So I’ve talked about Dreaming Big a lot over the past few months. I first talked about the 5 components of dreaming big HERE.
I then followed it up with thoughts and things that can keep up form dreaming big, the main one being worry.
Today I am going to touch base on highs and low of dreaming big. The YO-YO’s of dreaming big you might say.
The Yo-Yo affect can be tiring, both physically and mentally. Financial burdens can halt the heart of your dream. Self doubt can halt the heart of your dreams. The FEAR of the UNKNOWN (aka Future) can halt the heart of your dreams.
You see, our year has been full of high’s and lows. Last month was a HIGH MONTH. The kiwi cotter raced well, stayed injury free, and we both were plowing through plenty of work, etc. But just like that, things can change. Our life is very much month to month. And since we’re a Team, when one of us is going through a low part of dreaming big( discouraged or frustrated) it’s important for the other one to be just be there, to encourage, to comfort, but at the same time give them time and space. Ya know?
The low will soon fade and you can make your way back up. Working HARD towards whatever dream GOD may have for you. Because HE always has a PLAN for you. One that FAR exceeds our own, even when if we can’t picture it at the moment. Even if we’re “yo-yoing.”
This weekend I made the kiwi his favorite New Zealand dessert. Yo-Yo’s. Quite fitting, isn’t it? It’s not healthy. It’s not going to help with his training. But it did bring comfort. It was made with love. And gosh darn it, sometimes you just need to make a home made dessert so you can scrape the bowl clean and end the day on a HIGH (sugar high)!

Ingredients
Cookies
- ¾ cup butter (i used sweet cream butter)
- ¼ cup icing sugar (similar to powder sugar)
- 1 teaspoon vanilla
- 1 ½ cups GF flour (Bob Redmill’s All purpose Flour)
- ¼ cup custard powder (see picture below. In international grocery isle)
- optional: dash of buttermilk or cream**
- optional: dash od sea salt**
Custard/Butter Filling
- 50 g butter , softened
- ½ cup icing sugar
- 2 tablespoons custard powder
- 2 tablespoon coconut cream**
** are my additions. If you can’t find the custard powder, try using vanilla cream pudding mix.
Instructions
- pre heat oven to 180 degrees C or 375F. First beat your butter and icing sugar until smooth and fluffy. Takes a while. Then add in vanilla and optional milk.
- Second, slowly combine (or sift) flour and custard powder together, then fold into the creamed mixture while beating. Make sure it’s nice and doughy. I used a beater (mixer) then mixed with my hands.
- Roll dough into balls and place on cookie sheet. Flatten with a floured fork and bake for 15-20 minutes. While cookies cool, make filling. Just beat all ingredients together until smooth. Whip with fork to make extra fluffly. When the cookies are cooled, then sandwich together in pairs with the butter custard filling.
- I let them sit in the fridge for 20 minutes so that the filling can set. THEN EAT! [/print_this]
There will always yo-yo’s in life when you are reaching toward a BIG DREAM. And every big dreamer needs someone to be their yo-yo partner through it. To PULL them back up when they are down, then switch roles (if need be). It can be a spouse, a family member, a friend, etc. Someone that can bring comfort right when you need it.
Dreaming Big means living and sharing every emotion, yet keeping FAITH through it all.

Well no one else actually commented on if they made these yoyo biscuits?? I DID!! They are SOOOOOO the best gluten free biscuit ive ever made suer smooth and delicately soft and crumbly and perfect I am having trouble not eating the lot!! i also mixed in some powered ginger to the icing and its to die for!! THANK YOU for the recipe! they are PERFECTION!

Bob was just asking (okay, sorta begging) me to make some GF chocolate chip cookies. I need to hunt down a good recipe and make this for him. He’s been feeling a bit deprived when he constantly has to turn down offers to try baked goods at restaurants and get-togethers. I’ve been putting it off . . . busy with other things . . . but this post reminded me that I need to do this for him. Offer a little comfort. 🙂

So true Lindsey. His plan is ALWAYS greater than our and always better for us than what we’d plan for ourselves. It’s hard to give up that control though, even though we KNOW His plan is best.
My favorite comfort food to make for other is chocolate chip cookies. My husband loves my chocolate chip cookies, and it makes me so happy to make them for him!

Keeping the faith through the yo-yo time is one of the toughest but best things! Yo-yo’s sound pretty good! They remind me of “gobs”… have you ever heard of them?!

Oh I love this analogy Lindsay! It’s a tricky balance sometimes, huh? I’m yo-yoing all over the place. I’m kind of thinking that if my yo-yo gets pulled too far in one direction, it will just slingshot me to the beach << smart, yes? 😉

I totally have experienced the yo-yos, but I find in situations like that I turn to my husband and family for support to get through those highs and lows (especially the lows).
My comfort food…homemade pizza for sure!
oddly, I still think ordered pizza is a big comfort food. I rarely to never have it, but it’s certainly tied to A LOT of childhood memories and always makes me feel warm and fuzzy. Taking life month by month is still very new to me, but I’m learning how to be ok with it.
What do you mean it isn’t healthy? Isn’t everything that is gluten free also healthy? 😉

I always remember that if you didn’t have the lows, you wouldn’t appreciate the highs. A bit of a balance and learning throughout the process can be a really good thing (in hindsight, right?). =)

Yes, yes, yes to all of this. Life is FULL of highs and lows, that’s for sure. We are so blessed to have husbands in our lives that support us and encourage us every step of the way though. AND vice versa – so that we can encourage and support THEM every step of the way as well. And better yet? A God that knows what’s best for us and has a perfect plan!
Oh, and best comfort dessert? Homemade brownies from scratch. Yummm.

You and your Kiwi have an amazing relationship and it’s obvious by the way you support each other! I always make people their favorite baked good if they’re going through a rough patch because I’m a baker and it’s the total way to their heart. It’s a small way to let them know you’re thinking about them. <3 My comfort food is definitely macaroni and cheese!

I love how you and your hubby consider yourselves a team, my fiance and I do as well. It’s so important to have that support from your number one…especially with the UPS AND DOWNS. Because in life you are going to have both for sure.
Growing up and still to this day, food is a LARGE part of our lives. It makes us happy, brings us together and, it awakens our senses. We savour and enjoy the comfort it brings to our being. Food made with love is the best kind…it’s probably why we love each and every bite 😉

Recently, my life has taken a course I never thought would happen. I am dealing with a health issue that has stopped me in my tracks. My dreams and daily life has changed, and now I am just trying to manage not only the health issue and the pain associated with it, but my feelings, and the reality that my life might take a completely different course than I had envisioned. I surprisingly OK with it all.
My favorite thing to do is bake for my kids and husband, and I have been doing it like crazy for them lately since I am unable to run.

If it’s made with love, then it IS healthy 😀 That’s one of the most nourishing ingredients that there is… the butter and sugar just make for a tastier way to get the message across 🙂
You and I are the same people…I’m sure of it. We’ve actually been on the low side this summer. We decided to keep a low profile and just enjoy each other since well, the money is definitely not flowing in like last year. We’ve learned that stressing definitely does neither of us any good. We just enjoy our time together and some beans and rice. 😉

Those look delish. When I am going through a low time, I try to remember that He does have a plan for me. It’s sometimes hard to see but it’s there.

Girl, you know I GET the yo-yos, there’s been a lot of yo-yoing lately, but I’ll take it because I know at the end of the day it will be worth every up and down moment!
I know the Yo-Yo’s. And I used to extremely judge myself and falling into self-doubts when I was in a down. No I take a down to get back in awareness, reflection and slowing down. It all happens for a reason and makes us stronger to achieve the big dream!!
