If I had a child I’d name him/her Rhubarb. Because rhubarb it’s so going to be the new “superfood“, it’s powerful in the kitchen, it’s sweet, tart, and rhubarb is one amazing healthy vegetable. Plus it makes everything look pretty, especially roasted rhubarb! But rhubarb can also be bitter (when left alone), which is ironic because that’s probably true for any child. And I’m so kidding, don’t worry, I’m not going to be naming any child of mine rhubarb. Although we could name it Kiwi….. although we’re not having kids anytime this year. But I digress.

Okay Where was I? Oh yes, rhubarb. HONEY ROASTED rhubarb. I love thee! And I never really understood it’s magical nutritional and flavor powers until I was an adult. When I actually started studying nutrition myself and using food for FUEL for James’ training. Go figure!

You see, rhubarb is best eaten with a fat to help absorption of carotenoids and vitamin K. Vitamin K is essential property that helps with blood clotting, protecting the bones, and healthy neuron function in the brain, I’m thinking this is evidence that eating a rhubarb pie (you know, with fat) can help too! Right? Oh how I wish!

Okay despite the pie, you can easily eat rhubarb with other healthy fats to get more bang for your buck. But I won’t judge you if you eat the pie as well. Never.

Rhubarb is also used for supporting good gut health. Um, you knew I wasn’t going to leave without talking about that, right? Yes, GOTTA LOVE GUT HEALTH!

Rhubarb has certain cleansing properties that help keep your digestive system healthy, relieve stomach pain, and fight parasites.  Although don’t eat the leaves, just the stalk. Rhubarb leaves are said to be toxic. Which would counteract that whole GOOD for you thing, eek!

So let’s talk healthy fats, a little bit of natural sweetness, and power greens. All ingredients which compliment this beautiful red stalk (rhubarb); Sunflower seeds, goat cheese, honey, fresh lemon, and olive oil! Ya’ll, this is on delicious tasting salad and honey roasted rhubarb concoction. One you will want to add to your weekly rotation, because let’s face it. No one has time for boring salads these days. We need power salads!

Description

Healthy and Delicious Honey Roasted Rhubarb Power Greens Salad! A vegetarian honey roasted rhubarb salad jammed packed with nourishment and bursting with flavor. Simple to make, vegetarian, and gluten free!


Ingredients

Scale
  • 2 cups chopped rhubarb (about 1/3 of an inch thick)
  • 3 to 4 tbsp honey (close to 1/4 cup)
  • 1 tbsp balsamic vinegar
  • 4 cups leafy greens (like kale, swiss chard, etc)
  • 1 shallot (chopped)
  • 1/2 cup shredded carrots
  • 3 –4 tbsp roasted sunflower seeds
  • 1/2 cup goat cheese crumbles
  • sea salt to taste
  • black pepper to taste
  • oil/vinegar dressing
  • fresh lemon

Instructions

  1. Preheat oven to 450F. Line a baking sheet with parchment paper.
  2. Chop your rhubarb stalk into think slices (about 1/3 in thick).
  3. Toss in a bowl with honey and balsamic vinegar.
  4. Lay rhubarb flat on baking sheet and roast for 8-10 minutes.
  5. In another large bowl. Toss your washed leafy greens, shallot, and carrots together.
  6. Divide into two bowls.
  7. Place half rhubarb on top of each salad. Then add in your sunflower seeds, goat cheese, and sea salt, and black pepper onto each salad.
  8. Squeeze with fresh lemon and add olive oil and vinegar before serving (if desired).

Notes

You can easily roast your sunflower seeds with the rhubarb if you only have raw on hand. they will only take 5-7 minutes to roast though.

That being said, I fully believe this non boring POWER SALAD  is the most delicious way to absorb more vitamin K. Weren’t you thinking that?  Probably not. You’re probably still focusing on having a slice of rhubarb pie. Or any other honey roasted rhubarb dessert. And again, I don’t judge you, nor do I blame you. I told you rhubarb was that magical. Just look.

OK so here’s the good news. It’s almost Spring. And rhubarb is about to be at the peak of of it’s season.  Which means you can go “stalk” up now! And there’s my pun for the day. The perfect way to start a Monday!

p.s this is one meal  I DID not save for the kiwi. Who is BACK HOME TODAY! I could feel bad but I’m thinking this is just another excuse to make more honey roasted rhubarb in other food forms. That pie is still on my mind.

    I made a variation of the salad and was really good. However, my roasted rhubarb got mushy. I still used it , but yours looks intact and mine was not. Any suggestions?

      Hi dorothy! How long did you roast yours for? The exact time? Maybe try using a little less honey or coat in a coconut or brown sugar instead. Thoughts?

    Soooo I was really scared when I was making this salad, because it seemed like it won’t work. My rhubarb looked miserable, there seemed to be a really tiny amount of carrots and it all just seemed to not be a good idea. I made my vinaigrette on a rather lemony side, but it worked quite well with the rhubarb. I ended up really liking the salad. The only change I made was not adding the shallot for the simple reason that I completely forgot it was supposed to be in this 😉

        Hey! I made your salad tonight, well at least the honey-balsamic roasted rhubarb , greens, and the toasted sunflower seeds. The rest of it was a bit different (gouda, hemp seeds, etc.). Everyone loved the rhubarb and the combo as a whole was a bit bacon-y in a good way. Thanks for the great recipe!

    Roasting the rhubarb with honey is a genius idea, and it’s like you knew I had rhubarb in my deep freezer from last Spring. This salad is beautiful and has goat cheese….it’s a sign.

    ok YUM! I never thought to use rhubharb this way!! reminds me of my gram’s rhubharb strawberry pie, and thats the only way I’ve ever used it! this must happen 🙂

    Girl you are seriously killing me! Love rhubarb and I can’t wait for it to come up in the garden! My family doesn’t share my love for it or I would go crazy with it, my husband actually hates it and the only one who likes it is mini me A but not to the level I do. Already pinned and cannot wait to make it!! If you need rhubarb feel free to come get some, we can whip up this salad, a rhubarb cocktail, and some rhubarb crisp! 😉

    Rhubarb Cotter is a beautiful name! LOL!!! Soooo because I’m pregnant and I love a good Syrah wine (not while pregnant of course), should I name this kid Syrah? I think we have something here! Hehehe. I also love rhubarb but never ever thought I could have it in a salad. LOVE THIS!

    Honey roasting the rhubarb is so perfect! I wanted Dave to try rhubarb when it comes into season for the gut healing qualities but honestly didn’t think he would want to try it because he’s not a bitter fan. The only way I’ve ever tried it was in pie (which was overly sweet to offset the bitter qualities). Now I’m definitely picking some up and roasting it with honey!!

    Confession: rhubarb is one of the few foods I’ve never been able to get excited about. I’ve also never had it honey roasted. You might make me a believer with this.

    Rhubarb really brings me back to growing up in rural Wisconsin! My grandma used to make pie and bread from rhubarb that we’d pick growing wild (maybe not completely, it was probably planted there on purpose at one point?) on our home acreage. I’ve never actually purchased it before!

    I love love LOVE Rhubarb! I lately made this healthy Rhubarb Pie and it was so delicious. My Mom kinda aised us with this supefood, she made porridge, jam, chutney, pies and all that jazz with it.
    I love the idea of that salad too!
