Defeated? I think NOT!

This day started off all wrong, but I was determined to not let it defeat me. I believe that you make your days good or bad, its all about perspective, right? So hang with me here…………..

I woke up at the crack of dawn feeling like I could sleep 8 more hours. Two cups of strong coffee later I was ready to go. Set off to get in my run before work, meeting clients, etc. and its was cold and RAINING!! To the “dreadmill” I must go! Started my run on the “dreadmill” and about 15 to 20 minutes into I was mentally done. My body felt good but my mind was saying “get off, let’s not run today.” My mind won! So my workout was cut short BUT that allowed me some extra time to get in a little baking therapy (Recipe Below). Finished baking, off to meet some clients, run errands, and back home. Still raining, still gross, BUT that meant the hub’s outdoor training group was cancelled! Sweet, home early and I even convinced him to go to a hot yoga class down the road. Ahhhh, so good on a cold rainy evening! After class I whipped up a nice Spicy Pumpkin Cauliflower soup to go with my “baking therapy.” Delicious and perfect cold weather soup!

So there you have it, the day that started off all wrong DID NOT defeat me. I think I did a pretty good of turning it around. No need to waste a Wednesday, right?! haha!

BT (baking therapy) Nutty Biscuits:
These are gluten free and dairy free
  • a little less than ½ cup of coconut flour (or other GF flour)
  • ½  teaspoon salt
  • 2-3 tablespoon Grapeseed oil (olive or sesame should work too).
  • ¼ to ⅓ cup unsweetened almond milk or soy milk
  • 2 tablespoon pumpkin or apple butter
  • 1 teaspoon baking powder
  • 2-3 tablespoon of chopped nuts and seeds. (I used peanuts and sunflower seeds)
  • ¼ teaspoon ground cloves (optional)

I did not use any sweetener since I wanted them to be more a nutty/buttery flavor.
Combine dry ingredients first then add in your oil and milk. Mix into a very thick and almost too dry of a batter. You want it to look like biscuit dough, not muffin dough. Pat into coated muffin pans and bake at 350F for 25-30 minutes. Makes about 7-8 biscuits.

Serve it with apricot jam or marmite. Sweet or salty, yum!

    I hate the dreadmill too – way to tough it out for as long as you did! :)The pumpkin cauliflower soup sounds amazing. Isn't it crazy how much outlook/attitude can turn a crappy day into a positive one? I've had a really tough week – just glad it's finally Friday!

    Nice way to turn your day around!Those biscuits sound so yummy right now! It's rainy and cold here, too, and I just want to curl up with some hot tea and cozy, comfort foods! These would be great to make! I'm bookmarking this recipe:)

    Aww way to have a great attitude! I wish I could do that. Yesterday I was certainly feeling defeated! I like to sleep–that's how I get over it!!The food looks so yummy!

    How have I gone this long without knowing about your blog!! I having been reading through your posts for the last 20 minutes!! I LOVE IT!! I can't wait to start following your blog! I cannot tell you how much I agree with you about CHOOSING whether it will be a good day or a bad day!! Baking Therapy, made my day…. I do that all of the time!! Your biscuits look so good!!     I read your blog! 🙂 I like baking when a day is going badly too. And reading- I love a good book on a bad day. Or a good swim, or bike, or run, or yoga. I'm going to bake those rolls right now so I can have them with lunch! :)hope today is going better!

    Oh that soup is calling my name. Sounds delish. Glad you made it a better day. I hear you on the dreadmill. The only way I can stay on one is if I do intervals/HIIT. And we're talking 30 minutes tops. Anyway, good job girl!

    I always think there are ways to remedy bad days. Theres you tube with hilarious videos, uplifting bloggers, and of course, baking! Im SO making these when I get back from my trip!

    yay! I agree that we get to make our day good or bad. Even when a bad things continue to happen, we can combat them with good thoughts and good things for our bodies…just like yoga and yummy dinner! It's been raining here, too but I think it's supposed to be clear tomorrow. Hope you get a great night sleep tonight and wake up feeling rested. 🙂

    There's a bikram yoga studio opening near me any day now, I can't wait to give it a shot. Where do you go? I have not yet mastered not letting a bad day get the best of me. I commend you, that's awesome 🙂
