This foil packet potatoes dinner is gluten-free, Paleo-friendly and vegetarian. Easy to make with little clean-up and seasoned with curry spices, it has simple, real food ingredients and is great for breakfast, brunch or dinner.

Ingredients You’ll Need

Below is an overview of the ingredients and recipe. Please be sure to scroll down to the recipe card below for the complete details and nutrition information.

  • Potatoes – Golden, red, or sweet potato can be used!
  • Olive oil – Or substitute with avocado oil.
  • Spice mix – We’ve used a curry spice mix to season the potatoes, because we love the health benefits, but you can literally use any spice mix you prefer.
  • Eggs – We were keeping these vegetarian by adding eggs for protein, but substitute with pre-cooked chicken, chicken sausage, feta or mozzarella, or chickpeas.
  • Optional – Any topping of your choice like cheese, herbs, sour cream, or salsa!

Health benefits of turmeric

Turmeric contains an active compound called curcumin. This compound is one of the most powerful anti-inflammatory agents and has antioxidant effects. These antioxidants can help fight free radicals that build up oxidative damage to our muscles when we exercise or are stressed.

We need a powerful antioxidant to help combat and protect our system. Turmeric not only neutralizes free radicals on its own, it also helps to increase the body’s own antioxidant enzymes.

Now, pair that with the plant antioxidants in potatoes, more antioxidants found in the amino acids of an egg yolk, and this meal becomes a powerhouse of antioxidants in foil packs. Not to mention macro balanced with healthy fats, real food carbs, and protein!

How to make foil packet potatoes and eggs

One of the great things about foil packet potato meals is that you just keep filling packets until you have enough to serve everyone. They are each a single serving, so in about 40 minutes, you can make foil packets in the oven. As a result, it will provide a vegetarian, paleo-friendly, gluten-free meal for as many people as you can fit around your table.

Easy Foil Packet Potatoes and Eggs

Slice potatoes and toss them with olive oil and seasonings. (Use about a cup of potatoes for each foil packet)

  1. Bake at 400°F for 25-30 minutes. (the potatoes will not be fully cooked yet)
  2. Layer cooked potatoes in the foil packs.

  1. Crack an egg on the top of each foil packet of potatoes.
  2. Bake for another 10 minutes.

Foil packets are an easy way to cook any kind of food completely without burning it, especially when grilling. The foil conducts heat well and protects the food from high temperatures.

How to make the aluminum foil packets

  1. Use an 8”x8” or 9”x9” piece of foil
  2. Bring two edges of the foil together and fold it about one inch down. Continue to fold down one inch at a time until it touches the potatoes.
  3. Fold the opposite ends into triangles to seal the contents into the foil packet.

Description

Curry spiced foil packet potatoes and eggs is a gluten free, Paleo, healthy grilling recipe (or oven) for breakfast or dinner. Make this vegetarian recipe tonight!


Ingredients

Units Scale
  • 4 cups (around 1 lb) of sliced golden or red potatoes (or diced sweet potato can be substituted). See notes.
  • 2–3 Tablespoons olive oil or avocado oil
  • ½ teaspoon smoked paprika
  • 1 teaspoon minced garlic, 1 clove
  • ½ teaspoon curry powder seasoning with turmeric
  • ¼ teaspoon sea salt and black pepper, each
  • 4 large eggs
  • optional topping – salsa, avocado, red pepper flakes, fresh herbs, parmesan

Instructions

  1. Preheat oven to 400F.
  2. Slice the potatoes and toss them with olive oil and seasonings.
  3. Place potatoes on grill or baking sheet and bake at 400°F for 25-30 minutes or grill at 450F, turning potatoes once, half way through cooking. (The potatoes should be tender but not overcooked). While potatoes are baking, make the foil packets and place on a baking sheet.
  4. Once potatoes are grilled or baked, place 1 cup of cooked potatoes into each foil packet.
  5.  Crack an egg on top of each foil pack.
  6. Place sheet pan back in oven for about 8-10 minutes or until yolks look firm but not overcooked.
  7. Remove and garnish with any extra toppings of choice; herbs, avocado, salsa, cheese, or dressing of choice.
  8. Freeze these packs for up to 2 months then reheat in oven. The egg yolk will harden but taste is still delicious!

