avocado oil
- ¼ teaspoon minced garlic
- Pinch sea salt flakes
- Crushed black pepper, to taste
- 8 ounces yellow or red cherry tomatoes, sliced
- ½ fresh lime, juiced
- 3 to 4 lime slices
Peach Salsa
- 1 cup peaches, diced (drained if using canned peaches)
- ½ sweet onion or red onion, chopped
- 1 cup cherry tomatoes, diced
- 1 to 2 chipotles in adobo sauce (canned)- diced (see notes for substitutes)
- 2 Tablespoons honey or maple syrup
- ½ teaspoon kosher salt
- Chopped fresh cilantro
- Fresh lime juice
Instructions
- Preheat oven to 425°F.
- Prepare the chipotle peach salsa or use a pre-made fruit salsa of choice. Place the peaches, onion and tomatoes in a large glass or stainless steel bowl. Stir in one diced chipotle pepper, a smidge of adobo sauce, honey, salt, chopped cilantro and a splash of lime juice. Add additional salt and pepper, to taste.
- Place the salmon fillet on a baking sheet lined with parchment paper. Drizzle olive oil on top, then rub the minced garlic, salt and pepper into the salmon.
- Place the sliced tomatoes around the salmon and squeeze with fresh lime juice. Top with 3 to 4 thinly sliced pieces of lime. Optional – Spoon some salsa onto the fish before baking to caramelize the fruit.
- Bake for 10 to 12 minutes or until salmon is no longer opaque and internal temperature reaches 145°F. (see notes)
- Remove from oven, plate, and garnish salmon with more salsa, cilantro, crushed red pepper flakes, and sea salt.
Notes
Cooking Tip – The fish can also be grilled (in foil or skin side down) for 10 to 12 minutes at 425F.
