Flourless Double Chocolate Nut Cookie Sandwiches {Grain free, Gluten Free}

For the Chocolate nut Cookie:
- 1/2 cup chopped nuts (I used hazelnuts). Plus extra for topping
- 2/3 cup dark chocolate chips (Enjoy life brand is vegan/gluten free). Plus extra for topping
- 1 cup no stir nut butter (almond butter or peanut butter). *see notes for nut free version)
- 1 egg
- 1/3 c to 1/2 c cocoa powder (use more for richer taste)
- 1 tsp vanilla
- 1 tsp baking powder
- 1/4 tsp salt
- optional Hazelnut extract for a “nutella” taste.
For the Filling:
- 1/2 cup creamy nut butter (I sound that almond butter or sunflower seed butter work best)
- 4 tbsp melted butter (or coconut oil for dairy free)
- 1 tbsp cocoa powder
- 1 cup powdered sugar or my sugar free powdered sugar. See notes.
Instructions
For the Cookies
- First grind up your chocolate chips and nuts in a food processor or blender. Transfer to a bowl.
- Add in the rest of your ingredients and mix well to form a cookie like batter.
- Let batter sit in fridge 1-2 hrs.
- Remove batter from fridge. Preheat oven to 350F
- roll the batter into golf ball size balls. Place on greased cookie sheet.
- Next, using your hand or the flat end of a measuring cup, press the cookies flat. I usually coat the measuring cup with a bit of oil so it doesn’t stick to cookies when pressing.
- this made around 30 – 36 cookies or so.
- Sprinkle topping of each with extra nuts and chocolate chips.
- Bake for about 15 -17 minutes or until edges are crispy. Check at 15 minutes to see progress.
- Remove from oven and set aside.
for the chocolate nut filling
- Place 1/2 cup of your creamy nut butter in a mixing bowl. add in your butter or oil. Beat on low.
- Continue to mix/beat on low and slow add in your powdered sugar, cocoa, and vanilla.
- Beat until smooth.
- If batter gets to thick, add in a touch of coconut milk to thin out.
- Scoop 1-2 tbsp of chocolate nut filling on flat side of a cookie. Pair with another cookie to make a cookie sandwich.
- Serve or store covered in fridge if you are going to serve later.
- This made around 18-20 cookie sandwiches. You can adjust the cookie size if need be. Just roll bigger balls first. But you will then need to adjust cooking time.
Notes
- If you want to make powdered sugar sugar Free follow the directions below.- 1/4 cup xylitol or stevia sugar 1 cup arrow starch or potato starch. Blend in food processor for 5 minutes
- This made around 18-20 cookie sandwiches. You can adjust the cookie size if need be. Just roll bigger balls first. But you will then need to adjust cooking time.