Notes

Can’t eat eggs? No prob, substitute egg with pre-cooked chicken, chicken sausage, feta or mozzarella, or chickpeas.

Omit cheese for whole 30 option.

Note –  Eight to 10 small new red or gold potatoes equal one pound.

    Hey so do you close up the foil packet while it’s in the oven or keep it open? Also when you add the egg do you keep the foil open?

      I cupped it so it was slightly open. YOu can do this by placing the foil in a small bowl, round the edges, then place the potatoes in it. Then remove the foil from bowl and place on baking sheet. When adding the egg, seal it up a little bit more before returning to oven. Not all the way though. Does that make sense?

    Have you had any luck preparing these ahead of time? I made this last week and it was a hit (though next time we will add diced onions), but both my husband and I work, so I like to prepare things ahead of time and be able to just throw them in the oven when the time comes. I know potatoes oxidize, though, so I was wondering if the oil would be enough to keep them from doing so – if this has already been tried. But even with prep before cooking, this is definitely something I’ll be making again!

      I think they would keep well for a day but not much longer. Maybe make the eggs a little more hard boiled. Ya know?

    I have just discovered you. I was just diagnosed so I was looking for recipes that stayed within my dietary restrictions, tasted yummy, and didn’t require emptying my wallet. This is brilliant. I tweaked it by using sweet potato and my son requested sausage crumbles. I also added some chopped sweet pepper. It was absolutely lovely – if not a little posh for something with such rustic ingredients. Thank you!

    Are foil packets sealed up while cooking? Opened to add an egg and resealed? Or just formed into a foil dish and left open while cooking?

      I left it open. But i think either would work. Just be sure to add the egg last and check on it ever few minutes. In case you want it more or less runny. Ya know? Keep me posted! Thanks Cyndi

    I can imagine poaching an egg myself. I only did it perfectly ONCE and ever since, poaching eggs have been EPIC FAILS. Practice doesn’t exactly make perfect sometimes! While I don’t really like white potatoes, I LOVE baking sweet potatoes in Indian spices, let alone with eggs, so this is a MUST. I’ll definitely trying baking a kabocha or sweet potato with eggs and turmeric and see how it tastes–I bet it will be AMAZING!

        I would be sharing my adapted version. Taking your concept of egg/potato foil packets but adding veggies and using italian spices instead of curry (I did try your turmeric blend though and it was delish).     I adore foil cooked things, and you are right, the cleanup is a breeze.
    I often foil bake fish with some veggies, a splash of white wine and a pat of butter…much like using parchment paper, but it is much easier to form packets of foil than parchment.

    I look forward to giving this a whirl, I love smoke paprika on potatoes!

    Girl you read my mind!!! I was just talking to J this weekend about french fires and eggs, not sure why but I had this strange craving.     I eat eggs alllll the time, but only scrambled or over hard. I don’t like runny yolks! So I’m not very good at any of those other cooking methods either lol

      Why do people write a comment when they have nothing relevant to say? They just don’t have anything else to do? No one cares to read if you think it’d be good or if you have no intention of cooking it this way. If you tried it, comment. If you have a question, ask it. Otherwise, please keep it to yourself because it wastes our time.

          I am glad you asked. It is because my comment IS relevant to the topic, I do not (and I know MANY people do NOT) like looking for someone’s comment that actually made a recipe to determine if it is worth making for my/their family. I’m sorry that staying on point is too much to ask from someone like you that cannot understand that reading dozens of pointless comments is a waste of time. I am only addressing this to spare someone else from having to search through another comment from someone like you who is thoughtless toward everyone else’s time, There are few enough people who bother to read all comments anyway — which is why oftentimes there are many people asking the same question over and over again without bothering to just read the dozen times it was already asked.

          So to answer your questions, I explained how my comment is relative and no, it is far from being all I have to do, but I will reply to your comment because, apparently, you are unable to comprehend. So my comment not only does NOT waste our time, it can SAVE wasted time with pointless comments. And yes, there are people who do care that I don’t like wasteful comments that have NO value. So, on behalf of all the people who dislike wasted and pointless comments, thank you for showing us what they look like by adding to their number,.
