Oh my. So much newness this week. We feel like it’s the first week of school. New routine, new clothes, new schedule, new meal plan schedule. Whoa! I feel like my sherpa skills need some sharpening. I better do it fast so no one gets crabby. Hehe… see what I did there? Okay puns aside, let’s talk crab, specifically blue or white crab. And even more specifically, crab in an Asian Crab and Avocado Cucumber Salad ya’ll!

If you are a seafood lover, then you will love this Asian Crab and Avocado Cucumber Salad recipe! It’s so simple and great for lunch on the go (like in a mason jar) or whenever! But my whole purpose for getting a little ecstatic about crab (NOT imitation crab) is its nutritional content. Yes, let’s get nutrition nerdy!

This delicious crustacean is naturally low in fat and contains only around 70-95 calories per serving.

Blue Crab  is lightest, around 70 calorie 3oz. and Dungeness Crab is highest, around 95 calorie per 3oz. serving. Majority calories coming from PROTEIN. WOOWOO!

More importantly though, crab is the KING of seafood when it comes to providing key vitamins and minerals. Actually, sardines are King(s), but let’s just go with my pun, mmm k?

Crab meat is a great way to boost protein and B vitamins without having to actually eat red meat. Many of my clients (and friends) are asking me for more food sources that contain vitamin B-12 and B-6, specifically ones that are meat free. Don’t get me wrong, there is definitely room for healthy  Vitamin B-12 meat recipes in the diet, but it’s also important to switch up your sources. Which is why this Asian Crab and Avocado Cucumber Salad recipe comes in handy!

So why so gah gah over Vitamin B-12? Well, vitamin B-12, along with the other B vitamins, helps to convert food into energy. B-12 helps make up our DNA and is crucial for a mental health and keeping our immune system strong. . Your body will not run smoothly without it.

But guess what? Vitamin B-12 also the one of the first minerals to go (become depleted) when our bodies are stressed, making it hard for our bodies to keep it around. Does that make sense? Which is why we need to find some quality sources that are packed full of it! If you are vegan, you may want to consider a supplement or quality plant based b-vitamin rich protein since it’s not a plant sourced vitamin.

Description

Asian Crab and Avocado Cucumber Salad {Paleo, Gluten Free}


Ingredients

Units Scale
  • 2 cucumber (peeled if desired)
  • 6.5oz wild caught lumb crab meat (fresh or canned)
  • 2 tbsp chopped cilantro
  • 1 tsp dried red pepper (flakes)
  • ½ tsp minced garlic
  • 2 –3 teaspoon sesame oil (divided)
  • 2 tsp rice vinegar (more dressing if desired)
  • splash of lime
  • ½ to 1 whole avocado (sliced or chopped)
  • 1 large plum
  • sesame seeds (optional)
  • sea salt / black pepper to taste

Instructions

  1. Wash and dry your veggies/fruit. Next spiralize your cucumber or slice julienne style. Peel first if desired. Pat dry your cucumber spirals so they are oversaturated with water. Add spiralized cucumber to a bowl then mix in 1 teaspoon or more of sesame oil and rice vinegar.
  2. In another small bowl, combine your crab meat, cilantro, pepper, garlic, vinegar, and 1 teaspoon sesame oil. Mix and add some fresh ground pepper if desired.
  3. Slice up your plum and avocado.
  4. Arrange all your ingredients in a large salad bowl or two small salad bowls. Season with salt/pepper and splash of lime.
  5. Garnish with sesame seeds.

Now, let’s dish this salad up! It’s super easy and if you use canned crab, it’s even easier. My go to canned crab meat is either Natural Crown Prince or Miller’s brand.. Both are very light and refreshing and both can be found at whole foods or your local grocer! This type of crab pairs great with the tartness of plums and buttery goodness of avocado! All tossed together in spiralized cucumber salad.

    I LOVE crab, but I don’t have it often because real crab is so hard to find! No way should you have that imitation crab shiz all the time. This healthy salad looks SO good, and I’m so glad that it has spiralized cucumbers with an avocado sauce to pair with it perfectly!

    This looks like one nutrition and flavor packed bowl!! The avocado, plum, zoodles… wonder if it would taste good with salmon instead of crab as I’ve been craving it lately or maybe grilled shrimp. Otherwise guess I’ll have to get my hands on some crab.

    Why have I never thought to spiralize cucumber?! I bet it’s amazing, and my boys would love that! Plus, crab is so delicious, but I had no idea that it was quite so healthy. This salad sounds like summertime perfection!

    FRIGGIN’ MAGICAL.

    Last time I had crab was when I attempted to make healthy crab cakes. I liked them. Really, I did. Fiance…. Yeah, his mouth is so used to the CRAPPPPP of the world that he hates EVERYTHING healthy! UGH.

    That’s fine though. Cause I wouldn’t want to share this delicious salad with him anyways.

    I used to get crab all the time from the farmer’s market in ATL. Oddly, it’s harder to find here. But I get in restaurants all the time still! Need to find a better market for fish… why is it so hard by the friggin ocean?!
