Not to worry if you can’t eat eggs, I have other options! More on that in the recipe card. But first, let’s chat foil packet meals! A.k.a. life made easy meals. 🙌
Foil packet potatoes are a complete vegetarian meal you can easily make using the new KitchenAid Smart Oven+ with grill attachment. With this revolutionary appliance, you can get that fantastic grilled flavor all year round, l right in the comfort of your kitchen.
Speaking of revolutionary…
YOU ONLY NEED 4 INGREDIENTS👇🏻
- Potatoes (any kind)
- Olive oil
- Spice mix
- Eggs (See recipe card for other protein.)
- Okay and one more optional ingredient – A topping of your choice (cheese or herbs will do!)
We’ve used a curry spice mix to season the potatoes, but you can literally use any spice mix you prefer. SPICES are life! Oh wait, I mean variety is the spice of life! 😉
Let’s chat about curry spice and what gives it that GOLDEN hue: turmeric!
What are the benefits of turmeric in curry spices?
Turmeric contains an active compound called curcumin. This compound is one of the most powerful anti-inflammatory agents and has antioxidant effects. These antioxidants can help fight free radicals that build up oxidative damage to our muscles when we exercise or are stressed.
We need a powerful antioxidant to help combat and protect our system. Turmeric not only neutralizes free radicals on its own, it also helps to increase the body’s own antioxidant enzymes.
Now, pair that with the plant antioxidants in potatoes, more antioxidants found in the amino acids of an egg yolk, and this meal becomes a powerhouse of antioxidants in foil packs. Not to mention macro balanced with healthy fats, real food carbs, and protein!

- Layer cooked potatoes in the foil packs.
- Crack an egg on the top of each foil packet of potatoes.
- Bake for another 10 minutes.
Foil packets are an easy way to cook any kind of food completely without burning it, especially when grilling. The foil conducts heat well and protects the food from high temperatures.
How to make the aluminum foil packets
- Use an 8”x8” or 9”x9” piece of foil
- Bring two edges of the foil together and fold it about one inch down. Continue to fold down one inch at a time until it touches the potatoes.
- Fold the opposite ends into triangles to seal the contents into the foil packet.

Oh I love the addition of tuna! YUM!
Hey so do you close up the foil packet while it’s in the oven or keep it open? Also when you add the egg do you keep the foil open?
I cupped it so it was slightly open. YOu can do this by placing the foil in a small bowl, round the edges, then place the potatoes in it. Then remove the foil from bowl and place on baking sheet. When adding the egg, seal it up a little bit more before returning to oven. Not all the way though. Does that make sense?
Have you had any luck preparing these ahead of time? I made this last week and it was a hit (though next time we will add diced onions), but both my husband and I work, so I like to prepare things ahead of time and be able to just throw them in the oven when the time comes. I know potatoes oxidize, though, so I was wondering if the oil would be enough to keep them from doing so – if this has already been tried. But even with prep before cooking, this is definitely something I’ll be making again!
I think they would keep well for a day but not much longer. Maybe make the eggs a little more hard boiled. Ya know?
Runny yolks weird me out…how much longer should I cook it if I wanted the yolk cooked all the way through?
maybe a few more minutes. They bake really fast! Keep me posted.
I have just discovered you. I was just diagnosed so I was looking for recipes that stayed within my dietary restrictions, tasted yummy, and didn’t require emptying my wallet. This is brilliant. I tweaked it by using sweet potato and my son requested sausage crumbles. I also added some chopped sweet pepper. It was absolutely lovely – if not a little posh for something with such rustic ingredients. Thank you!
Oh yours sounds wonderful! Will try it with sausage crumbles next!
Are foil packets sealed up while cooking? Opened to add an egg and resealed? Or just formed into a foil dish and left open while cooking?
I left it open. But i think either would work. Just be sure to add the egg last and check on it ever few minutes. In case you want it more or less runny. Ya know? Keep me posted! Thanks Cyndi
I can imagine poaching an egg myself. I only did it perfectly ONCE and ever since, poaching eggs have been EPIC FAILS. Practice doesn’t exactly make perfect sometimes! While I don’t really like white potatoes, I LOVE baking sweet potatoes in Indian spices, let alone with eggs, so this is a MUST. I’ll definitely trying baking a kabocha or sweet potato with eggs and turmeric and see how it tastes–I bet it will be AMAZING!
Ohhh good call on the kabocha!
Ohh I gotta try with kabocha
Yum! Putting this on my Whole30 Pinterest board. And on my dinner meal plan for this week. I have been loving using a ton of spices lately–
wonderful! thanks friend. I appreciate you.
Such a cute idea!
I made these this morning and they turned out so adorable. I love the no-mess. And the boys in my house loved the fillingness of the egg and potatoes.
Would you mind if I posted an adaption to the recipe, linking back to your post of course?
so glad it worked out! would be sharing my original recipe or yours adapted?
