Coconut Peanut Butter Protein Bites are a rich flavored, healthy grain free snack, packed with protein! These NO BAKE vegan protein bites are lower in sugar and carbs. Great for summer treats!

Grain Free Coconut Cream Peanut Butter Bites! These little snack bites taste like coconut cream pie and peanut butter combined. A rich flavor nourishing protein bite that will please your sweet tooth in a healthy way! this for later

Ya’ll… it’s JUNE! Summer! Okay almost Summer. But when you live in Texas, it starts to feel like summer in April. We hit 93F this week, and with 95% humidity. I’m a wee bit scared of what July is going to look like. One thing is for sure, we will be eating a lot of NO bake meals and smoothies. Unless one of you northerns want to to adopt us for the summer?  haha!

Okay but in all seriousness, the NO BAKE season has begun. I’m cool with it (pun intended). It means we grill often and keep plenty of ice in the freezer for smoothies and  desserts/snacks like mad!  Which leads me to these coconut peanut butter protein bites. THE JUNE flavor of the month is…

Coconut Cream Peanut Butter Bites! Hmm… how did I come up with this easy no bake bites recipe?

Well, we recently bought a pint of vanilla coconut cream pint of coconut cream ice cream (this kind) to add to our summer smoothies.  It makes them super creamy! Anyway, one day I was blending up a morning shake for the kiwi and myself when I realized that our peanut butter jar was about empty. Might as well throw that last little bit in the blender, right? And then I realized that that we only had a handful of coconut cereal left (this kind), might as well throw that in there too. It was basically a “let’s cram in all our leftover bits of ingredients” kind of smoothie.

I didn’t think much of it, I do it ALL the time. Ya know? That was until I tasted it. Holy Moly! That’s like dessert. Maybe a combo of frozen peanut butter pie and coconut cream pie combined into one. Um, ya, that kind.

This flavor stuck in my head. It was too good! Too good not to make into a bite, right? Coconut peanut butter protein bites are rich, creamy, and they are UBER satisfying, without the excess sugar and unhealthy carbs. Ya, you’re gonna want to make these a repeat recipe this summer.

Meaning, make coconut peanut butter protein bites. Eat, then repeat. Haha!

No Bake Coconut Peanut Butter Protein Bites

Description

Coconut Peanut Butter Protein Bites are a rich flavored, healthy grain free snack, packed with protein! These NO BAKE vegan protein bites are lower in sugar and carbs. Great for summer treats!


Ingredients

• ¼ cup gluten free granola or other cereal of choice

• ⅓ cup coconut flour (can also use peanut flour or almond flour)

• ½ cup of creamy peanut butter

• ½ cup Vanilla Cream Protein Powder of choice

• 2 -3 tbsp. coconut flakes

• dash of cinnamon

• ⅓ cup maple syrup (or honey if you are not vegan)

• ½ teaspoon Vanilla bean or vanilla Extract.

• ¼ teaspoon coconut extract (optional)


Instructions

First, grind up your granola in food processor to make more fine, similar to an almond meal texture.

In large bowl, add in all your dry ingredients.

Then mix in your nut butter, extracts, and last the maple syrup or honey. Mix well (I use my hands) and roll into bite size balls. Add more honey/PB if they end up being too dry to roll. Just depends on type of protein you use. Place balls on cookie sheet and then freeze for 30 minutes.

Once they set in freezer for 30 minutes, you can remove and coat them in more vanilla protein or peanut flour. Then place in ziplock bag and store in fridge or freezer.

Feel free to roll into larger bites, or smaller to make more.

Notes

For paleo option, us a grain free granola or trail mix blend versus granola.

    I’m pretty sure that my Canadian-self would melt in that kind of heat 😯 It was in the 80’s for a couple of weeks here and I could barely handle that. But thankfully we have delicious no-bake treats like this to take our mind off the heat, yes? 😀

    93 degrees already?! I am planning on coming that way in July – I bet it’s gonna be 100+ …just the right temp to enjoy my old favorite banana/pineapple/spinach protein smoothie or my new fav coconut cream/peanut butter smoothie (any chance that recipe will be up?). As for your partnership with 512 – lady, I sure hope it works out! I’ve had the pleasure of trying your bites and – dang! Just like these they are pretty incredible! They need to be shipped EVERYWHERE!

    Heat in the 90s scares me and I don’t know how Id handle your climate! No bake it is, and I would totally store them in the freezer, looks delicious 🙂
