When I was younger, I thought by 2016 we’d all be like the Jetsons. You know, flying cars, living in space, futuristic clothing. Come on now, didn’t you? Needless to say, life is not like the Jetsons and I’m still waiting on my flying car so I can “jet” off to a desert island for a tan and some R&R. Ya, that might take a lot of luck.

Are you confused yet? Don’t worry, I’ll explain. You’ll like this!

Friday is a New Year. I mean the big 2016!!! And with the NEW YEAR comes Lucky food. Black Eyed Peas and Collard Greens (and many other types of power greens) are some of the foods that are meant to bring you luck in the new year.

See where I’m going with this?

And LUCKY for you, I made a dish that has both peas and power greens and is SUPER DUPER HEALTHY! Which means I just tripled your luck factor. At least that’s what I am going to believe.

Let’s talk about this though. What makes this rainbow power greens salad with black eyed peas so lucky and healthy?

Ahh… ponder no more!

Greens (collard greens or cabbage) – Well, for one they will definitely get your body a RICH amount of vitamin K. These green also support our detox and anti-inflammatory systems. YAY! So needed after holidays. But there’s more, these power greens are also said to represent richness, money, etc. If that’s the case, I’m eating BUCKETS EACH DAY!

Black Eyed Peas – A southern food, that’s for sure. Black eyed peas are high in fiber, iron, and have a good source in zinc. ALL Lovely when supporting our immunity! Now, about the luck. Black eyed peas are said symbolize “good things to come: the promise of germination when planted!” Oh lord have mercy, you better believe we are  eating our peas. In fact, I made a HUGE POT and we are going to eat them all! Just not one in sitting. That might backfire, literally.

Rainbow Power Greens Salad with Black Eyed Peas {Vegan, Gluten Free}


Ingredients

Scale
  • 2 cups cooked black eyed peas ( or you can cook a whole bag and use part of it for salad. See below for instructions)
  • 1 tbsp apple cider vinegar (if cooking peas from scratch)
  • 2-3 cup chopped purple cabbage
  • 5 cups chopped collard greens and/or mustard greens/kale
  • 2 tbsp oil
  • ½ of a shallot chopped
  • 1 tsp minced garlic
  • ½ tsp sea salt
  • 1 to 1 ½ cup shredded carrot
  • ½ cup cooked quinoa (optional)
  • Black pepper
  • Oil/vinegar
  • Lemon juice


Instructions

  1. If you are going to cook black eyed peas from scratch, see notes.
  2. Rinse your chopped greens and and cabbage.
  3. In a medium pan, add 1 tablespoon oil, shallot, garlic, and cabbage. Saute for 1-2 minutes on medium heat.
  4. Next add in your collard green, 1 more tablespoon oil, and sea salt. Cover for 3 to 4 minutes on medium heat or until greens are wilted.
  5. Remove from heat and place all the ingredients from the pan into a large bowl.
  6. Add in your carrots, cooked quinoa, cooked black eyed peas, and a splash of lemon juice.
  7. Season with more salt/pepper if desired.
  8. Toss together and serve with oil/vinegar.

Notes

If you want to cook peas from scratch. First place a 16oz bag of peas in a pot and cover with water and 1 tablespoon apple cider vinegar.
Let it soak for 1 hr or more.

Rinse then refill pot with water, dash of salt, and simmer peas for 2 hrs on medium. If they are still not tender after 2 hrs, simmer for 20 minutes longer.

Rinse, drain, and keep in a airtight container until ready to eat.

  • Cook Time: 10 min

    This salad looks delicious!!!!!! I can’t wait to make it for the taste and I could use a dose of luc as well. I’m writing this on 5/2/2024 after reading the comments from New Year’s Eve 2015 which seems like an eternity ago.

    Great recipe, thank you! I had found a bag of blackeye peas at the grocery on deep discount because the bag was nicked and was looking for something veggie and healthy to do with them. This is a keeper for me, yum!

      That’s pretty much the story for me too! I think I might buy black eyed peas again to do this recipe again – I like the nutty mix with the greens and vinegar!

    I did the salad! and loved it! but i have to admit, i didnt cooked the veggies jajaja i did cooked the beans but after i chopped everything i looked at it and thought, heck it, lets do it raw since its summer and cant stand cooking too much 🙂 and its delicious! i also added cooked quinoa i had in the fridge, so it work for a hearty lunch.

    thank you! and sorry some people is rude in the comments. you did a beautiful salad and i have always find the all recipes can be a little modify, (when you know enough of not messing out the final result….)

    not christmas, but still feel the luck jajaja.

    This is the second of your recipes in a row to just leave out instructions on an ingredient. What the hell do I do with the cabbage? Why is it so hard to be precise and specific for you?!

      I’m not sure what you’re seeing. It says to sauté cabbage. You then combine it with the collard greens. If this is confusing, I can most definitely update recipe instructions. Please be considerate and kind when leaving comments.

    I hope this isn’t a totally stupid question, but does “oil” mean olive oil or a different oil? Would you just serve the salad with some olive oil drizzled on top? I’d love to make this, but I don’t want to do it with the wrong ingredients!

      never a stupid question here. The oil I used to sautee the greens and onion avocado. The oil on top with olive oil. You can use olive oil for both. Keep me posted!

    I am loving this healthy take on greens and black eyed peas Lindsay! I do the whole greens and black eyed peas dealio but never thought to add quinoa to it – am gonna try this this year – maybe with some bacon in it – though that will make it non-vegan.

    Ohhhh the Jetsons….I LOVED that show! All of a sudden, I’m craving a huge couch sesh with The Jetsons on repeat along with uuuuuge amounts of this power salad. I love how vibrant and healthful this is….and all them black eyed peas for luck in the New Year? Perfection!

    I am a weird Southerner. I don’t care for black eyed peas, grits, or cooking with Coca Cola (though I love me a diet coke). But the rest of it? sign me up! And at this point, I would eat all of the above if it would heal my damn sacrum!

    I’m hungry too! This salad looks so tasty. I honestly haven’t eating black eyed peas very much, but we had a Texas Caviar for Christmas and now all I want are black eyed peas!

    Ha! I thought the same thing about the us being the Jetson’s by now. Guess while we wait we’ll just have to keep making good food. I’ve never had black eyed peas. Maybe I should start eating buckets of them so my luck will change?