I would be sharing my adapted version. Taking your concept of egg/potato foil packets but adding veggies and using italian spices instead of curry (I did try your turmeric blend though and it was delish). Let me know if you’re cool with me adapting the recipe. Like I said, I’d link back to your post showing where I got the inspiration 🙂 Thanks.
sure thing! thanks for asking. <3
My eggs are always scrambled and brown which is how I like them. I have no idea how to make other eggs haha. Ok, I can make an omelet but that’s about it.
I love the simplicity of this meal. My Hubs LOVES roasted potatoes. I am a huge fan of turmeric and eggs…which means I need to add this to my menu for next week!
I love this, and I adore how easy it looks. I might actually be able to handle this one! Hooray!
add some cheese and you’re set!
Just saw these on Facebook and had to come grab the recipe; OMG they look amazing. I’m making them for dinner tonight. Also: Your photos are breathtaking!
Thanks ANnie! Let me know if you give this a whirl!
!!! How have I never thought to cook eggs in foil packets?!! I’m all about less cleanup, so this looks perfect. And heck YES to doing it over camp fire! With marshmallows on the side? 😀
i know, right? love easy clean up. Shoot, you fly me down to hawaii. I’ll make these for you. Do we have a deal? pretty please? LOL!
Soooooooo much flavour! These are awesome! xo
This looks mouth wateringly good. I want me some. ANNNNND I have a sweet potatoe just waiting for me to use up! Perfect!!
oh yes! great with sweet potato too! keep me posted!
I adore foil cooked things, and you are right, the cleanup is a breeze.
I often foil bake fish with some veggies, a splash of white wine and a pat of butter…much like using parchment paper, but it is much easier to form packets of foil than parchment.
I look forward to giving this a whirl, I love smoke paprika on potatoes!
Fish is the best in foil!! So healthy and easy too
I love how mess free and easy this is! And I have always been a sucker for eggs and potatoes!
Me too friend
You are a genius!!! Love this! I also love how you tell us the benefits of all the spices & ingredients!
DO YOU DIDN”T!! Ok potatoes in foil = da bomb. But then you went ahead and added a big photo of egg porn. And that made me love this (and you) even more!
haha i love you more for saying that! <3
Girl you read my mind!!! I was just talking to J this weekend about french fires and eggs, not sure why but I had this strange craving. This is even better because these WILL BE made camping this summer! Pinned for later and can’t wait to make them. Happy Meatless Monday my friend, hope you have a great week!
yes!! i want to go camping with you. can I?
Now I have had and immensely enjoyed spicy potatoes in foil – but – dang – Lindsay – you made spiced potatoes epic with that egg! GOSH – foodgasm… 🙂
I’ve never done eggs in a pack before!! I have to try this!!!
let me know if you do!
I must try this STAT. Like breakfast tomorrow. I will literally put an egg n anything. If you put it on chocolate cake I’d probably eat it.
Give yourself more egg credit! This looks incredible. I absolutely need to try, since eggs and potatoes are half of what I eat anyway, how could I miss out?
yes, totally thought of you! just needs chorizo, right? haha
Why have I never known this secret to making eggs? Every time I make them they end up looking like a mess! Totally trying!
Love turmeric and obviously love potatoes AND eggs. winwinwin pinning
I love that you put eggs on these. Best dinner or breakfast hack ever!
The only way that I will eat an egg yolk is runny. Yes, I know that I am weird. Get over it.
you’re never weird to me!
I eat eggs alllll the time, but only scrambled or over hard. I don’t like runny yolks! So I’m not very good at any of those other cooking methods either lol
Why do people write a comment when they have nothing relevant to say? They just don’t have anything else to do? No one cares to read if you think it’d be good or if you have no intention of cooking it this way. If you tried it, comment. If you have a question, ask it. Otherwise, please keep it to yourself because it wastes our time.
And how exactly is your comment relative to the topic? Is this all you have to do? to use your words, “If you tried it, comment. If you have a question, ask it. Otherwise, please keep it to yourself because it wastes our time.”. To that I would add, no one cares if you like someone’s comments. Don’t be a hypocrite. No one likes a hypocrite.
I am glad you asked. It is because my comment IS relevant to the topic, I do not (and I know MANY people do NOT) like looking for someone’s comment that actually made a recipe to determine if it is worth making for my/their family. I’m sorry that staying on point is too much to ask from someone like you that cannot understand that reading dozens of pointless comments is a waste of time. I am only addressing this to spare someone else from having to search through another comment from someone like you who is thoughtless toward everyone else’s time, There are few enough people who bother to read all comments anyway — which is why oftentimes there are many people asking the same question over and over again without bothering to just read the dozen times it was already asked.
So to answer your questions, I explained how my comment is relative and no, it is far from being all I have to do, but I will reply to your comment because, apparently, you are unable to comprehend. So my comment not only does NOT waste our time, it can SAVE wasted time with pointless comments. And yes, there are people who do care that I don’t like wasteful comments that have NO value. So, on behalf of all the people who dislike wasted and pointless comments, thank you for showing us what they look like by adding to their number,.
