And it’s August. And it’s been 7 years this month that I’ve been writing and sharing on this little space called the interweb. For Reals? Blog years are like dog years, so really I am 49 in blog years. Pass me some flourless chocolate nut cookie sandwiches and a big glass of coconut milk! Lets sit and reminisce of all the good times and awkward posts. Haha. That would take FOREVER! But wanna know what my VERY first gluten free RECIPE was? It was a flourless chocolate muffins with orange almond butter filling. You can go to see it yourself on this flourless creation post (can you tell I like flourless treats?)
I also used to post  recipes on my husband’s Training blog back in the day too. From 2008 to 2010 until he said ” Hey, you should start your own blog and share all these recipes.” And then Cotter Crunch blogpost was born in 2009 or maybe 2010?? And then in 2011 Wordpress and self hosted. THAT WAS SO LONG AGO!!  When a lot of you were born (just kidding). More like when  blogging as a hobby days. Speaking of  that,  this blog became more than a hobby the end of 2014. I rebranded and refocused. And in fact, I didn’t even have a proper Facebook page until last year. Um… yes, I’m a bit slow. Lord have mercy I am old and tired.
Back to my point here y’all. AUGUST means we ENJOY the things in life that have come and gone. Like summer closing in … like outdated blog posts that actually make you laugh… like the fact that cookie sandwiches were probably so last year but flourless cookies.. yes, they are making a comeback. Okay I might have made that last part up.
In all seriousness, I am sharing these flourless cookie sandwiches because it’s exactly what I desired to make. No rhyme or reason to it. I call this “living in the moment” recipe creation. An ode to my very first flourless chocolate muffin creation. Let’s just pretend like it’s blogging days 2009 … not a worry or SEO thought in the world. Haha, you cool with that? Cool.
Okay so the flourless cookie part are actually made from chocolate chips, cocoa, almond butter, and hazelnuts. It’s almost like a Nutella cookie, almost!
And then you got your filling..fillin…ooey gooey whipped goodness. Can you guess the flavor? It’s of course, more nut butter and more chocolate! Actually I used sunflower seed butter (although almond butter works too) blended together with sugar free powdered sugar. Yes, I made sugar free powdered sugar and I will tell you just how easy it is in a minute, mmm k?
But first, let’s talk about the nut butter filling. Â It’s crucial. You see, you can totally use peanut butter here but to be honest, the peanut butter will overpower the chocolate hazelnut. You don’t want that, trust me, you want a lighter and smoother flavor to pair. I am not lying when I say this flourless double chocolate nut cookie sandwich is TO DIE for. It’s all about the combo and the texture of the cookie. Yup. Crisp, light, cocoa-ish cookie with nut topping.
Perfectly creamy (but not heavy) chocolate nutter butter like filling. OMG! I love theee!!!
Double chocolate and double nut because I didn’t want to make it uneven, right? Haha Yes!!! The best kind of double if you ask me.  Healthy fats, anti-oxidants, real food fuel…. did I just say that a cookie sandwich was fuel? Sure, and every other nutrition excuse I can think of to eat these.
Speaking of, you ready to bake and eat? Ya you are!

- Yield: 20 cookie sandwiches 1x
Description
Flourless Double Chocolate Nut Cookie Sandwiches {Grain free, Gluten Free}
Ingredients
For the Chocolate nut Cookie:
- ½ cup chopped nuts (I used hazelnuts). Plus extra for topping
- â…” cup dark chocolate chips (Enjoy life brand is vegan/gluten free). Plus extra for topping
- 1 cup no stir nut butter (almond butter or peanut butter). *see notes for nut free version)
- 1 egg
- ⅓ c to ½ c cocoa powder (use more for richer taste)
- 1 tsp vanilla
- 1 tsp baking powder
- ¼ tsp salt
- optional Hazelnut extract for a “nutella” taste.
For the Filling:
- ½ cup creamy nut butter (I sound that almond butter or sunflower seed butter work best)
- 4 tbsp melted butter (or coconut oil for dairy free)
- 1 tbsp cocoa powder
- 1 cup powdered sugar or my sugar free powdered sugar. See notes.
Instructions
For the Cookies
- First grind up your chocolate chips and nuts in a food processor or blender. Transfer to a bowl.
- Add in the rest of your ingredients and mix well to form a cookie like batter.
- Let batter sit in fridge 1-2 hrs.
- Remove batter from fridge. Preheat oven to 350F
- roll the batter into golf ball size balls. Place on greased cookie sheet.
- Next, using your hand or the flat end of a measuring cup, press the cookies flat. I usually coat the measuring cup with a bit of oil so it doesn’t stick to cookies when pressing.
- this made around 30 – 36 cookies or so.
- Sprinkle topping of each with extra nuts and chocolate chips.
- Bake for about 15 -17 minutes or until edges are crispy. Check at 15 minutes to see progress.
- Remove from oven and set aside.
for the chocolate nut filling
- Place ½ cup of your creamy nut butter in a mixing bowl. add in your butter or oil. Beat on low.
- Continue to mix/beat on low and slow add in your powdered sugar, cocoa, and vanilla.
- Beat until smooth.
- If batter gets to thick, add in a touch of coconut milk to thin out.
- Scoop 1-2 tablespoon of chocolate nut filling on flat side of a cookie. Pair with another cookie to make a cookie sandwich.
- Serve or store covered in fridge if you are going to serve later.
- This made around 18-20 cookie sandwiches. You can adjust the cookie size if need be. Just roll bigger balls first. But you will then need to adjust cooking time.
Notes
- If you want to make powdered sugar sugar Free follow the directions below.- ¼ cup xylitol or stevia sugar 1 cup arrow starch or potato starch. Blend in food processor for 5 minutes
- This made around 18-20 cookie sandwiches. You can adjust the cookie size if need be. Just roll bigger balls first. But you will then need to adjust cooking time.
- Prep Time: 2 hr
- Cook Time: 15 min
For the calories using regular powdered sugar –Â 216 calories (11 grams sugar) 16 carbs
